1. Cherry Rum
1 1/4 oz white rum
1 1/2 tsp cherry brandy
1 T light cream

Shake with ice and strain into a cocktail glass.


4-6 chicken breasts - seasoned
1-1/3 Cup uncooked wild or white rice
1 Can sliced mushrooms and juice
1 can Cream of Mushroom soup
1 pkg. dry Onion Soup Mix
1 tbsp. butter


In 3-qt. casserole dish, melt butter.  Add rice, mushrooms & juice.  Lay chicken pieces on top of rice.  Spoon soup over chicken.
Sprinkle onion soup mix over all.  Cover with water.
Cover with foil and bake 1-1/2 hrs. @ 325 degrees.
Remove foil for the last 15 mins. to let chicken brown.

This one is a real winner on corn. But you'll also want to use it on steaks and chops and just have some around the house to smear on bread.

1/2 cup butter, softened
the grated peel of one lime
the juice of one lime
2 teaspoons red chile flakes

Mix all ingredients. Refrigerate for one hour. Get it back out and go to town!

4.  Chinese Chicken Salad

2 Tbsp sesame seeds
2 Pounds chicken breasts -- boned and skinned
1 Tbsp sesame oil
1 Tbsp salad oil
rice sticks
oil for frying
4 Cups iceberg lettuce -- shredded
4 green onions -- thinly sliced
1/2 Cup cilantro -- chopped

-----Hoisin Dressing-----
2 Tbsp hoisin sauce
2 Tbsp lemon
2 Tsp sugar
1 Tbsp sesame oil
3 Tbsp salad oil

In a small frying pan over medium heat, stir sesame seed until lightly browned (6 to 8 minutes); set aside.
Using the flat side of a meat mallet, pound chicken breasts between pieces of waxed paper, to a thickness of about 1/4 inch. Cut into bite-sized strips about 1/2 inch wide. Sprinkle with salt.
In a wok or large frying pan heat oil and brown half the chicken lightly, stirring and turning over medium high heat until cooked through (about 3 minutes); remove from pan.
Add remaining chicken and cook in the same way.
Mix chicken with Hoisin Dressing and let stand while assembling salad.
To fry rice sticks: Pour salad oil into a wok or large, deep frying pan to a depth of about 2 inches; heat to 350 degrees F. Add a generous handful of rice sticks. Stir and fry just until puffy and crisp

5. Chocolate Chunk Cookie Squares with Frozen Yogurt

Preparation Time: 15 min.
Cooking Time: 30 min.

1-1/4 cups unsifted all purpose flour
1/2 tsp. baking soda
1/4 tsp. salt (necessary)
3 Tbs. unsalted butter, softened
1/2 cup brown sugar, packed
1/3 cup dark corn syrup
1 egg
1/2 tsp. vanilla extract
1/3 cup chopped pecans
1/4 Lbs. fine dark chocolate, cut into 0-1/2 inch pieces
4 cup mint chocolate chip frozen yogurt

Cooking Directions:

Preheat oven to 350 F. Combine flour, baking soda and salt in a bowl and set aside. Combine butter and sugar in bowl. Beat with an electric mixer until light and fluffy. With mixer running, slowly add corn syrup, egg and vanilla. Beat 1-2 minutes or until mixed thoroughly. Add flour mixture and beat another 2 minutes until mixed thoroughly. Stir in pecans and half the chocolate. Spread batter in an ungreased 9-0/1 inches baking pan. Sprinkle with remaining chocolate pieces. Bake 30 minutes or until tester comes out clean when inserted in center. Cut into squares while warm. Let cool 10-15 minutes. Serve with frozen yogurt.
