1. Debbie's Potato Soup

From the Kitchen of:  Debbie

I'm very proud of this recipe.  I came up with it on my own.  I took the twins to eat at O'Charley's, they ordered the "Loaded Potato Soup."  They raved about the taste.  I decided I could come up with something just as good.  They like this and it's cheaper than O'Charley's.

1 can Campbell's Cheddar Cheese Soup
1 can Campbell's Cream of Celery Soup
1 can Campbell's Broccoli and Cheese Soup
1 can Campbell's Cream of Chicken and Herb Soup
4 cans milk
5 cups diced potatoes, cooked until tender
1/2 cup onion, chopped fine and sautéed in 1 Tbsp. margarine
1 stick margarine


Combine all ingredients in slow cooker.  Stir occasionally.  Cook 4 hours on low.

Serve piping hot.  Garnish with bacon bits.

2. Deep Fryer Fried Cheese

Servings:

Preparation Time: 15 min.
Cooking Time: 5 min.
 
Ingredients:

1/3 cup vegetable oil
1/3 cup vegetable oil
1/2 Lbs. Gruy\`ere or mozzarella cheese, cut into 21/2 12 x 1/2 12 sticks
1/2 cup all purpose flour
1/2 cup all purpose flour
2 egg, beaten
1 cup seasoned breadcrumbs


Cooking Directions:
Heat oil in an electric deep fryer to 375° F. Dust cheese sticks with flour. Dip in beaten egg and then into breadcrumbs. Press crumbs around cheese and dip again in egg and crumbs. You may refrigerate at this time until time to cook. Place 3 or 4 cheese sticks in hot oil. Deep fry 2-3 minutes, turning once until golden brown. Transfer to absorbent paper to drain. Repeat process until all are fried.

3. Deviled Ham Log Recipe

You won't be as bad to your diet as you might think

INGREDIENTS:


2 (4-1/2 ounce) cans deviled ham

1 tablespoon prepared mustard

1 drop hot pepper sauce

1 (3-ounce) package cream cheese

2 teaspoons milk

3 tablespoons chopped, stuffed olives

TO PREPARE:

Combine ham, mustard, and pepper sauce.  Shape into a log.  Chill or freeze mixture for 10 minutes to make spreading of cream cheese and milk topping easier.  Blend cream cheese and milk until smooth.  Spread over ham loaf, garnish with chopped olives, and refrigerate.  Serve with assorted crackers.

SERVES: 6 - 8

4. Dilly Lemon Munch

2 quarts popcorn popped in 1/4 cup of oil
2 tablespoons shredded lemon peel
1 teaspoon dill weed
Optional: 1/2 teaspoon low-sodium salt


Toss popcorn with lemon peel and dill weed. Flavor enhances as popcorn stands.

Yield: 2 quarts.

5. Double Chocolate Cheesecake Brownies
Yield: 16 Servings
Categories: Desserts

Ingredients:

      1 pk Kosher Brownie Mix; 22.5 oz.
      8 oz Cream Cheese
      1    Egg
    1/3 c  Sugar
      1 ts Vanilla
    1/2 c  Chocolate Chips


  Recipe By : Jacqueline Glasgow, Beaufort House B & B, Asheville, NC
 
  Preheat oven to 350?. Grease a 9 x 13" baking pan.
 
Make the brownie mix as directed and pour into pan. Beat the cream cheese,   eggs, sugar and vanilla with an electric mixer in a separate bowl until  well combined. Drop the cream cheese mixture by tablespoons on top of the  brownie mixture. Swirl the mixture together with the end of a knife.
Sprinkle the chocolate chips over the entire mixture.
 
  Bake for 20-30 minutes or until cream cheese is slightly golden. Let cool
  for 20 minutes. Place in the refrigerator for 1 hour to chill before
  cutting into squares.
