1. Ceil's Cucumber Slices

8 C 
PREP TIME  30 Min 
COOK TIME  20 Min 
READY IN  50 Min

6 C sliced cucumber
1 C sliced onion
1 C sliced green bell pepper
2 T salt
1 T celery seed
1 C distilled white vinegar
1 1/2 C sugar
In a mixing bowl, combine the cucumber slices, onions, and green peppers.
In a saucepan over med heat, combine the salt, celery seed, vinegar and
sugar. Bring the mixture to a boil. Allow the mixture to cool for 10-15
min. Combine the mixture in the mixing bowl with the mixture in the
saucepan. Pack into sterile jars and refrigerate for 24 hr.

2. Cheesy Potatoes on the Grill

(Serves 4)
Ingredients:
4 slices Bacon
3 large Baking Potatoes
1 large Onion, sliced
1 cup processed Cheese, cubed
1/2 tsp. Salt
1/4 tsp. Black Pepper
1/2 tsp. dried Parsley
2 Tbsp. Butter or Margarine
1 Tbsp. Bacon Drippings

Directions:
Fry the bacon in a heavy skillet over medium-high heat until crisp. Drain the bacon on paper toweling and crumble when cool enough to handle; set aside.
Meanwhile, peel and slice the potatoes placing them on a 9x13" double-layer of aluminum foil as you go.
Separate the onion slices into rings and layer them over the potato slices. Add the crumbled bacon bits, cheese, salt, pepper and parsley. Dot the potatoes with butter or margarine and drizzle the bacon fat over the top of the mixture. Wrap the foil loosely around the potatoes, making sure the ends are well sealed.
Cook about 4-inches from the hot coals on the grill for about 1 hour, or until tender. Turn the package often to keep the spuds from burning.
Serve warm from the grill.

3. CHICKEN AFRITADA
(This is a chicken dish but you can also use pork or beef)

Ingredients:
1 whole chicken (cut into serving pieces)
4 - 6 pieces potatoes (peeled and cut into four)
3/4 cup tomato sauce
1 cup water
1  red or green bell pepper
1/2 cup onions (chopped)
1-2 cloves Garlic (crushed)
1/4 cup bread crumbs
1-1/2 tsp. salt
1/4 tsp. ground black pepper
Cooking oil

Directions:
Heat oil in a pot.  Add chicken and cook until light brown, remove
from pot and set aside. 
With the remaining oil saute garlic and onions then add the tomato sauce and water.  Let it boil, put the chicken back to the pot.  Cook until the meat is tender. 
Add the potatoes and bell pepper.  Simmer until the potatoes are cooked.  Season with salt and pepper (add more salt or pepper, depending on your family's taste).  Thicken sauce with bread crumbs.  Serve with rice.
Serves 4-6

4. Chilaly

This quick recipe could be described as a full-flavored
cheese toast.

Serves 4

1 tablespoon Oil
2 Tablespoons Green pepper, minced
2 Tablespoons Onion, minced
1/2 cup Tomatoes, diced
Salt and pepper to taste
1 1/2 cup Mozzarella, grated
1 ounce Milk
1 Egg, beaten
4 pieces White toast

Heat the oil in a heavy skillet. Add the peppers and
onions. Cook until just soft. Add the tomatoes and cook for
3 minutes longer. Check the seasonings. Add the cheese and
stir until melted. Mix together the egg and milk. Add to
the mixture. Stir until a thick sauce forms (about 1
minute). Pour over the toast. Serve warm.

5.                           Desserts:
                    Chocolate Crunch Pie

                    from At Your Service
           Southern Recipes, Places and Traditions
             ___________________________________

INGREDIENTS:

1/3 cup margarine
1 cup (6-ounces) semisweet chocolate chips
2-1/2 cups crisp rice cereal
1 pint ice cream
  Ice cream topping

TO PREPARE:

Melt the margarine and chocolate chips in a heavy saucepan
over low heat.  Remove from the heat.  Stir in the cereal
until completely coated.  Press over the bottom and up the
side of a buttered 10-inch deep-dish pie plate.  Chill,
covered, for 30 minutes.  Fill with your favorite ice
cream.  Drizzle with your favorite ice cream toppings.

Note:  Try such combinations as chocolate chip ice cream
       drizzled with creme de menthe and chocolate fudge
       sauce.  Or, try butter pecan ice cream drizzled
       with caramel sauce and chocolate syrup.

SERVES:  8
