1. Quacker Jacks

Categories: Appetizers

Yield: 6 Servings

1 c Peanuts
1/2 lb Butter      
5 c  Popped Corn,
2 c  Brown Sugar
1/2 c Light Corn Syrup,
1/2 ts Baking Soda.

Mix nuts with corn. Melt butter and sugar and syrup. When melted add baking powder then pour over corn and mix.

2. Quaker Bonnet Mousse Glace


Sprinkle candy bar bits on top

INGREDIENTS:

4 cups whipping cream
1 cup baking cocoa
3/4 cup confectioners' sugar
2 Tablespoons dark rum
1 Heath bar, finely ground

TO PREPARE:

Chill a mixer bowl and beaters. Combine the whipping cream, baking cocoa, confectioners' sugar and rum in the chilled mixer bowl. Beat at low speed with chilled beaters.

Beat at high speed until stiff peaks form, scraping the bowl occasionally; do not over beat.  Spoon into a serving bowl; sprinkle with the candy bar.

May serve immediately or freeze in a round dish and cut into wedges.

3. Quaker Multigrain

Yield: 1 Loaf

-----------------1 1/2 LB LOAF----------------------

1 c Quaker multigrain cereal
1 1/4 c Buttermilk *      
3 tb Molasses
2 c  Bread flour Plus 2 Tbl
1/2 c Whole wheat flour
1 1/2 ts Salt
1 1/2 tb Butter or margarine
3 1/2 tb Gluten
3 ts Red Star Active Dry Yeast

-------------------1 LB LOAF------------------------

2/3 c Quaker Multigrain cereal
3/4 c Buttermilk **
2 tb Molasses
1 1/3 c Bread flour
1/3 c Whole wheat flour      
1 ts Salt
1 tb Butter or margarine
2 tb Gluten
2 ts Red Star Active Dry Yeast

for Welbilt/DAK and Zojirushi machines, add 3 tablespoons more buttermilk. ** for Welbilt machine, add 1 tablespoon more buttermilk.

Have ingredients at room temperature (For my Hitachi I will microwave liquids for 1 minute)

Place all ingredients in bread pan according to manufacturers instructions. Use Light setting.

4. Quebec Apple Dumplings

Yield: 1 Servings

1 Pie dough (double batch)
1/4 c Cheddar cheese-grated     
12    Apples; medium- peeled & cored
1/2 c Mincemeat
1/4 c Rum
Butter
3/4 c Sugar
1/4 c Sugar; Brown
1/4 c Cream
Lemon rind; 1/2 lemon

Preheat oven to 400F. Make enough pie enough to roll into 12 6"x6" squares (about a double batch.) Sprinkle each square with 1 tsp grated cheddar. Peel and core apples and place one on each square. Fill the centre of each apple with 2 tsp (or 1 heaping tsp) of mincemeat, 1 tsp of rum, a dot of butter and 1 Tablespoon sugar. Bring diagonally opposite corners of dough over the apple to form ears at the top. Cover the 'ears' with aluminum foil. Mix the brown sugar, cream and grated lemon rind. Brush the dumplings with this mixture and bake 35 to 45 minutes in 400F oven. Remove foil, brush ears with cream mixture and return to oven till 'ears' are brown. Serve warm to plain cream or sweetened cream, flavoured with rum.

5. Quick And Easy Strawberry Ice Cream

Yield: 6 servings

500 g Ripe strawberries
1 tb Lemon juice
200 ml Double cream
150 ml Mild natural yoghurt
200 g Heather honey
50 ml Red wine

Place strawberries, honey, lemon juice, red wine into a food processor. Pour contents into a fine sieve and pass through to remove the seeds.

Lightly whip the double cream then add to the yoghurt.

Add the strawberry mix to the cream and fold in.

Place into a sterile, freezer-proof container and freeze.
