1. Spicy Beef and Bean Burgers

Prep: 15 minutes
Broil: 12 minutes

1   slightly beaten egg white
1/2 of a   15-ounce can (3/4 cup) pinto beans, drained and mashed
1/4  cup soft whole wheat bread crumbs
1/4  cup finely chopped celery
1  tablespoon canned diced green chili peppers or 1 teaspoon chopped canned jalapeno peppers
1/8  teaspoon garlic powder
1  pound lean ground beef
4  8-inch flour tortillas, halved
  8 lettuce leaves
1  cup salsa

1. In a large mixing bowl combine egg white, beans, bread crumbs, celery, chili peppers, and garlic powder. Add ground beef, mix well. 
2. Shape meat mixture into eight 1/2-inch-thick oval burgers. 
3. Place burgers on the unheated rack of a broiler pan. Broil 4 inches from the heat for 12 to 14 minutes or until an instant-read thermometer inserted in side of burger registers 160 degrees F, turning once. 
4. To serve, place a lettuce leaf and a burger in the center of each tortilla half. Top with 1 tablespoon of the salsa. Bring ends of tortilla up and over burger. Top with another tablespoon salsa. Makes 8 servings. 
Make-Ahead Tip: Prepare burgers but do not cook. Wrap burgers individually in freezer paper or foil and place in airtight freezer container or plastic freezer bag. Seal, label, and freeze uncooked meat patties. To use, thaw completely in refrigerator overnight. Cook as directed above.

2. Sugar Cookie Footballs
Makes About 48 Cookies

8 tablespoons (1 stick) butter, softened
1/2 cup light-brown sugar
1/2 cup granulated sugar
1 egg
2 teaspoons vanilla
2 cups unsifted all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
2 to 3 teaspoons warm milk
1/2 teaspoon ground cinnamon

1) In a large bowl with an electric mixer on high speed. Beat butter, brown
sugar, and granulated sugar until fluffy. Beat in egg and vanilla. Add
flour, baking powder, and salt. Beat on low speed just until combined.
2) Divide dough in half. Shape each into a log about 3 inches in diameter.
Flatten each log to form an oval and pinch at opposite sides so that when
viewed from the end it resembles the profile of a football. Roll each log in
wax paper and then in freezer wrap. Dough may be frozen for up to 3 months.
3) To bake, preheat oven to 375 degrees F. Grease two baking sheets. Cut
logs into 1/4-inch thick slices resembling footballs. Pinch together  and
reserve enough end pieces or uneven slices to measure 2 level measuring
tablespoonfuls. Place remaining slices about 1 inch apart on baking sheets.
Combine reserved cookie dough, warm milk and cinnamon to make a dough soft
enough to pipe. Place dough in sturdy pastry bag fitted with a writing tip;
pipe a curved line with 4 cross bars to resemble football lacing on each

3. Red Lobster's "Sunset Passion Colada" from
Susie Bowser of Solon Ohio

(I got this recipe from a bartender working there. It is delicious.)

1 & 1/4 oz. Malibu rum
3 oz. Daly's pina colada mix
And add enough crushed ice in a blender with this for a 14 oz. glass,
Pour into glass, then, add 1 oz. strawberry puree

3 lbs Hamburger Meat
2 Cups Quick Oats
1 Chopped Onion
1/2 tsp Garlic Powder
1/ 2 tsp Black Pepper
1/2 tsp Salt
2 eggs
1 Can Evaporated Milk

Mix all the above ingredients together and make into meatballs, then place meatballs into a baking dish


2 Cups Ketcup
2 Cups Brown Sugar
1/2 Chopped Onion
1 Tbsp Liquid Smoke
1/4 tsp Garlic Powder

Mix together well and heat on top of stove in a saucepan until hot , then pour over meatballs
Bake 350^ oven for one hour.

5. Sweet Potato Mini-Muffins

3-1/2 cups sugar
1 Cup oil
4 eggs
2 cups cooked, mashed sweet potatoes
3-1/2 cups all purpose flour
1 tsp. baking soda
1/2 tsp. salt
1 (8 oz.) box dates, chopped
1 tsp. nutmeg
1 tsp. cinnamon
1 tsp. allspice
1 tsp. vanilla
1 cup chopped walnuts or pecans
1/4 cup all purpose flour

In a large mixing bowl, cream  sugar and oil. Add eggs (one at a time). Add vanilla, sweet potatoes, 3-1/2 cups flour, soda, salt and spices just until blended. Coat nuts and dates with 1/4 cup flour and fold into batter.

Grease mini muffin pans and fill 2/3 full with batter. Bake at 325 degrees for 25 minutes. (this bread is better if stored for a few days. freezes well) Yield 12 doz.
