1. Title: Wacky Cake
Yield: 4 Servings

Ingredients:
1 1/2 c Unbleached All-Purpose Flour
3 tb Cocoa
1/2 ts Salt
1 ts Vinegar
1 c Cold Water
1 c Sugar
1 ts Baking Soda
1 ts Vanilla
5 tb Vegetable Oil
Mix flour, sugar, cocoa, soda and salt. Make
three wells in the flour
mixture. In one put vanilla; in another the
vinegar, and in the third the
oil. Pour 1 c cold water over all and stir.
No need to beat. Pour into
8 x 8-inch pan. Bake at 350 degrees F oven until
it springs back.

2. Warm Apple Green Tea-ni
Ingredients
1 cup water
1 cup apple juice
4 Lipton Decaffeinated Honey Lemon Green Tea bags
2 tablespoons sugar
Apple slices (optional)
Preparation
In small saucepan, bring water and apple juice to boil. Remove
from heat and add tea bags; cover and brew 1 1/2 minutes.
Remove tea bags; stir in sugar. Pour into tea cups and
garnish, if desired, with apple slices. Serve hot.

3. Watermelon Lemonade With Kiwifruit Splash
Description
Try a cool lemonade that combines two favorite flavors -
watermelon and kiwi.
Ingredients
2 kiwifruit, peeled and cut into fourths
1 1/2 teaspoons sugar
4 cups cubed, seedless watermelon
1 12-ounce can frozen lemonade concentrate
2 cups water
Preparation
Place kiwifruit and sugar in blender; cover and blend on
medium just until smooth. Pour into another container; freeze
1 to 2 hours or until firm.
Place watermelon in blender; cover and blend on medium until
smooth. Place frozen lemonade concentrate and water in large
pitcher. Add watermelon mixture; mix well.
Pour watermelon lemonade into glasses. Spoon a dollop of
frozen kiwifruit mixture on top. Serve immediately.
Serves
Makes: 6 1-cup servings

4. Weeknight Waffle-wiches
Ingredients
12 slices turkey bacon, cooked, divided
6 slices thinly-sliced deli ham (about 4 ounces), divided
1 can (12 fluid ounces) Nestlé Carnation Evaporated Milk,
divided
1 package (8 ounces) shredded cheddar cheese, divided
3 cups plus 1 teaspoon all-purpose baking mix (such as
Bisquick), divided
3/4 cup water
1 large egg, beaten
3 tablespoons prepared yellow mustard
Preparation
COMBINE 3/4 cup evaporated milk, 1 1/2 cups cheese and 1
teaspoon baking mix in small saucepan. Cook over medium heat,
stirring constantly, until cheese is melted and sauce has
slightly thickened to a creamy consistency. Remove from heat;
cover.
WHISK together remaining evaporated milk, water, remaining 1/2
cup cheese, egg and mustard in medium bowl. Stir remaining 3
cups baking mix into milk mixture until well blended.
PREHEAT Belgian waffle maker* according to manufacturer's
directions. Pour about 1 1/4 cups batter onto waffle maker.
(This amount is enough for a square or round waffle maker.)
Cook according to manufacturer's directions. Repeat with
remaining batter. Keep cooked waffles warm in oven.
To assemble - SPREAD 2 tablespoons cheese sauce evenly over
one side of 6 waffle squares. Place 2 slices of bacon and 1
slice of ham on cheese sauce on each. Top with second waffle
to make Waffle-wiches.
Serves
Makes 6 Belgian-style waffle sandwiches
Notes, Tips & Suggestions
*Can also be cooked in standard waffle maker (makes about 18
standard-sized waffles).

5. Wrapped & Rolled Grilled Chicken and
Apples

Ingredients
Grilled Chicken
20 ounces Tyson® Trimmed &Ready Sliced Boneless Skinless
Chicken Breasts
2 tablespoons light olive oil
1 pinch five-spice powder
1 pinch salt and black pepper Asian Pesto Dressing
1/2 cup sweet basil, finely chopped
1/2 cup fat-free yogurt
1/2 tablespoon fresh ginger, peeled and minced
2 tablespoons apple cider or unfiltered apple juice
1 ounce mint, finely chopped
1 pinch salt and black pepper Filling
16 ounces brown and wild rice, precooked
2 Granny Smith apples, chopped and seeded
1/2 red bell pepper, julienne cut and seeded
1/4 cup golden raisins
3 Tyson 12-inch Honey Wheat Wraps
Preparation
Preheat indoor grill or griddle to 350° F. Season chicken
breast with oil, five-spice powder, salt and pepper.
In small chopper or blender, add basil, yogurt, ginger, cider,
mint, salt and pepper. Blend until smooth. Refrigerate for
later use.
In a small bowl, mix together rice, apples, red bell pepper
and raisins to make filling.
Grill chicken on both sides until fully cooked at 165° F.
Allow to rest for 2 minutes, then slice into thin strips.
Slightly warm wrap on the grill so it can easily be rolled.
On a clean surface, lay wrap down and add the following
ingredients: 4 ounces filling mixture, 5 ounces chicken and 1
ounce Asian Pesto Dressing. Fold wrap over, cut in half and
serve.

Makes 6 One-Half Wrap Servings
