1. Deviled Ham Skillet

They're sure to see a devilish gleam in your eye when you proudly serve wedges of this hearty skillet treat. With its perfect teaming of deviled ham, cheese, veggies, and rice, you're gonna shine with Deviled Ham Skillet!

Serves: 4

Cooking Time: 30 min

Ingredients
1  medium-sized onion, finely chopped
3  celery stalks, chopped
2  (7-ounce) cans sliced mushrooms, drained
2  (4-1/2-ounce) cans deviled ham
3 cups cooked rice
6  eggs, beaten
2 cups (8 ounces) shredded Cheddar cheese
1  (3-ounce) can real bacon bits

Instructions    
Coat a large skillet with cooking spray and saute onion and celery over medium heat for 4 to 5 minutes, or until tender. Stir in mushrooms, ham, and rice.
        
Pour eggs evenly over rice mixture then reduce heat to low, cover, and simmer for 18 to 20 minutes, or until eggs are set. Uncover and sprinkle with cheese.
        
Cook for 3 to 4 minutes, or until cheese melts. Sprinkle bacon bits evenly over top then slice into wedges and serve immediately.

2. Dewberry Cobbler

Serve with a scoop of vanilla ice cream

INGREDIENTS:

1/2 cup butter
2 cups sugar
3 rounded cups dewberries
3/4 cup flour
3/4 cup milk
2 teaspoons baking powder

TO PREPARE:

Melt butter in 2-quart casserole.  Sprinkle 1 cup of the sugar over dewberries and set aside.  Mix remaining cup sugar, flour, milk and baking powder; stir into melted butter.  Spoon berries over top of "crust" mixture.  (Crust comes to the top during baking.)  Bake at 300 degrees for about 1 hour, or until crust is light brown.

3. Diabetic Creamy Peach Omelet

Yield: 1 Servings      

      1 pk (8 ounces) low-calorie cream cheese; softened
      8    Eggs
      1 pn Salt
      2 pk Equal; (artificial sugar sweetener)
    1/4 c  Heavy cream
      2 tb Diet margarine
    1/2 c  Peaches mixed in blender with 2 pk Equal


Combine all ingredients except margarine and peaches in a bowl. Beat till smooth. Melt margarine in omelet pan; pour in egg mixture. Cook over low heat until the eggs begin to set. Loosen eggs with spatula from the sides of the pan. Tilt pan to allow uncooked egg mixture to spread to the sides. When center is firm, spoon peaches into the center of the omelet. Carefully fold two of the outer edges of the omelet into the center.

Makes 4 servings..Calories:340 per serving. Diabetic exchanges per serving: fruit-0, vegetable 0, bread 0, milk 0, meat 2, fat 4.

4. Down Home Sweet Potato Casserole

All I have to say is 'Sweet Potato Casserole' and 'family favorite' comes to mind. I'm betting this will become an instant classic with your family, too!

Serves: 6

Preparation Time: 5 min

Cooking Time: 30 min


Ingredients
2  (14-1/2-ounce) cans mashed sweet potatoes
1/2 cup packed dark brown sugar
1 cup evaporated milk
1/4 cup butter, melted
1  large egg
3 tablespoons all-purpose flour
1/2 teaspoon pumpkin pie spice
1/4 teaspoon salt
1/4 cup chopped pecans

Instructions
Preheat the oven to 350 degrees. Stir together first 8 ingredients; spoon into a lightly greased shallow 2-quart baking dish.


Bake at 350 degrees for 30 minutes or until a knife inserted in center comes out clean. Sprinkle with chopped pecans.

5. Dutch Apple Pancakes

In Holland, these fluffy pancakes are often served with a variety of both savory and sweet fillings. Our wholesome Dutch Apple Pancakes are perfect for breakfast, brunch or a novel dessert.

Serves: 4

Cooking Time: 15 min

Ingredients 3  eggs
1/2 cup all-purpose flour
1/2 cup milk
2 tablespoons (1/4 stick) butter, melted
1/2 teaspoon salt
1 tablespoon butter
1/2 cup brown sugar
1/4 teaspoon ground cinnamon
1  (20-ounce) can sliced apples in water, drained
  Confectioners' sugar for dusting
 
Instructions    
Preheat oven to 400 degrees F. Coat 2 (9-inch) cake pans with cooking spray.
        
In a medium bowl, mix eggs, flour, and milk with an electric mixer; beat until smooth. Add the 2 tablespoons melted butter and the salt; beat well then pour mixture into prepared cake pans, distributing evenly.
        
Bake 10 minutes then reduce heat to 350 degrees and bake 5 to 7 more minutes, or until puffy and golden.
        
Meanwhile, in a medium skillet, melt remaining 1 tablespoon butter over medium heat. Stir in remaining ingredients, except confectioners' sugar, and heat 3 to 5 minutes, until apples are heated through.
        
Remove pancakes to a serving platter then spoon half the apple mixture over each pancake, dust generously with confectioners' sugar, and serve immediately.
