1. Ham and Asparagus Brunch Bake

Prepare something for the whole family
From, "At Your Service...Southern Recipes, Places and Traditions," published in cooperation with your Daily Inbox Newsletter.

INGREDIENTS:

2 (6-ounce) packages original recipe long grain and wild rice
1 pound asparagus, cut into pieces
2 cups chopped ham
1 cup chopped red bell pepper
1/4 cup finely chopped red onion
1 cup shredded sharp Cheddar cheese

TO PREPARE:

Prepare the rice in a saucepan using the package directions, adding the asparagus during the last 5 minutes of cooking.  Remove the saucepan from the heat.  Add the ham, bell pepper and onion and mix well.  Spoon into a greased 7-1/2x11-inch baking dish.  Sprinkle with the cheese.  Bake at 350 degrees for 25 to 30 minutes or until heated through.

SERVES:  6

2. Ham Loaf Recipe

Ideal for just about any large gathering

INGREDIENTS:

2 eggs, beaten
1 pound ground fresh pork
1 pound ground ham
1 cup bread crumbs
Milk
1/4 cup vinegar
1/2 cup brown sugar
6 tablespoons currant jelly

TO PREPARE:

Mix well-beaten eggs, pork and ham.  Soften bread crumbs in small amount of milk; add to meat mixture and mix well.  Form into loaf.  Make basting sauce by stirring vinegar, brown sugar and jelly over low heat until jelly melts; add water for desired consistency.  Bake ham loaf in 350 degree oven for 2 hours, basting frequently.

SERVES: 6 - 8

3. Hash Brown Quiche Recipe

Packed full of goodness and fresh ingredients

INGREDIENTS:

24 ounces frozen uncooked shredded hash browns, thawed
5-1/3 tablespoons unsalted butter, melted
2 large eggs, beaten
1/2 cup half and half
1/2 teaspoon seasoned salt
4 ounces Jalapeno Jack cheese, shredded (1 cup)
4 ounces Swiss cheese, shredded (1 cup)
1 cup diced ham
fresh parsley


TO PREPARE:

Preheat oven to 425 degrees.  Press hash browns into quiche pan.  Blot with paper towel to remove all moisture.  Brush with melted butter.  Bake 25 minutes.  Remove from oven.  Reduce oven to 350 degrees.  Combine eggs, half and half, and salt.  Place cheeses and ham in hash brown shell.  Pour egg mixture over top.  Bake 40 to 50 minutes.  Garnish with parsley.

SERVES: 6 - 10

4. Hershey Cake

Make your Valentine's Day a little sweeter

INGREDIENTS:

8 (1.26 ounce) plain Hershey bars
1 cup margarine or butter
2 cups sugar
4 eggs
2-1/2 cups flour
1/4 teaspoon salt
1/2 teaspoon soda
1 cup buttermilk
1 (5-1/2 ounce) can Hershey Chocolate Syrup
2 teaspoons vanilla
2-1/2 cups chopped nuts

TO PREPARE:

Melt Hershey bars in a double boiler.  Cream margarine and sugar.  Add melted Hershey bars.  Add eggs one at a time, beating well after each addition.  Sift together flour, salt and soda and add alternately with buttermilk.  Add chocolate syrup, vanilla and nuts.  Bake in a greased and floured tube pan at 325 degrees for 1-1/2 hours.

5. Hush Puppies

Yield: 3 Servings           
    
            Sandy Brinks [CraftE note: I believe this is the author of the recipe]    
      1 c  Corn meal; plain
    1/2 c  Flour; plain
      1 ts Baking powder
      1 ts Salt
      1 ts Sugar
    1/2 c  Onion; chopped
      1 cn Cream style corn (16 oz.)
           Milk, if needed


Mix dry ingredients. Add onion and corn. Mix well. If more liquid is needed to make desired consistency, add a little sweet milk. Drop heaping teaspoons into deep hot fat. Fry until golden brown. (If cooked in deep fat, they float to the top when done.) Yields 10 to 12. From Tea Time at the Masters, Jr. League, Charleston, SC. This are very good and light.
