1. Queen of Rice Pudding
Yield: 8 Servings
Categories: Rice,

Ingredients:
1/2 c Uncooked rice
2 c Boiling water
2 c Milk
3 Egg yolks
1/3 c Granulated sugar
1 ts Vanilla
3 Egg whites,
stiffly beaten
4 tb Sugar
Cook rice in rapidly boiling salted water. Drain and
place in strainer over
heat until rice is dry fluffy. Make a custard of the
milk, egg yolks, sugar
and vanilla. Pour over rice which had been places in a
buttered baking
dish. Drop spoonfuls of strawberry jam over the surface
and then cover
with meringue which has been made by adding the 4 tbsp.
of sugar to the
beaten egg whites. Sprinkle with coconut. Bake in a slow
oven at 315 F.
for 20 minutes. Serve hot or cold. Serves 8.

Schmear ricotta cheese and your favorite jam on graham crackers
for an instant "cheesecake."
INGREDIENTS
For Quick “Cheesecake”:
4 whole-wheat graham crackers
4 tablespoons part-skim ricotta cheese
8 teaspoons jam
DIRECTIONS
Spread each graham cracker with 1 tablespoon part-skim ricotta
cheese and 2 teaspoons jam.

mashed W/skins on
2 c Quinoa, cooked (the
basis Recipe)

cup grain , 2 c water -- Cook 15 min)
2 Eggs Beaten
-- Subst or 1/2 cup egg
1/2 c Onion -- chopped
1/4 c Parsley -- chopped
1/2 ts Salt
1/2 ts Cumin
1/2 ts Oregano
combine all ingredients. Mix well and form into
1" balls. Deep fry until
golden brown. Note: Try oven roasting.
