1. Almond Snack Mix
Ingredients
1/3
cup whole unsalted almonds
2/3 cup multibran or whole-grain cereal squares
1/2 cup low-fat granola cereal without raisins
1/4 cup dried apricot halves, cut into strips, or golden
raisins
1/4 cup sweetened dried cranberries
Preparation
Preheat the oven to 350°F. Spread almonds in a single layer
on an ungreased baking sheet. Bake 5 to 10 minutes or until
lightly toasted, stirring once or twice to ensure even baking.
Transfer to a plate to cool completely.
Meanwhile, in a large bowl, stir together remaining
ingredients. Stir in cooled almonds.

Tips & Suggestions
Cook's Tip: If all the snack mix isn't likely to be eaten on
the day you make it, we recommend using golden raisins. The
moisture of the dried apricots may cause the cereal to lose
its crispness over time. Be sure the almonds are completely
cooled when you add them to the mix; otherwise, they will make
it soggy.

INGREDIENTS:
8 apples, peeled and sliced
1/2 cup sugar
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup water
1 teaspoon lemon juice
1 cup sugar
3/4 cup flour
1/2 cup butter, softened
TO PREPARE:
Put apples in bottom of large baking dish. Combine
sugar,
cinnamon, and nutmeg; sprinkle on top of apples. Combine
water and lemon juice; pour over apples. Combine sugar,
flour, and butter; crumble over apple mixture. Bake at
350
degrees for 30 minutes.

3. Apricot-Ginger Glazed Salmon
Description
Island Inspired Escape - For a tropical inspired
evening, pair a Fresh Express Pacifica Supreme complete salad
with this sweet 'n' spicy salmon fillet. Serve fresh orange
wedges and store-bought almond cookies for a sweet finale
Ingredients
1/2
pound salmon fillet
Salt and freshly ground black pepper
1 1/2 tablespoons apricot jam or preserves
1 1/2 teaspoons grated fresh ginger
1 teaspoon soy sauce
Preparation
Heat oven to 450°F.
Season salmon with salt and pepper; place skin side down on
parchment-lined (for easy clean up) rimmed baking sheet.
In small bowl, stir together jam, ginger and soy sauce; spread
evenly over salmon. Roast 10 to 15 minutes, until salmon
flakes easily.

4. Auntie Anne's Pretzels
INGREDIENTS:
1-1/2 tsp Yeast,
1/2 tsp Brown sugar,
1 tsp Salt,
1-1/2 cup Water,
4 cups Bread flour,
2 tsp Baking soda,
2 cups Warm water,
1/2 lb Butter,
2 Tbsp Honey,
White sugar
Brown sugar.
DIRECTIONS:
Mix yeast, brown sugar, dash of salt and 1-1/2 cups water. Let
sit for five minutes. Add bread flour. Knead well. Let rise
for about one hour.
Grease baking sheet.
Mix baking soda and warm water. Take a piece of dough and roll
and shape into a pretzel. The easiest way to shape is to roll
into a rope, whatever size you prefer. Pinch ends of rope then
bring ends of rope to other side of circle. Dip pretzels in
warm water and baking soda mixture and put on baking sheet.
Bake at 425 F for about 12 minutes. While still hot, brush
with melted butter and honey. Sprinkle with white and brown
sugar (approx. half and half mixture).

5. Awesome BBQ Burgers
Ingredients
1
10-ounce package frozen Boca Foods Meatless Original Burgers
1/4 cup barbecue sauce
1/4 cup light cream cheese spread
4
hamburger buns, split, toasted
4 lettuce leaves
1/4
of a medium cucumber, thinly sliced
1/2
of a medium avocado, peeled, sliced
Preparation
Grill burgers as directed on package, brushing with barbecue
sauce during last 2 minutes of grilling time.
Spread cream cheese on bottom halves of buns.
Top evenly with lettuce, burgers, cucumbers, avocados and top
halves of buns.
