1.                 Appetizers, Salads and Breads:
                      Favorite Pancakes

           From the Houston Junior League Cookbook
           ___________________________________

INGREDIENTS:

3 eggs, separated
1-2/3 cups buttermilk
1 teaspoon soda
1-1/4 cups white flour
1/4 cup whole wheat (or white) flour
1 Tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon salt
3 Tablespoons butter, melted

TO PREPARE:

Beat egg yolks well.  Add buttermilk and beat thoroughly. 
Sift dry ingredients together and stir into buttermilk
mixture.  Add butter.  Fold in stiffly beaten egg whites. 
Let stand 5 or 10 minutes before cooking.

YIELDS:  16 pancakes, 4-inches in diameter

2. Fiesta Tortilla Quiche

Add a spicy twist to the usual quiche

From, "California Sizzles...Easy and Distinctive Recipes for a Vibrant Lifestyle," published in cooperation with your Daily Inbox Newsletter.

INGREDIENTS:

12 medium flour tortillas
18 eggs
9 cups grated Monterey Jack cheese
1 cup evaporated milk
1/3 cup dry onion
4 ounces diced green chiles
1/4 cup diced red bell pepper
1/2 teaspoon seasoned salt
1/4 teaspoon garlic powder
1/8 teaspoon pepper
Garnish with salsa, sour cream and chopped olives

TO PREPARE:

1.  Preheat oven to 325 degrees.
2.  Line 12 4-inch pie pans with the 12 tortillas, folding to fit.
3.  In a large bowl, mix eggs, cheese, evaporated milk, onion, chiles, red pepper, seasoned salt, garlic powder and pepper.
4.  Fill each pan with 3/4 cup of the egg mixture.
5.  Bake 3040 minutes until inserted knife comes out clean.
6.  Serve with salsa, sour cream and chopped olives.

SERVES:  12

3. First Prize Beans

From the, "Houston Junior League Cookbook," published in cooperation with your Daily Inbox Newsletter.

INGREDIENTS:

2 pounds dried navy beans
10 whole cloves
1 onion, peeled
1 bay leaf
1 Tablespoon salt
1 pound lean salt pork
1 pound smoked ham or ham hocks
3 onions, chopped
3 cloves garlic, crushed
1 Tablespoon dry mustard
1/2 cup Jamaican rum

TO PREPARE:

Cover beans with water and soak overnight.  Drain.  Put beans in a large pot and add fresh water to a depth of 3 inches above the beans.  Stick cloves into peeled onion and add to bean pot with bay leaf and salt; bring to a boil.  Boil rapidly 5 minutes; skim foam from top of beans.  Reduce heat and simmer until beans are tender but not mushy.  Drain and reserve liquid.

Simmer salt pork in water for 25 minutes.  Remove pork and cut into small pieces.  Cut ham into strips.  Combine chopped onion and garlic.  Blend dry mustard with enough water to dissolve mustard.  Pour a layer of beans in a large baking dish or casserole.  Add a layer of salt pork, ham, and onion-garlic mixture.  Repeat layers ending with beans.  Pour dissolved mustard over all and add enough bean liquid to cover.  Bake in 350 degree oven.  Add more bean liquid if needed during baking.  At the end of 1-1/2 hours, pour rum over beans and bake 45 minutes longer (2 hours, 15 minutes in all).

4. Fudge Pie


Start the weekend off in a sweet way

From, "To Market, To Market...A Collection of Kentucky Recipes," published in cooperation with your Daily InBox newsletter.

INGREDIENTS:

1 unbaked pie shell (9-inch)
1/2 cup margarine
3 ounces semi-sweet chocolate
3 eggs
3 tablespoons flour
1 cup sugar
1 teaspoon vanilla
1 cup pecans, chopped

TO PREPARE:

1. Melt margarine and chocolate in double boiler; pour into mixing bowl.
2. Add eggs, flour, sugar, and vanilla; beat until smooth.
3. Mix in pecans; pour into pie shell and bake until firm when shaken.

Temperature: 350 degrees
Baking Time: 35 to 40 minutes

HINT:  Let pie set for 2 hours before serving.

YIELD: 1 pie (9-inch)

5. Fusilli con Pomodori and Mozzarella

Bring a delicious classic to the table

INGREDIENTS:

6 to 8 ripe tomatoes, peeled and chopped
1/2 pound Mozzarella cheese, coarsely grated
1/4 cup chopped fresh basil, or
1 Tablespoon dried basil
5 Tablespoons olive oil
2 garlic cloves, minced
1 Tablespoon chopped fresh parsley
Salt to taste
Freshly ground pepper to taste
16 ounces pasta

TO PREPARE:

In a large bowl, combine all ingredients except the pasta.  Let stand at room temperature 1 hour.  Cook pasta al dente.  Drain.  Toss pasta with tomato mixture until cheese has melted.  Serve immediately.
