1. Date Nut Bread - Low Fat-Sugar Free

1 c Chopped dates
1 c Raisins
1 1/2 c Boiling water
1 c Whole wheat
flour
1 c All-purpose
flour; unbleached
1 ts Baking soda
1 ts Baking powder
2 Egg
whites
1 ts Vanilla
1/2 c Chopped pecans
Place raisins and dates in a small bowl and cover with
the boiling water, set aside.
In a large bowl, stir together flour, baking soda,
baking powder and pecans.
Blend in the egg whites and vanilla.
Add the raisin and date mixture and stir until well
blended.
Spread evenly into a greased and floured 9" x
5" x 3" loaf pan.
Bake at 350 for 35 - 40 minutes or until tests done.
Cool in pan for 10 minutes and then remove and cool
throughly on a wire rack. It is best wrapped and
stored overnight before serving.

2. Deep Fried Ice Cream

4 Scoops vanilla ice cream

1/4 c Bread crumbs
1/4 c Almond flour
1 Egg
1/4 c Flour
--------------------GARNISH-------------------------
Confectioner's sugar
Mint leaves
Freeze scoops of vanilla ice cream
Beat egg. Combine bread crumbs and almond flour. Roll
ice cream scoops in flour, then beaten egg, and
finally in almond/breadcrumb mixture. Fry the ice
cream in hot oil for 20 seconds. Put the fried ice
cream in bowl. Dust with confectioner's sugar and
garnish with mint leaf.

3. Diabetic Spicy Barbecue Sauce

1 1/2 tb Diet margarine
3/4 c Chopped onion
1 1/2 c Dietetic ketchup
1 c Vinegar; plus 2 tb Vinegar
3/4 c Diet pancake syrup
3/4 c Water
3 Beef bouillon cubes
1 1/2 tb Worchestershire sauce
2 1/4 ts Salt
1/4 ts Pepper
3 dr Tabasco Sauce
1 pk Equal; (artificial sugar sweetener)
Melt margarine in saucepan. Add onionand saute until
lightly browned.. Then add remaining ingredients,
except Equal..Boil slowly 15 minutes, or until sauce
is glossy and thick. Remove from heat and stir in
Equal.
Brush on broiled or roasted chicken, and place
remaining sauce in cup for dipping..It can also be
used to sauce cocktail franks and appetizer meatballs.
Makes 2-1/4 cups.. Calories: 20 per tablespoon

4. Disco Doodle Popcorn Mix
Hot popped popcorn*
Butter-flavor salt
Nuts (peanuts, almonds, etc.)
Dried fruit (raisins, apricots, dates, etc.)
Soy nuts
Pumpkin seeds
Carob pieces
Set out a large bowl of popped popcorn; sprinkle with
butter-flavored salt. Put bowls of any or all the
accompaniments around popcorn. Let each person fill a
small bowl with popcorn and top with desired health
snacks.
* In a 3-quart popper, use 1/3 cup kernels and 3
tablespoons oil. In a 4-quart popper, use 1/2 cup
kernels and four tablespoons oil.

5. Double Chocolate Popcorn Balls
1/2 cup sugar
1/2 cup corn syrup
1/4 cup butter or margarine
2 tablespoons cocoa powder
8 cups freshly popped popcorn
1 cup "M&M's"® Semi-Sweet Chocolate
Mini Baking Bits
Combine sugar, corn syrup, butter and cocoa in medium
saucepan; bring to a boil.
Add popcorn, stirring until evenly coated. Remove from
heat. Stir in "M&M's"® pieces. Cool
slightly.
Shape into 2" balls.
Yield: 18 balls
