1. Title: Quaker Omelet

Eggs, separated
1 1/2 ts Cornstarch
1/2 c Milk
Salt and pepper
1 tb Butter
Put heavy frying pan with close fitting cover
on to
heat. Separate eggs and beat yolks
until thick, then
add cornstarch. Beat whites stiff, add
to yolk
mixture and finally add milk and salt and
pepper to
taste. Melt butter in hot pan, pour in
mixture.
Cover closely and cook over medium heat for 6
or 7
minutes. Remove cover and with spatula
fold omelet in
half. Do not lift cover until cooked.

Recipe by: Iris Dunaway Beat eggs and sugar
until
light and foamy. Add cooled melted butter,
milk and
vanilla extract. Sift flour and baking powder
and add
to egg mixture. Add salt & beat well.
Bake and serve.
Note: This recipe is from the Belgian
Waffles Recipe
and Instruction Booklet that came with the
waffle iron
I purchased. I use this recipe all the
time and it is
really great!

4. QUICK CRANBERRY COBBLER

Thick-skinned orange

Water

Granulated sugar replacement

Cranberries

Biscuit dough to make 8 bis.
Grate the orange rind. Juice the
orange. Combine orange juice, grated rind, water,
sugar replacement, cranberries and butter in a saucepan.
Bring to a boil and cook for 1 min.
Spoon cranberry sauce evenly among 8
well-greased baking dishes or into a casserole. Top
the sauce with biscuits (biscuit dough?). Bake at
450 F for 10 min, reduce heat and bake at 350 F for
20 min longer. 8 servings.
Each serving 98 calories, 1 bread, 3/4 fruit

Suggestion: try half recipe using 1/2
tsp. dry orange peel and 3 or 4 tb. unsweetened orange
juice, just cooking the cranberry mixture in a saucepan
and serve with turkey. Half recipe without biscuits
would be about 3 fruit exchanges.

5. Quick Party Eggnog
Yield: 12 Servings

Ingredients:
2 qt Eggnog mix, chilled
750 ml Light rum
1 pt Heavy cream
1/4 ts Nutmeg
Here are some recipes for party punches that
include alcohol. Some are
wine-based, others liquor-based. All are for 12
four ounce servings, and
all are from _The New Doubleday Cookbook_ by Jean
Anderson & Elaine Hanna.
Mix eggnog mix and rum. Whip cream to soft peaks
and fold in; cover and
chill 1 hr. Pout into large punch bowl and dust
with nutmeg.
