1. Apple Crème

Sweet enough to enjoy by itself, but if you spoon this over vanilla ice cream we won't tell.

4 large apples, cored and sliced

½ cup butter

½ cup Plain Mountain High Yoghurt*

Honey (optional)

Cinnamon (optional)

Melt the butter in a small skillet and add the apples. Sauté on low heat until apples are softened, about 6 minutes. Remove from heat and place in a medium glass or ceramic bowl. Spoon the yoghurt over the apples, and toss to coat apple slices evenly. Drizzle with honey and sprinkle with cinnamon, if desired. Serve warm.

*Yoghurt cheese can be used in place of yoghurt for this recipe.

Makes 4 servings.

2. Applebee's Pico de Gallo


  Notes:  This is a great  relish to serve with chips, or even on a hamburger.


INGREDIENTS:


3 large tomatoes diced,
1 large onion diced
2 Tbsp. diced Jalapenos,
1/2 cup fresh cilantro (diced)
2 tsp.      Salt,
1/2 tsp. black pepper,
1/2 tsp. garlic powder
1 Tbsp. olive oil,
1 Tbsp. white vinegar



DIRECTIONS:


Mix all ingredients together in large container until well blended. Allow to sit for at least 6 hours, it is better if allowed to sit overnight.

3. Apricot Biscotti Parfait

Biscotti are long, narrow, twice-baked Italian cookies that are extra crunchy. They're great for dipping in coffee or using in delicious desserts like this one!

1 cup dried apricots

1 cup boiling water

2/3 cup orange juice

1 cup Plain Mountain High Yoghurt

½ teaspoon almond extract

1 cup crushed biscottis


Place the apricots in a small bowl and pour the boiling water over them. Allow to cool, cover, and allow to soak overnight at room temperature.

Place the apricots, soaking liquid, and orange juice in a food processor. Process mixture until well combined. Add the yoghurt and almond extract and pulse just until smooth. Transfer mixture to a medium glass or ceramic bowl. Fold in the crushed biscotti. Spoon into serving dishes, cover, and chill several hours before serving.

Makes 4 servings.

4. Asian Turkey Burgers

Hoisin sauce gives these burgers a juicy texture, while ginger and garlic provide a burst of flavor, and water chestnuts deliver an appealing crunch. Serve them over tender greens or on toasted whole-wheat buns.

Serves: 4 servings

Ingredients


2 slices whole-wheat sandwich bread, crusts removed, torn into pieces
12 ounces lean ground turkey breast
1 8-ounce can sliced water chestnuts, rinsed and chopped
2 tablespoons hoisin sauce
2 scallions, trimmed and sliced
1 tablespoon minced fresh ginger
2 cloves garlic, minced
1/4 teaspoon salt
1 1/2 teaspoons toasted sesame oil
Sesame Mayonnaise, optional (recipe follows)

Directions

Preheat grill to medium-high.

Place bread in a food processor and pulse into fine crumbs. Transfer to a large bowl. Add ground turkey, water chestnuts, hoisin, scallions, ginger, garlic and salt; mix well. (The mixture will be moist.) With dampened hands, form the mixture into four 1/2-inch-thick patties (see Tip).

Oil the grill rack (see Tip). Brush the patties with sesame oil. Grill until browned and no longer pink in the center, about 5 minutes per side. (An instant-read thermometer inserted in the center should register 165 degrees F.)

Meanwhile, prepare Sesame Mayonnaise, if desired, to serve with the burgers.

When forming burger patties, make them thinner at the center to prevent them from steaming as they cook.To oil a grill rack: Oil a folded paper towel. Hold it with tongs and pull it toward you over the rack. Do not use cooking spray on a hot grill.

Ingredient Notes: Regular ground turkey, which is a mixture of dark and white meat, has a higher fat content (similar to that of lean ground beef). Hoisin sauce is a spicy, sweet sauce made from soybeans, chiles, garlic and spices. It will keep in the refrigerator for at least a year.

5. Auntie Anne's Pretzels

INGREDIENTS:


1-1/2 tsp Yeast,
1/2 tsp Brown sugar,
1 tsp Salt,
1-1/2 cup Water,
4 cups Bread flour,
2 tsp Baking soda,
2 cups Warm water,
1/2 lb      Butter,
2 Tbsp Honey,
White sugar
Brown sugar.

DIRECTIONS:


Mix yeast, brown sugar, dash of salt and 1-1/2 cups water. Let sit for five minutes. Add bread flour. Knead well. Let rise for about one hour.
Grease baking sheet.
Mix baking soda and warm water. Take a piece of dough and roll and shape into a pretzel. The easiest way to shape is to roll into a rope, whatever size you prefer. Pinch ends of rope then bring ends of rope to other side of circle. Dip pretzels in warm water and baking soda mixture and put on baking sheet.
Bake at 425 F for about 12 minutes. While still hot, brush with melted butter and honey. Sprinkle with white and brown sugar (approx. half and half mixture).
