1. Quail with Rice

Yield: 4 servings
4 Strips bacon; halved
8 Quail
1 c Carrot; shredded
1/2 c Green onion; sliced
1/2 c Fresh parsley; minced
2 1/2 c Chicken broth
1 c Uncooked long grain rice
1/2 ts Salt
1/4 ts Lemon pepper
In a large skillet over medium heat, cook bacon until
partially done. Remove bacon; drain, reserving 2
tablespoons drippings. Brown quail in drippings. Remove
and keep warm. Saute carrots, onions and parsley until
tender. Add broth, rice, salt and lemon pepper; bring to
a boil. Place quail over rice; place one bacon strip on
each. Reduce heat; cover and simmer for 25-30 minutes or
until the rice is tender and quail is cooked.

2. Quaker Choc-Oat-Chip Cookies
Categories: Cookies, Desserts
Yield: 60 Servings
1 c (2 sticks) margarine or but
1 1/4 c Firmly packed brown sugar
1/2 c Granulated sugar
2 x Eggs
2 tb Milk
2 ts Vanilla
1 3/4 c All-purpose flour
1 ts Baking soda
1/2 ts Salt (optional)
2 1/2 c Quaker oats (quick or old-Fashioned, uncooked)
2 c (1 12-oz. pkg.) semi-sweet Chocolate morsels
1 c Coarsely chopped nuts (optional)
Heat oven to 375. Beat margarine and sugars until
creamy. Add eggs, milk, and vanilla; beat well. Add
flour, baking soda and salt, mix well. Stir in oats,
chocolate morsels and nuts; mix well. Drop by rounded
measuring tablespoons onto ungreased cookie sheet. (for
easy bar cookies press dough instead into bottom of
ungreased 13 X 9 inch baking pan.) Bake cookies 9 to 10
mins for chewy and 12 to 13 for crispy (bake bar cookies
35 to 40 mins until light golden brown). Cookies: cool 1
min on cookie sheet; move to wire rack. Cool completely.
ABout 5 dozen cookies.

3. Quaker's Cocktail Recipe
Ingredients
3/4 oz Brandy
3/4 oz Light Rum
1/4 (Juice of) Lemon
2 tsp Raspberry Syrup
Instructions Shake all ingredients with ice, strain into
a cocktail glass, and serve.
Serve Quaker's Cocktail in a Cocktail Glass

4. Quarterback Meatloaf

Yield: 4 Servings
1 Egg or egg substitute
1 lb Lean ground beef or 1/2 lb. each ground beef and
pork
1 ts Salt
1 ts Granulated sugar
1/8 ts Pepper
1 ts Lemon juice
1/4 c Chopped onion
1/2 c Bread crumbs
1/2 c Pork and beans
12 Strips pimiento
1/4 c Ketchup
Set oven at 400=F8F. Beat egg in mixing bowl. Add all
ingredients except pimiento and ketchup. Mix lightly
with fork. Shape into four loaves shaped like footballs.
Place loaves on baking sheet and brush with catsup mixed
with 1 tbs. water. Bake 25 minutes. Left with large
spoon onto serving dish. Put strips of pimiento on top

5. A German recipe.
QUICK PEACH KUCHEN
Combine:
1/2 c. butter
2 c. flour
1/4 tsp. baking powder
1/2 tsp. salt
Press into an 8 x 10 inch pan. Bake for 10 mins at 400
degrees. (Crust will be fairly thick so if preferred,
use a slightly larger pan.)
Arrange peach slices on top of crust. Sprinkle with a
mixture of:
2 Tbsp. sugar
1 tsp. cinnamon
Next, mix:
1 c. sweet or sour cream
1/2 c. brown sugar
1/2 c. white sugar
2 egg yolks, beaten
pour over peaches. Bake at 370 degrees for 45 to 50 mins.
