1. Macaroni Mousse

Add a little bit of sharp cheddar cheese to give it an edge

1-1/2 cups elbow macaroni
2-1/2 cups scalded milk
1-1/2 cups soft bread crumbs
5 eggs, beaten
8 Tablespoons melted butter
1-1/2 Tablespoons chopped pimiento
1-1/2 Tablespoons chopped parsley
1-1/2 to 3 Tablespoons chopped onion
2-1/4 cups grated sharp cheddar cheese


Preheat oven to 350 degrees.  Cook macaroni in two quarts boiling, salted water.  Drain.  Cover with cold water and drain again.  Pour scalded milk over bread crumbs.  Mix eggs, butter, pimiento, parsley, onion, and cheese.  Combine all ingredients and pour into a buttered, two-quart casserole.  Bake for 50 minutes.  Remove from oven, let sit for ten minutes, loosen edges and turn mousse out onto a platter.

SERVINGS:  6 - 8
2. Maple-Topped Apple Cranberry Crisp

1 cup rolled oats
3/4 cup unbleached all-purpose flour
3/4 cup dark brown sugar, firmly packed
1 teaspoon cinnamon
1/2 teaspoon salt
1/4 teaspoon nutmeg
1/2 cup cold unsalted butter, cut into pieces
3/4 cup walnuts chopped

INGREDIENTS for Filling:

8 large tart green apples, peeled, cored and cut into
1/4-inch slices
1-1/3 cups cranberries
1/3 cup sugar
2 Tablespoons fresh lemon juice

INGREDIENTS for Maple Whipped Cream

1 cup whipping cream
1 Tablespoon pure maple syrup


1.  Preheat oven to 375 degrees.  Butter a 9 x 13-inch pan.
2.  Mix first 6 ingredients in a small bowl.  Cut in butter until mixture resembles coarse meal.  Stir in walnuts. Cover and refrigerate.  (Mixture may be prepared 1 day ahead).
3.  Combine apples, cranberries, sugar and lemon juice in a large bowl; toss gently.  Transfer fruit to prepared dish.  Sprinkle refrigerated topping over fruit.
4.  Cover with foil and bake 20 minutes.  Uncover and continue baking until apples are tender and topping browns, about 40 minutes.  Cool slightly.
5.  Prepare Maple Whipped Cream: In a large bowl, whip cream to soft peaks.  Beat in 1 Tablespoon of syrup. Taste, adding more syrup if sweeter flavor is desired. Continue whipping to firm peaks.
6.  Spoon crisp into bowls.  Top each with a dollop of Maple Whipped Cream and serve.

SERVES:  8 - 10
3. Mascarpone Recipe

So creamy it's hard to resist

2 (8-ounce) packages cream cheese, softened to room temperature
1/2 cup ricotta cheese
2 tablespoons sour cream
2 tablespoons heavy cream
1 tablespoon sugar
1 tablespoon fresh lemon juice
Grated lemon zest, to garnish


Blend all ingredients except lemon zest in a food processor until thoroughly mixed and very smooth, stopping machine once or twice to scrape down sides.  Place in a covered container and refrigerate.  (Cheese will keep for 6 to 7 days.)  Sprinkle with lemon zest before serving.

YIELDS: About 2-3/4 cups

4. Miami Sunset

1 oz bourbon
1/2 oz Triple Sec
orange juice to fill
dash of Grenadine

Build over ice in a highball glass

5. Mushroom Onion Rice

Easy, flavorful rice side dish using canned mushrooms and French onion soup.
Prep Time: 5 minutes
Cook Time: 30 minutes
Yield: 4 servings

2 tablespoons margarine
1 cup long-grain white rice
1 (10.5 ounce) can condensed French onion soup
1 (4 ounce) can canned mushrooms, drained
2 cups water

Melt margarine in a saucepan over medium heat. Stir in rice and cook just until

lightly browned. Mix in soup, mushrooms and water. Bring to a boil. Reduce

heat to low, cover and simmer 25 minutes.
