1. Ugly Duckling Cake
Yield: 1 Cake
Categories: Cakes,
Desserts
Ingredients:
1 pk Yellow cake mix
2 1/3 c Coconut
1/2 c Firmly packed brn. sugar
1/2 c Evaporated milk
1 cn Fruit cocktail (16
oz.)
2 Eggs
1/2 c Butter or oleo
1/2 c Granulated sugar
Combine cake mix, fruit
cocktail with syrup, 1 cup coconut and eggs in
lge. mixer bowl. Blend, then beat at med.
speed for 2 min. Pour into
prepared 13 x 9 x 2 sheet cake pan. Sprinkle with
brn. sugar. Bake at 325
F. for 45 min. or until cake springs back when
lightly touched. Bring
butter, granulated sugar and milk to boil in
saucepan. Boil 2 min. Remove
from heat, stir in remaining coconut. Spoon over
hot cake in pan.

2. Unbaked Caramel Cookies
Yield: 60 Servings
Categories: Cookies
Ingredients:
2 c Sugar
3/4 c Butter or margarine
6 oz Can evaporated milk;
undiluted
1 Pkg
instant butterscotch pudding mix
3 1/2 c Quick-cooking Oatmeal
Combine sugar, butter and evaporated
milk; stir over low heat until
mixture comes to a full rolling boil. Remove from
heat and add pudding mix
and oatmeal. Stir thoroughly. Cool 15 minutes,
the drop by rounded
spoonfuls onto waxed=paper lined cookie pans.
These are almost like candy, too.

3. UNCLE BEN’S® Chicken, Apple, Walnut and
Brown Rice Salad
Serves: 6

Meal Occasion: Appetizer, Side Dish, Salad, Lunch,
Dinner
Cuisine Type: American
Ingredients
2 bags UNCLE BEN’S® Boil-In-Bag Whole Grain Brown
Rice
2 cups shredded skinless chicken breast cooked and
cooled
2 medium green apples thinly sliced
1 cup red onion finely chopped (optional)
1/3 cup toasted walnuts coarsely chopped
2 Tbsp. fresh sage chopped
6 Tbsp. low-fat balsamic vinaigrette
Instructions
1. Prepare UNCLE BEN’S® Boil-in-Bag Whole Grain Brown
Rice according to package directions. Let cool.
2. If chicken is not already cooked, grill in pan under
medium-high heat until cooked through.
3. In a large bowl, toss together rice, chicken, green
apple, red onion, walnuts and balsamic vinaigrette.
4. Garnish with fresh sage. Serve cold or room
temperature.

4. Uncle Vern's Picante Sauce
Ingredients:
28 oz Can Whole Tomatoes
1 Medium onion,
chopped fine
4 Jalapeno peppers, chopped fine
3 tb Apple cider vinegar
1/2 ts Garlic powder
1 ts Salt
Instructions:
Combine all ingredients in saucepan.
Bring to boil.
Lower heat and simmer uncovered 15 minutes.
Chop tomatoes while cooking.
Number of peppers may be varied to increase flavorful
"heat".
Serve chilled with Doritos or similar tortilla chips as
dip.

5. Un-Fried French Fries
Yield: 4 Servings
Categories: Potatoes,
Low-Fat
Ingredients:
5 lg Baking potatoes --
about 2 3/4 lb T
Light vegetable oil spray
2 lg Egg whites
1 tb Cajun spice
Preheat the oven to 400 degrees.
Slice each potato lengthwise into 1/4-inch ovals,
then slice even oval
lengthwise into matchsticks.
Coat a baking sheet with 3 sprays of the vegetable
oil (like PAM).
Combine the egg whites and Cajun spice in a bowl.
Add the matchstick
potatoes and mix to coat. Pour the coated
potatoes onto the prepared
baking sheet and spread them out into a single
layers, leaving a little
space between.
Place the baking sheet on the bottom shelf of the
oven. Bake for 40 to 45
minutes, until the fries are crispy, turning them
every 6 to 8 minutes with
a spatula so that they brown evenly. Serve
immediately.
Fat per serving= 0.5 gram Calories per
serving=291 IN THE KITCHEN WITH
