1. Caramel
Apple Pecan Cheesecake....A Splenda recipe
Ingredients:
1 (21 ounce) Can of Apple Pie Filling
1 (6 ounce) Reduced Fat Graham Cracker Pie Crust
2 (8 ounce) packages non fat Cream Cheese * at room temp.*
1/3 Cup Splenda
1 teaspoon Vanilla Extract
2 Eggs
1/4 Cup Caramel Ice Cream Topping
1/3 Cup Chopped Pecans
Directions:
1. Pre-heat Oven to 350* **Reserve 3/4 Cup
of Apple Pie Filling for later use**
2. Spoon remaining Apple Pie Filling into the Graham Cracker
Pie Crust.
3. In a Large Bowl, Combine softened Cream Cheese, Splenda,
and Vanilla. Beat until smooth, then beat in Eggs one at a
time. Pour over the Apple Pie Filling in Crust.
4.Bake at 350* for 35 mins. or until the center is set. Remove
from oven,and cool to room temp.
5.In a small saucepan, melt Caramel Ice Cream Topping with the
reserved Apple Pie Filling. Arrange the Apple Slices around
the outer edges of the Cheesecake. Pour (spread) the
Caramel/Apple Sauce mixture evenly over the Cheesecake.
Sprinkle with chopped Pecans. Chill until ready to serve.

Makes about 1 dozen.
INGREDIENTS:
3 egg whites
1/8 tsp baking powder
1 cup sugar
1-1/2 cups cream
1-1/2 tbsp sugar
1/2 tsp vanilla
Fresh or frozen raspberries
DIRECTIONS:
Preheat oven to 250 degrees F.
Grease cookie sheets.
Beat egg whites with baking powder until stiff. Add 3
tablespoons sugar; beat 2 minutes longer. Fold in remaining
sugar.
Spoon meringues onto cookie sheet. Bake 1-1/2 hours. Make a
hole in the bottom of each meringue while still warm; cool.
Whip cream with sugar and vanilla. Fill holes in meringues
with the cream. Use more cream to sandwich two meringues
together. Repeat until all meringues are used. Serve
with fresh or thawed frozen raspberries.
Nutritional Info: Per meringue: 148 cal, 8 g fat, 26 mg
cholesterol, 19 g carbohydrates, 0 g fiber, 2 g protein, 25 mg
sodium.

3. Campbell'sŪ
Cheeseburger Pasta
Prep/Cook Time 20 min.
1 lb. ground beef
1 can Campbell'sŪ Cheddar Cheese Soup
1 can (10 3/4 oz.) Campbell'sŪ Tomato Soup
1 1/2 cups water
2 cups uncooked medium shell pasta
COOK beef in skillet until browned. Pour off fat.
ADD soups, water and pasta. Heat to a boil. Cook over
medium heat 10 min. or until done, stirring often. Serves 4.

1 can (10 3/4 oz.) Campbell'sŪ Tomato Soup
1 lb. ground beef
Medium shell pasta

The levels of fat/lean content in ground beef can range from
about 70% lean to as high as 95% lean. The leaner varieties
are of course more expensive; however they also result in less
fat waste to pour off.

Chocolate Chip Cookie Pie

INGREDIENTS:
2 eggs
1/2 cup flour
1/2 cup sugar
1/2 cup packed brown sugar
1/2 cup (1 stick) butter, softened
1 cup semisweet chocolate chips
1 cup pecans, chopped
1 unbaked (9-inch) pie shell
TO PREPARE:
Beat the eggs in a mixing bowl at
high speed for 3
minutes or until frothy. Add the flour, sugar and brown
sugar and beat until blended. Beat in the butter.
Stir in
the chocolate chips and pecans.
Spoon the chocolate mixture into the
pie shell. Bake
at 325 degrees for 55 to 60 minutes or until the center is
set. Let stand until cool.
SERVES: 8

5. Cranberry-Apple
Punch
2 quarts cranberry juice
1 and 1/2 quarts apple cider
2 tsp. whole cloves
4 cinnamon sticks
2 tsp. whole allspice
1/4 tsp. ground nutmeg
1/2 cup brown sugar
Combine all ingredients in a large pot and simmer for 1 hour
or
longer if desired. Remove cinnamon sticks, whole allspice and
whole cloves before serving. Makes 25 - 30 punch cups full.
The Skinny: Sometimes you can find low sugar cranberry
juice.
