1. Japanese Adzuki Bean Salad
Servings: 6
Preparation Time: 15 min.
Cooking Time: 0 min.
Ingredients:
2 tsp. tamari
2 Tbs. rice wine vinegar
2 tsp. wasabi powder, or to taste
3 Tbs. canola oil
2 Tbs. dark sesame oil
1 Lbs. canned adzuki beans, drained
2 scallion, minced
1 cucumber, chopped
1/2 Lbs. green beans, trimmed, halved, steamed and chilled
2 cup organic salad greens mix
1 cup watercress
1 tsp. sesame seeds
1 tsp. fresh chives
This Recipe is considered:

Cooking Directions:
Combine first 5 ingredients in a bowl for the dressing. Mix in
beans, scallions, cucumber and green beans. Chill. Place salad
greens and watercress on serving plates. Top with bean mixture
and sprinkle with sesame seeds and chives.

2. Jim's Fudgy Coconut Q-Fest Squares
Yield: 48 Squares

Ingredients:
1 c Butter, softened
1 1/2 c Sugar
3 Eggs
1 ts Pure vanilla extract
1 c All-purpose flour
1/4 c Baking cocoa
1/2 c Walnuts or pecans, chopped
1 cn Sweetened condensed milk
1 c Coconut, shredded
ICING
2 c Confectioners' sugar
1/4 c Baking cocoa
5 tb Evaporated milk
2 tb Butter, melted
1/2 ts Pure vanilla extract
In a mixing bowl, cream butter and sugar. Add eggs
and vanilla; mix well.
Combine flour, cocoa and nuts; add to the creamed
mixture. Spread into a
13"x 9"x 2" baking pan. Bake at 350
degrees for 30 minutes or until a
toothpick inserted near the center comes out clean.
Combine condensed milk and coconut; carefully spread over
the hot chocolate
layer. Bake at 350 degrees for 20 minutes or until
coconut is lightly
browned.
Combine icing ingrediants until smooth; spread over warm
bars.
Refrigerate at least an hour prior to cutting.
Yield: about 4 dozen

3. Jocie's Tuna Casserole
Yield: 6 Servings

Ingredients:
7 oz Macaroni -- (Creamettes)
2 cn Cream Of Mushroom Soup --Campbells
3/4 cn Milk
3 cn Tuna In Water -- drained
2 Whole Celery
Ribs -- Chopped
1 sm Onion -- chopped
1/2 md Green Pepper -- chopped
3 tb Butter
Black Pepper -- to taste
1/2 lb Mushroom Pieces
Add 1 tablespoon salt and oil to a large pot of boiling
water. Cook
macaroni until tender, and drain.
Saute vegetables gently in butter until limp. Add
soup, tuna, milk, and
pepper. Heat thoroughly, then mix with noodles in a
2-quart casserole.
Casserole may be served "as is", or baked for
20 minutes, uncovered, in a
325 degree oven. If baking is preferred, increase
milk slightly to thin
mixture, as it will cook down somewhat in the oven.
Before baking, you can
top with crushed potato chips, or crushed ritz crackers
blended with a bit
of melted butter.

4. Jolene's Chili
From the Kitchen of: Karen
Source: A secretary at a school at which I used to
teach.This is the best chili I've ever made. It can be
easily doubled and still turns out delicious. Good, quick,
and easy.... I highly recommend it! Very good served
with shredded with cheddar cheese on top and a side of
cornbread. 1 lb. ground beef
1 med. onion, chopped
1 can stewed tomatoes
1 can tomato sauce + 1/2 to 1 can water
1 can kidney beans, rinsed and drained
garlic salt to taste
chili powder to taste
Brown beef with onion; drain. Add the rest of the
ingredients and mix well. Simmer in Crockery Pot the whole
day.
