1. Baked Apples & Raisins

INGREDIENTS:


6 large apples
6 tbsp. bread crumbs
6 tbsp. dark brown sugar
2 tbsp. margarine or butter, melted
3/4 tsp cinnamon
1/4 tsp nutmeg
1/4 cup raisins
1.5-2 Cups boiling water (1 1/2 to 2 cups)

DIRECTIONS:


Preheat oven to 375 degrees.
Wash and core apples; arrange in greased 9x9x1-3/4" baking dish.
Combine remaining ingredients, except water. Fill each apple with 1/6 of mixture. Pour enough boiling water around apples to make 1/2 inch deep. Bake 50 minutes or until tender, basting with syrup in dish.
Serve hot or cold with whipped cream, if desired.

2.                Pasta, Seafood, Eggs and Grains:
                        Barbecued Fish

                  from River Road Recipes II   
                     A Second Helping

INGREDIENTS:

8 white fish filets (trout, pompano or others)
  Salt and pepper
3 lemons, squeezed
2 garlic cloves, minced
1 cup butter or margarine, melted
1/3 cup Jamaican Choice Tropical sauce or Pickapeppa sauce
1 Tablespoon Tabasco sauce
  Fresh parsley, chopped
  Lemon slices

TO PREPARE:

    Preheat barbecue grill to medium heat.  Salt and pepper
filets and place in foil-lined pan.  Heat lemon, garlic,
butter, Jamaican Choice Tropical or Pickapeppa sauce and
Tabasco sauce in small pan.  Pour over fish.  Cook with top
down approximately 15 minutes.  Baste often.  Garnish with
freshly chopped parsley and lemon slices.  This is very
"unfishy" tasting.

SERVES:  6 - 8

3. Bavarian-Style Sauerkraut

Use this full-flavored topping on grilled sausages or hot
dogs.

Serves 4

1 can Sauerkraut (14 ounces)
cup Sour cream
1 tablespoons Onion, minced
1 teaspoon Caraway seeds

-Drain the sauerkraut. Place in a saucepan and add the
remaining ingredients. Warm slowly over very low heat.
Serves warm over sausages.

4. Berry-Filled Sangria
Sangria is a fun party drink that everyone loves. And don't forget to indulge in the quite inebriated fruit, especially as the evening progresses.


Ingredients
1 C. washed and hulled strawberries
1/2 C. washed blueberries
1/2 C. washed raspberries
Juice of lemon
1/4 bottle dry white wine
1/4 bottle dry champagne
1 bottle rose zinfandel
1/4 C. fruit-infused vodka
2 C. white cranberry juice
1 1/2 C. soda water

Directions
Put ice cubes in bottom of pitcher, toss in fruit on top of ice along with lemon juice. Add wine, champagne and vodka. Stir. Retire to someplace comfortable with two glasses and a good friend.

5.                     Appetizers, Salads and Breads:
                      "Bleuberry" Spinach Salad

    INGREDIENTS:
   
    1 pound fresh spinach or Bibb lettuce, torn into pieces
    1 cup fresh blueberries
    1 (4-ounce) package crumbled blue cheese
    1/2 cup toasted pecans
    Raspberries, to garnish (optional)
   
    INGREDIENTS FOR DRESSING:
   
    1/2 cup vegetable oil
    3 tablespoons blueberry or white wine vinegar
    1 teaspoon Dijon mustard
    1 teaspoon sugar
    Salt, to taste
   
    TO PREPARE:
   
    For dressing: Combine all ingredients well and set aside.
   
    Place torn greens, blueberries, blue cheese and pecans in a
    salad bowl.  Just before serving, toss gently with dressing. 
    Garnish with raspberries, if desired.
   
    SERVES 8
