1.             Appetizers, Salads and Breads:
                   Cheese Bread

              from Little Rock Cooks...
     Recipes Handed Down from Generation to Generation
           ___________________________________

INGREDIENTS:

About 7 cups sifted flour
2 tablespoons sugar
1 tablespoon salt
2 packages dry yeast
2-1/4 cups milk
3 tablespoons margarine
1 pound extra sharp Cheddar cheese, grated
2 eggs
1 tablespoon caraway seeds (optional)

TO PREPARE:

In large bowl combine 2-1/2 cups flour, sugar, salt and
yeast.  Combine milk and margarine in saucepan.  Bring to a
boil.  Cool to lukewarm.

Add to dry ingredients; beat until blended (may be done in
mixer).  Add 1 cup flour, beat; add cheese and eggs. 
Gradually add remaining flour; knead until smooth and
elastic.

Put in greased bowl, turning to grease top.  Cover.  Let
rise in warm place until double in bulk.

Punch dough down, divide into loaves.  Place in well-
greased pans (2 large, 3 medium or 4 small).  Cover.  Let
rise in warm place until double in bulk.

Bake at 375 degrees for 35 to 45 minutes, depending on size
of pans.  Remove from pans at once.  Cool on wire rack.

YIELD: 2 large loaves

2. Cheesy Enchiladas
Prep Time: 15 mins.
Total Time: 45 mins.
Serves: 6


To get dinner on the table more quickly try using your microwave. Assemble enchiladas as directed in microwave-safe dish. Microwave on HIGH 12 to 14 minutes or until thoroughly heated, turning dish after 6 minutes.


Ingredients

1 pkg.(8 oz.) PHILADELPHIA Fat Free Cream Cheese, softened

1 pkg.(8 oz.) KRAFT FREE Shredded Non-Fat Cheddar Cheese, divided

1/4 cup sliced green onions

6 flour tortillas (6 inch)

1 cup TACO BELL HOME ORIGINALS Thick 'N Chunky Salsa

Preparation

1.BEAT cream cheese with electric mixer on medium speed until smooth. Add 1 cup of the cheddar cheese and onions; mix until blended.

2.SPREAD 1/4 cup cheese mixture down center of each tortilla; roll up. Place, seam-side down, in 11x7-inch baking dish. Pour salsa over tortillas. Sprinkle with remaining cheddar cheese; cover.

3.BAKE at 350F for 20 to 25 minutes or until thoroughly heated.

3.                Pasta, Seafood, Eggs and Grains:
               Chicken - Green Noodle Casserole

           From the Houston Junior League Cookbook
             ___________________________________ 

INGREDIENTS:

1 large stewing chicken (about 5 pounds)
1 package (8-ounces) green spinach noodles
1/4 cup butter
1/4 cup flour
1 cup milk
1 cup chicken stock
1 pint sour cream
1/4 to 1/2 cup lemon juice
1 can (6-ounce) mushroom pieces and juice
2 teaspoons Lawry's seasoned salt
1 teaspoon Accent
1/2 teaspoon nutmeg
1/2 teaspoon cayenne
1 teaspoon paprika
1 teaspoon salt
1 teaspoon pepper
1 Tablespoon parsley flakes
1/2 cup toasted bread crumbs
  Parmesan cheese

TO PREPARE:

Cook chicken in seasoned water; remove chicken and save
stock (to use in making cream sauce).  Cook noodles; drain. 
Melt butter in a large saucepan.  Stir in flour.  Add milk
and chicken stock.  Cook over low heat, stirring constantly
until sauce thickens.  To the cream sauce add sour cream,
lemon juice, mushrooms, seasoned salt, Accent, nutmeg,
cayenne, paprika, salt, pepper and parsley flakes.  Mix
well.  Cut chicken into large bite-sized pieces (measure 4
cups).  Butter a 3-quart casserole.  Place drained noodles
in casserole.  Add layer of chicken.  Pour some sauce over
chicken.  Sprinkle with bread crumbs and Parmesan cheese. 
Repeat layers, ending with cheese on top.  Heat in 350
degree oven until bubbly, about 25 minutes.

SERVINGS:  8 - 10

4. Cider Baked Apples

Ingredients:
6 large apples (any apple of choice)
1 Tbsp. red hot candies
1 Tbsp. maple syrup
2-1/2 cups  apple cider
Freshly grated nutmeg
 
Directions:
Remove cores of apples with an apple corer. (A potato peeler works ok also.) Cut out V-shape at top of apple. Insert into the V-shape opening:  red hot candies and maple syrup. Place the apples in a 8x8 baking pan and pour apple cider around them. Bake at 350-degrees F., basting occasionally with the hot cider until apples are tender, but not mushy. Grate nutmeg on apples. Remove apples from cider and place on serving dish. Serve hot or some like these refrigerated first and topped with a dollop of whipped cream or ice cream.

5. Creamy Valentine's Day Peppermint Shake

2 c Milk
1/2 c Peppermint candy, crushed
1 1/2 pt Vanilla ice cream
Preparation :
Place milk and peppermint candy in electric blender; mix well. Add ice cream and process until smooth and creamy. Makes six 6-oz servings.
