1. Quiche Florentine
Yield: 8 Servings
Categories: Eggs

Ingredients:

      1 pk (15 oz) ready made pie Crust
      2 c  (8 oz.) Velveeta shredded Pasteurized Process Cheese Food
    1/3 c  (1 1/2 oz.) grated Parmesan Cheese
      1 pk (10 oz) frozen chopped
           Spinach, thawed and well drained
      4    Crispy cooked bacon slices, crumbled
    3/4 c  Milk
      3    Eggs,beaten
    1/4 ts Black pepper


  Prepare pie crust according to package directions for filled one crust
  pie,using a 9" pie plate.(Refrigerate leftover crust for later use.)In a
  large bowl,combine remaining ingredients; mix well.Pour into unbaked pie
  crust.Bake @ 350 degrees for 35 to 40 minutes or until knife inserted in
  center comes out clean. Let stand 10 minutes before serving.Makes 6 to 8
  servings.

2. Quick Peanutty Chicken Broccoli Stir-Fry

Prep Time: 20 min
Cook Time: 10 min
Yield: 4 servings

INGREDIENTS:

4 teaspoons Crisco® Pure Canola Oil, divided
1 pound boneless skinless chicken breasts or thighs, cut into 1/2-inch pieces
2 cups (1 1/2-inch) broccoli florets
1 medium red or green bell pepper, cut into 1/4-inch wide strips
4 ounces fresh snow peas, trimmed (1 heaping cup)
1/2 cup green onion, cut in 1-inch lengths
2 cloves garlic, minced
1 (8 oz.) can sliced water chestnuts, drained
3/4 cup water
1/2 cup Jif® Creamy Reduced Fat Peanut Butter Spread
1/2 cup bottled stir-fry sauce
Hot cooked white rice
1/4 cup salted peanuts
DIRECTIONS:


HEAT 2 teaspoons oil in large skillet or wok over medium-high heat. Stir-fry chicken in oil until lightly browned and no longer pink in center. Remove from skillet.
HEAT remaining 2 teaspoons oil in skillet. Stir-fry broccoli and red pepper in oil 3 minutes. Add snow peas, green onion and garlic; stir-fry 1 to 2 minutes. Add water chestnuts; stir-fry 1 minute or until hot.
WHISK together water, peanut butter and stir-fry sauce in small bowl until smooth. Add sauce mixture and chicken to skillet; heat through. Serve over cooked rice. Garnish with peanuts.

3. Quik Power Bars


Categories: Desserts

Yield: 1 Servings      

2 c  NESTLE(R) QUIK Chocolate Powder
1/2 c Peanut butter
1/2 c Milk
1/4 c Butter      
3 c  Instant rolled oats
1 ts Vanilla
1/3 c  NESTLE(R) SMARTIES(R) Candies or peanuts


In large heavy saucepan, combine Quik, peanut butter, milk and butter. Heat and stir over medium heat until mixture is smooth and comes to a boil. Boil and stir constantly for 2 minutes. Remove from heat. Stir in instant rolled oats and vanilla. Pat into a foil-lined, 8-inch square pan. Scatter Smarties/peanuts on top and press in. Chill until firm. Cut into twelve 1x2-inch bars.

Per bar approx: 348 Calories, 7 g Protein, 12 g Fat, 53 g Carbohydrate

4. Quilter's Rice Pudding

Categories: None

Yield: 1 Servings

2 1/2 c Cooked rice
1 1/2 c Scalded milk
2/3 c White or brown sugar      
3    Eggs; beaten
1 ts Salt
2 tb Vanilla
1 ts Cinnamon
1 ts Nutmeg
1/2 c  Raisins
3 tb Soft butter


Combine all ingredients. Pour into a lightly greased crockpot. Cook on high for 1 -2 hours. Stir during first 30 minutes. Recipe can be doubled.

5. Qvelling Cod Filets


Categories: None

Yield: 1 Servings           

      A little butter
      1 sm Onion; sliced like paper
    3/4 c  Dry white wine
      2 lb Cod filets; (4 pieces) - (I used whiting)
           A little olive oil for brushing
           Some Parmesan cheese for sprinkling
           Some bread crumbs also for sprinkling
           A little parsley; chopped
      2 ts Flour
           A pinch salt
     1/2 c Milk; (we use 1%)

While going through my kosher chinese, french and italian cookbook looking for egg roll wrappers, I also checked each ethnic category for something different to do with fish and tried this one from the italian section of the Kosher Cookbook Trilogy. My husband says its a keeper!
