1. PAPER SACK CHICKEN
INGREDIENTS:
Sauce:
3 tbsp catsup
2 tbsp vinegar
1 tbsp lemon juice
2 tbsp worcestershire sauce
3 tbsp brown sugar
4 tbsp water
2 tbsp butter
1 tsp dry mustard
1 tsp chili powder
1 tsp paprika
1 tsp salt
DIRECTIONS:
Heat sauce. Dust cut-up chicken pieces well with flour, salt
and pepper. Grease the interior of a common grocery bag
(paper).
Pour sauce over chicken and put pieces in the bag. Fold and
fasten the end, lay it on a cookie sheet. Bake at 350F for 1
1/2 hours.
Slit sack open, fold back and serve.

2. Pinchitos
Serve small versions of this pork "kabob"
as an appetizer
or party pick-up food.
Serves 6-8 (as an appetizer)
1 pound Pork loin, boneless, diced
2 teaspoons Garlic, minced
1 1/2 teaspoons Salt
1/2 teaspoon Cumin
1 teaspoon Paprika
1/2 teaspoon Thyme
4 Tablespoons Olive oil
1 Tablespoon Lemon juice
1/8 teaspoon Cayenne
To taste Freshly ground pepper
Combine all ingredients in a non-reactive bowl (glass or
stainless). Cover and refrigerate overnight. Place the pork
on skewers. Grill until tender (about 3-4 minutes per
side). Serve warm.

3. Pineapple Cheese Ball
2 - 8 oz. packages cream cheese, softened
1 - 8 oz. can crushed pineapple, drained
1/4 cup green onions, finely chopped
1/2 Tbsp. seasoning salt
3 Tbsp. fresh parsley, finely chopped
1 cup chopped pecans
Combine all ingredients except pecans. Mix well
and roll cheese in the pecans to cover. Chill until ready to
serve. Serve with crackers.
The Skinny: Use light cream cheese.

4. Pita Bread Recipe
6 Rhodes Texas rolls, thawed and risen
Flour
Olive oil
Salt and pepper
Seasonings and herbs
Using a little flour and a rolling pin, roll each roll into a
flat, round shape, about 10-12 inches in diameter (the smaller
the circle, the thicker the pita). Turn dough over often as
you roll it out. If desired, brush with oil oil, salt, pepper,
and other seasonings and herbs. Place on a medium high heated
barbecue grill or a grill pan on your stove top. Gril 30-45
seconds on each side or until golden brown lines appear.
Remove from heat immediately.

5. Purple Gecko
1 1/2 oz tequila
1/2 oz blue Curacao
1/2 oz red Curacao
1 oz cranberry juice
1 oz sour mix
1/2 oz lime juice
Shake with ice and pour into salt-rimmed cocktail or margarita
glass.
Garnish with a lime wedge.
