1. Walnut Chicken

Bite size chicken pieces with a walnut coating.

Cook Time: 15 minutes                             
Difficulty: EASY

Ingredients                                             
1   lb   boneless skinless chicken breasts                                                                       
1  tsp cooking sherry                                                                       
1 egg whites                                                                       
2  tsp peanut oil                                                                       
1/8 tsp sesame oil, toasted (optional)                       
1/3  cup  ground walnuts                                                                       
1 cooking spray                                                                       
                   
   
Directions                               
1  Preheat oven to 350°F.
2  Lightly coat baking sheet with cooking spray.
3  Cut chicken into bite sized pieces, sprinkle with sherry. Set aside.
4  Place walnuts in small shallow dish.
5  In small bowl, beat egg white and oils until frothy.
6  Fold chicken pieces into egg mixture, remove and roll individual pieces in ground walnuts.
7  Arrange chicken pieces on baking sheet, cook 10-15 minutes, or until walnuts are lightly browned and chicken juices run clear.

2. Warm Orchard Wassail

1 64 ounce bottle Ocean Spray 100% Premium Juice Blend of Cranberry and Granny Smith Apples
1/4 cup sugar
2 - 3 inch cinnamon sticks
1 teaspoon whole allspice
Garnish: orange slices and clover


Mix all ingredients (except garnish) into saucepan
Bring to a boil, then simmer 5-10 minutes.
Strain heated punch into punch bowl.
Garnish with orange slices and clover.

3. White Bean Salad

Ingredients

1 Tbsp. (15mL) Mrs. Dash® Extra Spicy Seasoning Blend
1 medium yellow pepper, seeded
1 Pt. (500mL) cherry tomatoes
15.5 Oz. (434mL) can cannellini (white) beans
2 Tbsp. (30mL) olive oil, divided
1/4 cup (60mL) Italian parsley, minced
vegetable oil spray Directions 1. Preheat oven to 375°F (190°C).
2. Drain and rinse the cannellini beans.
3. Spray roasting pan with vegetable oil spray.
4. Cut peppers into thin strips and combine with tomatoes, Mrs. Dash® Extra Spicy, and 1 Tbsp. (15mL) olive oil.
5. Roast vegetables for 25 minutes, remove from heat and place in bowl.
6. Add beans and remaining olive oil.
7. Toss and serve at room temperature. Nutrition Facts

4. White Zin Raspberry Fooler


4 ounces alcohol-free white zinfandel (see cook's notes)
1/2 ounce pureed and strained raspberries (see cook's notes)
2-1/2 ounces lemon-lime soda
1/2 ounce grenadine (see cook's notes)
1 teaspoon sugar
Cracked ice.



Put all ingredients in tall glass.
Stir to combine.
Cook's notes: Most "alcohol-free" wine contains less that 1/2 of 1 percent alcohol by volume.  It is often labels "de-alcoholized."  To make raspberry puree, process frozen (thawed) or fresh raspberries until pureed, then strain to remove seeds.  Grenadine is pomegranate syrup.  Make sure you use one that doesn't contain alcohol.

Cook Time: 10 minutes                             
Difficulty: EASY                             
                            
Ingredients                                             
2  cup Raspberries, fresh  or frozen (or other berries of your choice)                       
1 1/2  cup cold water divided                                    
1/2 cup SPLENDA® No Calorie Sweetener, granulated  to taste  (Splenda preferred)                       
2 tbsp  cornstarch                                                                       
                   
Directions                               
1  Put berries in a medium saucepan.
2  Add 1 ¼ cups of water to the saucepan and bring to a boil, stirring occasionally.
3  Lower heat.
4  Add Splenda.
5  Mix together cornstarch with remaining ¼ cup of water in a cup or small bowl. Add to sweetened berries and blend together.
6  Cook the mixture over a low heat for about 4 minutes. Stir constantly until the consistency is extremely thick.
7  Serve hot.
           
Additional Information    Wojapi (pronounced Wo-Zha-Pee) is a classic Plains Indian treat.  Use raspberries, strawberries, blackberries, blueberries ... or a mix of all or any of them!
