Marble Molasses Cake

The Textbook of Louisiana Cuisine

INGREDIENTS:

1/2 cup butter
1 cup sugar
2 eggs, beaten
2 cups sifted cake flour
2 teaspoons baking powder
1/4 teaspoon salt
2/3 cup milk
1 teaspoon cinnamon
1/2 teaspoon cloves
1/4 teaspoon ginger
3 tablespoons molasses

TO PREPARE:

Set oven at 350 degrees and grease loaf pan.  Cream butter, add sugar gradually and beat until light and fluffy.  Add beaten eggs and continue to cream.  Next add flour, which has been sifted together with baking power and salt, alternately with milk.  Beat after each addition.  Then remove 2/3 of batter from bowl.  Add spices and molasses to the remaining batter and beat well.  Drop by tablespoons into greased loaf pan, alternating light and dark mixture.  Bake at 350 degrees for one hour.  Serve plain or frost with your favorite icing.  Nice to serve with coffee or tea and is good without frosting.

2. Marnas Oysters Bienville Recipe

The first bite won't be the last

INGREDIENTS:


6 dozen oysters (save liquid)

1 bunch green onions, chopped

4 cloves garlic, minced

1/4 pound butter

8 tablespoons flour

1-1/2 cups liquid (use oyster liquid, mushroom liquid and add heavy cream to make up the 1-1/2 cups)

Heavy cream

1/2 cup lemon juice

1/2 cup dry white wine

1/2 pound shrimp, chopped finely

1 (5-3/4 ounce) can chopped mushrooms

1/4 cup chopped parsley

Tabasco sauce to taste

White pepper and salt, to taste

Rock salt

Parmesan cheese

Lemon wedges TO PREPARE:

Open oysters and reserve liquid.  Saute green onion and garlic in butter.  Stir in flour and cook, over low heat, until bubbly.  Add liquid, a little at a time, and simmer until smooth and creamy.  Add remaining ingredients.  Simmer this sauce about 15 minutes.  Place oysters, in shells, on rock salt and bake at 375 degrees until edges curl.  Drain excess liquid from shells and top with sauce.  Sprinkle with grated Parmesan cheese and run under broiler until slightly brown on top.  Serve with lemon wedges.

SERVES: 6 - 12

3. Melt in Your Mouth Brownies

INGREDIENTS:

Brownie:

1/2 cup butter

2 squares unsweetened chocolate

1 cup sugar

2 eggs

1/2 cup flour

1 cup chopped pecans

1/2 teaspoon vanilla (Optional)
Frosting:

1 cup sugar

1/2 cup butter

1/4 cup milk

1/4 cup cocoa

TO PREPARE:

Preheat oven to 350 degrees.  Melt butter in a double boiler.  When melted, remove from fire and add sugar and beat well.  Add eggs, one at a time, beating after each addition.  Add flour, nuts and vanilla.  Mix well.  Pour into a greased and floured 9 x 9 pan.  Bake for 20 to 25 minutes.  (Do not over bake.  These are supposed to be moist.)  To make frosting, mix together all ingredients and bring to a full boil over low heat, stirring constantly.  Cook exactly 1 minute NO LONGER.  Remove from heat, cool, stir and frost.  Let frosting harden before cutting brownies.

SERVINGS:  12

4. Midnight Express

1 1/2 oz dark rum
1/2 oz Cointreau
3/4 oz lime juice
splash of sour mix

Shake all ingredients with ice and pour over ice into an old-fashioned
glass.

Mushroom Turkey Burgers

Prep Time: 7 min
Total Time: 27 min
Serves: 4

Ingredients:
1 pkg. (17oz) frozen LOUIS RICH PURE Ground Turkey,thawed
1 Tbsp. chopped fresh parsley
1 Tbsp. Worcestershire sauce
1 tsp. onion salt
1 Tbsp. butter or margarine
1 cup sliced fresh mushrooms
4 hamburger buns, split

1. Mix turkey, parsley, Worcestershire sauce and onion salt in large bowl. Shape into 4 (4-inch) patties; set aside.

2. Melt butter in large skillet on medium heat. Add mushrooms; cook and stir 2 to 3 minutes or until tender. Remove mushrooms from skillet; cover to keep warm. Add patties to skillet; cook on medium heat 12 to 14 minutes or until cooked through, turning occasionally. Serve in buns; top with mushrooms.

Kraft Kitchen Quick Tips;
Try this recipe with white button mushrooms. Wipe them with a damp paper towel or rinse under cool water and dry thoroughly. Never soak mushrooms in water, they'll become mushy.
