1. Lamb Shanks in Lemon Sauce

4 lamb shanks -- abt 3 lbs
1 lg onion -- chopped fine
1 clove garlic -- minced
1 1/4 c water
1 tbsp lemon juice
1 tsp salt
1 bay leaf
1 tbsp potato starch

Brown the lamb in a heavy casserole. Push the lamb to one side of the dish. Add onion and garlic and saute until soft. Stir in 1 cup water, lemon juice, bay leaf and salt. Cover. Simmer 3 hours or until very tender. Remove meat and keep hot. Blend potato starch with remaining water. Stir into pan liquid. Cook, stirring constantly, until gravy thickens and boils for 1 min. 2. Layered Orange Bars

Yield: 36 Servings
Categories: Desserts, Snacks

Ingredients:

    1/4 c  Flour
    1/2 ts Baking powder
      2    Eggs
      1 c  Firmly packed dark brown
           Sugar
      1 ts Vanilla extract
      1 tb Grated orange peel
      1 c  Chopped walnuts
  1 1/2 c  Flaked coconut
           Orange Pastry-----
    1/2 c  Butter -- softened
    1/2 c  Granulated sugar
      1 ts Grated orange peel
      1 c  Flour
           Orange Glaze-----
      1 c  Confectioner's sugar
      1 ts Grated orange peel
  1 1/2 tb Orange juice


  1. Preheat oven to 375 degrees F. Prepare Orange Pastry; press firmly and
  evenly over bottom of a greased 9- by 13-inch baking pan. Bake for 10
  minutes, then remove pastry from oven. Reduce temperature to 350 degrees F.
 
  2. In a small bowl combine flour and baking powder; stir to combine
  thoroughly. In mixer bowl combine eggs and brown sugar; beat until well
  mixed. Blend in vanilla and orange peel. Gradually beat in flour mixture
  until well combined. Stir in walnuts and coconut. Spread mixture over
  partially baked pastry.
 
  3. Bake until well browned and set in center (20 to 25 minutes). Remove pan
  to a rack; drizzle with glaze while warm. Let stand until glaze is set,
  then cut into bars. Remove from pan when cool.
 
  Orange Pastry: In mixer bowl combine butter, sugar, and orange peel; beat
  until fluffy. Gradually stir in flour until mixture is well combined (dough
  will be crumbly).
 
  Orange Glaze Combine confectioners' sugar and orange peel in a small bowl;
  stir in orange juice until icing is smooth.
 
  Chocolate-Drizzled Pecan Bars Omit orange peel from filling; substitute
  chopped pecans for walnuts. Increase vanilla to 1-1/2 teaspoons. Omit
  orange peel from pastry; substitute 1/2 teaspoon vanilla. Omit glaze. While
  cookies are cooling, melt 1 square (1 oz) semisweet baking chocolate with
  1/2 teaspoon vegetable oil in a small, heavy pan over low heat. Drizzle
  melted chocolate over baked cookies from the tip of a teaspoon. Cut into
  bars after chocolate sets.

3. Lazy Lasagna

      1 lb MED. GROUND BEEF
      1    Jar UNCLE BEN'S
           CACCIATORE
           SIMMER SAUCE
    1/2 pk (375 G) BROAD EGG
           NOODLES
      8 oz MOZZARELLA CHEESE GRATED ABOUT 2 c
   1/3 c SOUR CREAM
   1/2 c PARMESAN CHEESE

BROWN MEAT AND DRAIN OFF FAT. STIR IN SAUCEAND SIMMER UNCOVERED FOR 10 MINUTES. COOK NOODLES ACCORDING TO PKG. DIRECTIONS; DRAIN. COMBINE MOzZARELLA CHEESE AND SOUR CREAM. IN GREASED 8 c CASSEROLE SPREAD HALF THE NOODLES. TOP WITH CHEESE MIXTURE, THEN HALF THE MEAT, THE REMAINING NOODLES AND REMAINING MEAT. SPRINKLE WITH PARMESAN CHEESE. BAKE, COVERED IN 350*F OVEN FOR 30 MINUTES OR UNTIL BUBBLY, REMOVE COVER FOR LAST 5 MINUTES.

4. Little Apples Popcorn Balls

Yield: 1 Servings
Categories: Snacks, Popcorn

Ingredients:

      2 tb Butter
      2 tb Sugar
      2 tb Brown sugar
    1/4 c  Molasses
    1/4 c  White corn syrup
    1/4 ts Cinnamon
    1/8 ts Ginger


  ds Cloves 1/2 c Popcorn; popped 1 c Walnuts; chop, toasted 1 c Dried
  apples; cut small In a heavy sacuepan, put the butter, sugar, brown sugar,
  molasses, corn syrup, cinnamon, ginger and cloves. Cook over moderate heat
  to 280~ on a candy thermometer. Pour over the popped corn, walnuts and
  apples. Shape into balls.

5. Low-Calorie French Fries

Yield: 4 Servings
Categories: Snacks, Vegetables, Healthy

Ingredients:

      2    Medium potatoes; * see note
      3    Vegetable cooking spray
           Paprika; optional
           Salt
           Pepper
           Celery salt; optional


  Recipe by: Jo Anne Merrill Preparation Time: 0:25 * Use 2 unpeeled and
  scrubbed potatoes, baking size.
 
       Cut potatoes in half lengthwise. Slice each half into lengthwise
  wedges with some peel on each piece. Soak in cold
       Arrange potatoes in single layer on cooking sheet. Bake in preheated
  450-degree oven for about 20 minutes, stirring occasionally. To season,
  sprinkle with salt, pepper and your choice of paprika or celery salt.
  Reduce salt if using celery salt.
       Also good sprinkled with chili powder just before end of cooking time.
