Campbell's Oriental Chicken Skillet
Prep/Cook Time: 25 minutes

INGREDIENTS:


1 tbsp. vegetable oil
4 boneless chicken breast halves
1 can Campbell's Cream of Chicken (or 98% Fat Free Cream of Chicken Soup)
1/3 cup water
1 tbsp. soy sauce
1/4 tsp. ground ginger
1 pkg. (about 10 oz.) frozen cut green beans
2 green onions, cut into 1" pieces
4 cups hot cooked rice



DIRECTIONS:


Heat oil in skillet. Add chicken and cook until browned.  Add soup, water, soy, ginger, beans and onions. Heat to a boil.
Cover and cook over low heat 5 min. or until done.  Serve with rice. 
Serves 4.

2. Ceviche
INGREDIENTS:


2 - 3 lbs. Any white fresh water fish
1 cup lemon juice (please, make it real lemon juice!)
2 cups orange juice (same as above)
1 spoonful whole white pepper
1 spoonful whole black pepper
handful finely chopped fresh parsley
handful finely chopped fresh coriander
3 - 4 medium sized onion, finely sliced (we call it, "feather sliced")
2 cups or so sliced fresh jalapenos
salt

DIRECTIONS:


Filet the fish and discard all skin.  Carefully tear out the blackish-silver stuff in the middle of the filet, it will make your ceviche bitter.  Cut the fish into 1" squares.  Wash.
Using any non-metal pan, put a layer of fish, a layer of onions, a
layer of jalapenos, sprinkle with both peppers, parsley and coriander.
Add salt.  Bathe in some of the lemon juice and orange juice. 
Repeat until you finish.  Be sure the orange and lemon juice cover the fish.  Cover with plastic wrap and put in refrigerator for 24 hours. 
Toss once or twice, being careful not to break the fish.  Once the fish is white and slightly flaky, it is cooked.  Serve on lettuce with a boiled potato and a slice of avocado.

                        Cheese Muffins

              A Collection of Kentucky Recipes

INGREDIENTS:

2 cups sifted flour
4 teaspoons baking powder
1 Tablespoon sugar
1/2 teaspoon salt
1 egg
1 cup milk
3 Tablespoons butter, softened
1-1/2 cups shredded sharp Cheddar cheese

TO PREPARE:

1.  Sift together dry ingredients and set aside.
2.  Beat egg, milk, and butter until smooth.  Stir in
    cheese.  Add to dry ingredients, mixing only until
    moistened.
3.  Fill greased muffin tins 2/3 full.
4.  Bake at 350 degrees 30 to 35 minutes.

Hint:  Four ounces of cheese equals 1-1/2 cups shredded
       cheese.

YIELDS:  12 muffins

4. Chilled Wild Rice Salad

Serve this refreshing summer salad with your favorite
chicken dish.

Serves 2-3

cup Olive oil
2 Tablespoons Lemon juice
teaspoon Salt
teaspoon Pepper
2 cups Cooked wild rice
cup Green onions, chopped
1 Tomato, diced
1 Tablespoon Parsley, chopped
1 Tablespoon Mint, chopped (optional)

-Whisk together the oil, lemon juice, salt and pepper. Toss
in the remaining ingredients. Cover and refrigerate until
needed (at least 1 hour). Serve cold.

5. Chocolate Fruit Cake

Chocolate batter and a selection of delicious dried fruit make this a
delightful surprise on your holiday dessert table.

Makes 1 (9-inch) ring

3/4 cup packed light brown sugar
1/2 cup (1 stick) butter, softened
4 (1-ounce) squares unsweetened chocolate, melted
2 large eggs
1/3 cup milk
2 cups unsifted all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup golden raisins
1 cup coarsely chopped macadamia nuts
1/2 cup coarsely chopped crystallized ginger
1/4 cup bourbon

1) Preheat oven to 325 degrees F. Lightly grease a (9-inch) tube pan.
2) Beat together brown sugar, butter, chocolate, eggs and milk in large bowl with electric mixer large bowl until fluffy. Add flour, baking powder and
salt; beat until combined. Fold in raisins, macadamia nuts and crystallized
ginger. Transfer mixture to greased tube pan.
3) Bake 1 hour or until golden brown and surface springs back when gently
pressed. Cool to room temperature on wire rack. Wrap in cheesecloth soaked in bourbon; rewrap tightly and refrigerate at least 1 week before cutting.
