1. Pasta, Seafood and Eggs:
Barbecued Shrimp

From the Houston Junior League Cookbook
           ___________________________________

INGREDIENTS:

2 pounds raw shrimp
1 cup salad oil
2 cloves garlic, crushed
2 tablespoons chili sauce
2 tablespoons Worcestershire sauce
1 teaspoon prepared mustard
1 teaspoon dry mustard
2 tablespoons chopped parsley
1 teaspoon salt
Juice of 2 lemons
1 jalapeno pepper, seeded and chopped

TO PREPARE:

Shell and devein shrimp.  Combine all other ingredients to
make sauce.  Marinate shrimp in sauce for 2 hours.  Broil,
5 to 10 minutes on each side, basting several times with
sauce.

SERVES: 4 as a main course or 8-10 as hors d'oeuvres

2. BEEF AND POTATO CASSEROLE

Serves 8.

2 lb potatoes
1/2 cup butter
1/2 cup cream
1 egg, beaten
1/4 teaspoon nutmeg
3 teaspoons salt
3 onions, chopped
2 lb stewing beef, cut into 1/2-inch cubes
1/2 cup beef stock
1/2 teaspoon pepper
1 bay leaf
1/4 cup dry breadcrumbs

Peel potatoes; cook until tender. Drain and mash. Beat in 3
tablespoons butter, cream, egg, nutmeg, and 1-1/2 teaspoons salt until
very light and fluffy.

Melt remaining butter in a large saucepan. Saute onions 5 minutes. Add
meat; cook over high heat, stirring constantly, until browned. Mix in
stock, pepper, bay leaf, and remaining salt. Cook over low heat 20
minutes. Discard bay leaf.

Preheat oven to 400 degrees F. In a greased casserole, arrange as many
layers as possible of potatoes and meat mixture, starting and ending
with potatoes.

Sprinkle with breadcrumbs. Dot with a little butter. Bake 25 minutes,
until browned.

Per serving: 596 cal, 39 g fat, 184 mg cholesterol, 23 g
carbohydrates, 2 g fiber, 36 g protein, 1425 mg sodium

3. Desserts:
Bittersweet Ravioli
   
from Above & Beyond Parsley...Food for the Senses
                ___________________________________
   
    INGREDIENTS:
   
    2 ounces bittersweet chocolate
    1 cup (2 sticks) butter or margarine, softened
    1/2 cup sugar
    1 egg
    1-1/4 teaspoons chocolate extract
    1/4 teaspoon baking soda
    Dash of salt
    2-1/2 cups flour
    1 to 1-1/4 cups seedless raspberry jam
    Powdered sugar, to garnish
   
    TO PREPARE:
   
    Melt chocolate in the top of a double boiler or in a microwave
    at medium power.  Remove from heat and cool.  In a large bowl,
    cream butter and sugar until blended. Add egg, chocolate
    extract, baking soda, salt and melted chocolate.  Beat until
    light.  Blend in flour to make a stiff dough.  Divide dough in
    half, cover and refrigerate until firm.
   
    Preheat oven to 350 degrees.  Lightly grease baking sheets. 
    Roll out 1/2 the dough to 1/8-inch thick between 2 sheets of
    waxed paper.  Repeat with other 1/2 of dough.  If dough becomes
    too soft, refrigerate until firm again.
   
    Cut dough into 1-1/2 inch squares.  Place 1/2 the squares, 2
    inches apart, on prepared baking sheets.  Spoon about 1/2
    teaspoon jam into the center of each square and top with another
    square.  Press edges of squares together with a fork to seal. 
    Bake for 10 minutes or just until edges are browned.  Remove and
    place on wire racks to cool.  Dust lightly with powdered sugar
    when completely cooled.

4.  Appetizers, Salads and Breads:
Black-Eyed Pea Salad

from At Your Service Southern Recipes, Places and Traditions
           ___________________________________

INGREDIENTS:

2 (15-ounce) cans black-eyed peas, rinsed, drained
1 medium onion, chopped
1 garlic clove, pressed
2 tomatoes, chopped
3 ribs celery, chopped
1/2 cup sliced mushrooms
1 (4-ounce) can sliced black olives
1 (8-ounce) bottle zesty Italian salad dressing
1-1/2 teaspoons oregano
Salt and pepper to taste

TO PREPARE:

Combine the black-eyed peas, onion, garlic, tomatoes,
celery, mushrooms and olives in a large bowl and mix well. 
Add the Italian salad dressing, oregano, salt and pepper
and toss to coat.  Marinate, covered, in the refrigerator
for 8 to 12 hours.  Drain before serving.

SERVES: 8 to 10

5. Broccoli Ham Bake

2 cups chopped, cooked ham
1 (10 oz) pkg.-frozen broccoli
1 cup cooked rice
1 can cream of celery or mushroom soup
1 cup shredded cheddar cheese
1 small onion, chopped (optional)
1/2-cup sour cream
1/2 cup buttered breadcrumbs
Salt and pepper to taste

Combine all ingredients except croutons and place in a casserole dish.
Spread breadcrumbs. Bake 1 hour at 325 degrees or until browned and
bubbly.
