1. Y'all Come Casserole
Yield: 15 Servings
Categories: Casseroles, Ground, Beef)

Ingredients:

      2 lb Ground beef, browned
      1    Onion, chopped and fried lightly
      1 pk (large) noodles, wide, cooked
     15 oz Peas, canned with juice (1 can)
     15 oz Corn, canned with juice (1 can)
      1 sm Can pimento
      1 md Can tomatoes
    1/2    Green pepper, diced or chopped
      1 cn (#2) tamales, cut in 1/2" pieces (sometimes I put in more)
    1/2 lb Nippy cheese (Colby is what I usually use), grated
      1 cn Whole pitted ripe olives (optional), sliced
      2 cn Cream of mushroom soup
      1 pt Half and half
      1 ts Paprika
      2 ts Chili powder
      2 ts Seasoning salt
           Salt & Pepper to taste
           Potato chips or corn flakes (I like the potato chips)


  Place everything in large baking dish (I use a roasting pan) and blend well. Cover with potato chips or corn flakes (I usually crush potato chips with hands when placing on top). Bake slowly at 325 degrees for approximately one hour or bubbly.

2. Yankee Apple Cake

Yield: 12 Servings
Categories: Cakes, Fruits

Ingredients:

      2 c  Sugar
      2 c  Flour
      4    Eggs
      3 ts Baking powder
    1/2 c  Oil
      3 ts Vanilla
    1/3 c  Orange juice
    1/4 ts Salt
          
APPLE MIXTURE:
      4 lg Apples, peeled cored and Sliced
      4 ts Sugar
      1 ts Cinnamon

Beat everything but Apple Mixture with mixer for 10 minutes. Grease 2 loaf pans or 1 tube pan and make several layers of batter and apples, beginning   with batter and ending with apples. Bake at 350^ for 1 hour or until tester is dry when inserted in center.  A tube pan will take 10-15 minutes longer.   (If glass pans are used, turn oven to 325^ after first 10 minutes)

3. Zesty Turkey and Rice
Yield: 1 Servings
Categories: Turkey, Rice, Casseroles

Ingredients:

  1 2/3 c  Chicken stock
      1 ts Dried basil leaves; crushed
    1/4 ts Garlic powder
    1/4 ts Hot pepper sauce
      1 lb Canned stewed tomatoes
    3/4 c  Uncooked long grain rice
      1 c  Frozen peas
      2 c  Cooked turkey or chicken; cubed

  1. Combine first 5 ingredients in a saucepan over medium high heat. Bring to a boil. Stir in rice. Reduce heat to low.
 
  2. Cover and cook 20 minutes. Stir in peas and turkey.
 
  3. Cover and cook 5 minutes more or until rice is done and most of liquid is absorbed.
 
  Per serving: calories 332, fat 4.4g, 12% calories from fat, cholesterol 53mg, protein 28.1g, carbohydrates 42.5g, fiber 2.3g, sodium 608mg.

4. Zippy Carrots Recipe

Give the veggie you've had for years a snappy new flavor 


From, "California Sizzles...Easy and Distinctive Recipes for a Vibrant Lifestyle," published in cooperation with your Daily InBox Newsletter.

INGREDIENTS:

1 pound baby carrots, peeled (fresh or frozen)
2 Tablespoons butter or margarine, melted
1/4 cup brown sugar
2 Tablespoons dry mustard
1/4 teaspoon salt

TO PREPARE:

1.  Steam carrots until crisp, yet tender, and place in a medium saucepan.
2.  Combine the remaining ingredients in a small bowl and add to carrots.
3.  Cook over medium heat for 5-7 minutes.
4.  Serve warm.

SERVES:  6 - 8

5. Zydeco Green Beans
Yield: 1 Servings
Categories: Relishes, Appetizers, Vegetables, Hot, Tabasco

Ingredients:

  2 1/4 c  Water
    3/4 c  White Vinegar
      2 tb Sugar
      1 tb Crushed Mustard Seeds
      4 md Garlic Cloves, Thinly Sliced
      3    Bay Leaves
  1 1/2 ts Salt
  1 1/2 ts Tabasco Pepper Sauce
      1 lb Trimmed Green Beans


  Zydeco Green Beans is actually a redundancy.  The exuberant music of
  Louisiana's black French-speaking Creoles is called zydeco, an idiomatic
  phonetic version of les haricots, French for snap beans. Serve these green
  beans as a relish, or as "stirrers" for Bloody Marys.
  ~------------------------------------------------------ ~-----------------
  In a large saucepan, stir together the water, vinegar, sugar, mustard
  seeds, garlic, bay leaves, salt and Tabasco sauce. Bring to a boil, reduce
  the heat, cover, and simmer for 5 minutes.  Add the beans. Cover and simmer
  for 10 minutes, until tender-crisp. Arrange the beans in a shallow dish and
  cover them completely with the vinegar mixture.  Cover and refrigerate
  overnight.  Serve cold.
