1. Ultimate Chocolate Chunk Cookies

The name says it all: Ultimate, yes. Chocolate, yes. Chunky, yes. See, now you know where the name comes from.

Makes: 3 1/2 dozen
Cooking Time: 30 min

2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (1 stick) butter, softened
1/2 cup vegetable shortening
1/2 cup granulated sugar
3/4 cup packed light brown sugar
1 teaspoon vanilla extract
1 egg
2 cups (12 ounces) semisweet chocolate chunks
1/2 cup chopped nuts (optional)

Preheat oven to 375 degrees F.
In a medium-sized bowl, combine flour, baking soda, and salt; set aside. In a large bowl, combine butter, shortening, sugars, and vanilla; beat until creamy. Beat in egg, then gradually add flour mixture, mixing well. Stir in chocolate chunks and nuts with a wooden spoon; mix well. Drop by rounded teaspoonfuls 2 inches apart onto ungreased cookie sheets.
Bake 8 to 10 minutes. Cool on cookie sheets 2 minutes, then remove cookies to a wire rack to cool completely.

2. Ultimate Root Beer Float

Anyone who loves ice cream sodas will want to try this one. Our Ultimate Root Beer Float, is an ice cream soda fountain favorite sure to conjure up tasty memories.

Serves: 6
Cooking Time: 5 min

1 quart vanilla ice cream, slightly softened
1/2 cup finely crushed root beer barrel candy (about 18 candies)
2 bottles (1 liter each) chilled root beer soda
Line a rimmed baking sheet with waxed paper.

In a medium bowl, combine the ice cream and candy; mix well.

Shape into 6 well-rounded scoops and place on the baking sheet. Freeze until firm, or until ready to use.

Fill 6 tall glasses or mugs three-quarters full with root beer soda and top each with a scoop of the ice cream mixture.

Serve immediately with straws.

Make sure to not overfill the glasses with the root beer because you'll need room for the foam that forms when you add the ice cream.
3. Unforgettable Chicken Casserole

Simple and satisfying, our Unforgettable Chicken Casserole has that cozy-comfort taste and texture that will make for a memorable meal. Using readily available ingredients, in just 30 minutes oven time, it's unbeatable.

Serves: 8
Cooking Time: 35 min

3 cups chopped cooked chicken
2 cups finely chopped celery
1 cup (4 ounces) shredded Cheddar cheese
1 cup sour cream
1 cup mayonnaise
1 (4-ounce) can water chestnuts, drained and chopped
1 (10-3/4-ounce) can cream of chicken soup
1/2 cup slivered almonds
1 (6-ounce) can French-fried onion rings

Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
In a large bowl, stir together chicken, celery, cheese, sour cream, mayonnaise, water chestnuts, soup, and almonds. Spoon into prepared baking dish.
Bake, uncovered, for 30 minutes. Sprinkle onion rings evenly over top and bake 5 more minutes, or until bubbly around edges. Let stand 5 to 10 minutes before serving. 


We're thinking that a side of deliciously flavored broccoli would be a great accompaniment for this casserole.

4. Upside Down Pineapple Muffins

Remember how popular pineapple upside-down cake used to be? Well, here's a twist on that old favorite...yup, muffin style! Upside-down or right side up, they're delicious every time.

Makes: 2 Dozen
Preparation Time: 25 min
Cooking Time: 20 min

2 (20-ounce) cans sliced pineapple, drained
1 (8-1/2 ounce) can sliced pineapple, drained
24 maraschino cherries
1/2 cup packed light brown sugar
1 (18.25-ounce) package white cake mix
1/4 cup canola oil
3 egg whites
1 (20-ounce) can crushed pineapple, drained, with juice reserved

Preheat oven to 350 degrees F. Coat 24 muffin cups with cooking spray.
Place a pineapple ring in bottom of each cup. Place a cherry in center of each pineapple ring and sprinkle each with an equal amount of brown sugar; set aside.
In a large bowl, with an electric beater on medium speed, beat cake mix, oil, egg whites, and reserved pineapple juice until well combined.
Stir in crushed pineapple and divide mixture evenly among muffin cups.
Bake 20 to 25 minutes, or until golden. Allow to cool 15 minutes then invert muffins onto a cookie sheet. Allow to cool, and serve, or cover until ready to serve.
Notes: Make sure to invert the muffins while still warm so they'll easily pop out of the muffin cups.

5. Upside Down Strawberry Cheesecake

Fresh strawberries add a light taste to this clever, creamy little dessert. Upside Down Strawberry Cheesecake is particularly perfect for a summer picnic!

Serves: 6

1 cup (1/2 pint) heavy cream
1 (8-ounce) package cream cheese, softened
1 (4-serving) package vanilla instant pudding and pie filling mix
1/2 cup milk
2 tablespoons sugar
1/2 teaspoon lemon juice
1 pint fresh strawberries, washed, hulled, and halved
4 graham crackers, crumbled

In a medium bowl, beat heavy cream until stiff peaks form; set aside.
In a large bowl, beat cream cheese until creamy. Add pudding mix, milk, sugar, and lemon juice, and continue beating until smooth.
Add whipped cream and stir until well blended. Place strawberry halves in a 9-inch pie plate. Spoon cream cheese mixture over them and top with crumbled graham crackers.
Serve, or cover and chill until ready to serve.
Preparation Tip
For a quick-and-easy conventional strawberry cheesecake, just spoon this cream cheese filling into a prepared 9-inch graham cracker pie crust and top with the strawberries.
