Lemon-Mushroom Bisque

A Collection of Recipes from the City of Roses

INGREDIENTS:

1 pound firm white mushrooms (20-24 mushrooms), divided
1/2 cup freshly-squeezed lemon juice (2 lemons), divided
1 tablespoon unsalted butter
2 tablespoons shallots (4 shallots), minced
1/2 teaspoon dried thyme
1 teaspoon salt
1/2 bay leaf
1/2 teaspoon white pepper
2 cups half and half
2 cups chicken broth
1 teaspoon cornstarch dissolved in one tablespoon cold water
1 tablespoon parsley, minced

TO PREPARE:

In a food processor, place half of mushrooms and half of the lemon juice.  Process mushrooms until finely chopped.  Do not overprocess.  Repeat with remaining mushrooms and remaining juice.

In a heavy saucepan over medium heat, melt butter.  Add shallots and lightly saute until softened, about 5 minutes.  Pour in mushrooms, thyme, salt and bay leaf.  Saute over moderate heat until all liquid evaporates, approximately 10 minutes.

Add pepper, half and half and chicken broth to saucepan and bring mixture to a boil.  Reduce heat and simmer 20 minutes.  Add cornstarch mixture and simmer an additional 10 minutes, stirring constantly.

Serve in warmed bowls with a garnish of minced parsley and crusty French bread.

2. Leslie Revsin's Strawberries in Lemon-Lavender Syrup

Preparation Time: 5 min.
Cooking Time: 10 min.
 
Ingredients:

1 Lbs. Driscoll's strawberry
1/3 cup water
1/4 cup lemon juice
3 Tbs. sugar
3 Tbs. dried lavender flowers
1/2 cup whipped cream (optional)

This Recipe is considered:
Low Fat
Low Calorie
Low Cholesterol
Low Sodium

Cooking Directions:

Rinse and drain strawberries. Hull and cut into halves or quarters into a large bowl and set aside. In small saucepan, combine water, lemon juice, sugar and lavender and simmer over low heat, stirring occasionally, for
about 3 minutes or until sugar is dissolved and lavender is infused. Strain syrup, discarding the blossoms. Pour strained syrup over berries and toss gently to mix. Serve berries and syrup right away in pretty glass bowls or stemmed glasses. Garnish with whipped cream, if desired. You can prepare
the syrup in advance and let it cool. Toss with berries just before serving. Note: You can find the lavender flowers in the bulk herb or scent sections of the supermarket. Or try 2 to 3 whole cardamom seeds in place of the lavender - delightful!

2 cup nonfat vanilla frozen yogurt
1/4 cup strawberry topping
1/2 cup light hot fudge topping

Scoop frozen yogurt into individual dessert cups. Drizzle with strawberry and fudge topping.

4. Lone Star Brisket in Chili Sauce and Beer Recipe

A spicy recipe that will add some kick to your dinner

INGREDIENTS:


1 brisket (5 to 7 pounds), trimmed

2-1/2 teaspoons seasoned salt

1/4 teaspoon freshly ground pepper

2 cloves garlic, minced

2 onions, sliced and separated into rings

2 ribs celery, chopped

1 bottle (12 ounces) chili sauce

1/4 cup water

12 ounces beer, at room temperature

TO PREPARE:

Preheat oven to 300 degrees.  Sprinkle brisket with seasoned salt, pepper, and garlic.  Place brisket in roasting pan, fat side up.  Add onions and celery in a single layer over top of brisket, covering brisket completely.  Pour chili sauce over brisket.  Pour 1/4 cup water into chili sauce bottle, shake, and pour over meat.  Roast uncovered 1-1/2 hours, basting every 30 minutes.  Pour beer over meat.  Cover tightly with foil and roast an additional 3 to 4 hours, depending on size of brisket.  Remove brisket from gravy and place on a carving board.  Refrigerate gravy or chill quickly by placing in freezer.  When cooled, slice meat without disturbing the shape of the brisket.  Slide the brisket back into pan.  When gravy is cold, skim fat and pour gravy over brisket.  Put back into the oven to reheat.  Serve immediately.  This freezes well, already sliced.

5. Low Fat Cherry Cobbler

Preparation Time: 15 min.
Cooking Time: 30 min.
 
Ingredients:

4 cup pitted tart cherries, thawed, if frozen
1 Tbs. sugar
1/4 cup cornstarch
1 tsp. ground cinnamon
1/2 tsp. almond extract
nonstick vegetable spray
1 cup all purpose flour
1 Tbs. sugar
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt (necessary)
1 cup light sour cream
2 Tbs. milk
1 tsp. vanilla extract
1 egg
1 Tbs. sugar
 
This Recipe is considered:
Low Fat

Cooking Directions:
Preheat oven to 350° F. Combine cherries with sugar, cornstarch and cinnamon in a heavy saucepan over medium heat. Simmer 1 minute, or until mixture thickens. Remove from heat and add almond extract. Mix thoroughly. Transfer cherry mixture to a 7 x 11 inches baking dish that has been sprayed with cooking spray. Set aside. Sift together next 5 ingredients in a food processor or a bowl. Stir in remaining ingredients, except remaining sugar. Blend well. Spread batter evenly over cherries. Sprinkle with remaining sugar. Bake 30 minutes, until top is golden and mixture is bubbling. </BLOCKQUOTE>
