1. Danny's Pork Spare Rib Rub And Finishing Sauce

Yield: 1 Servings      

      1 tb Granulated garlic
      1 tb Onion powder
      2 tb Salt
      1 tb Cayenne
      1 tb Black pepper
      1 tb White pepper
    1/2 c  Paprika
      1 c  Brown sugar

----------------FINISHING SAUCE---------------------

1/4 c Vinegar
1/4 c Mustard
1/3 c Brown sugar

This may be a little hot for some folks, so one may want to reduce the cayenne a little...but that's the way they like'em out here. I believe the brown sugar is a must, and when it caramelizes, it produces that rich dark cherry-red color, plus it taste good!

After the ribs come off the pit, baste them with a quick coat of an old Southern recipe for finishing sauce for an added deeper, richer, cherry appearance, and flavor. Sauce should be more on the thick side, than thin. Apply with a pastry brush 2 or 3 inches wide. Must be brushed on AS SOON as the ribs come off the pit, not even 2 min. later...immediately. This lets it burn in, and will give them a shinny, glazed appearance, and turns them into an even deeper cherry-red color. I love that color.

If the color is not deep enough, add more brown sugar.

2. Date Shake


Yield: 2 servings

1/2 c Chopped dates      
1 c  Milk
1 c  Vanilla ice cream

Place dates, milk and ice cream in blender or food processor. Blend until mixture is smooth and dates are chopped very fine. To make shake in mixer, chop dates very fine before combining with milk and ice cream. To serve, pour into tall glasses. Yields 2 servings.

Each serving: 317 calories; 120 mg sodium; 39 mg cholesterol; 10 grams fat; 54 grams carbohydrates; 7 grams protein; 0.98 gram fiber

3. Deep Dish Turkey Pie

Yield: 6 Servings      

      6 md Potatoes [pealed & diced]
      6 md Carrots [peeled & diced]
      1 sm Onion [chopped]
    1/4 c  Green pepper [chopped]
      2 tb Butter
      1 cn Cream of chicken soup
      3 c  Turkey [cooked & chopped]
  1 1/2 c  Flour
      2 ts Baking powder
   1/2 ts Salt
   1/4 c Butter
   1/2 c Milk

1. Cover the potatoes and carrots with water in a saucepan and cook `til tender or 15 to 20 min. and drain reserving 1 cup of the liquid...
2. Saute the onion and green pepper in 2 tb of butter in a skillet `til tender...
3. Blend the soup and reserve liquid in a bowl... then place the soup mixture turkey and cooked veggies in a 2 qt casserole and bake in a 425 oven for 15 min...
4. Combine the flour, baking powder, and salt in a bowl, then cut in the butter `til crumbly, add the milk and mix well. Knead lightly on a floured serface, Roll and cut with 2" biscuit cutter, arrange over turkey mixture. Brush biscuits with additional milk and bake for 15 min longer

Delicious Pinwheel Steaks

Try this delicious Pinwheel Steak recipe.

1 beef flank steak, 1-1/2 pounds 
INGREDIENTS for Marinade:

2 cups dry red wine
1/2 cup finely chopped green onions
2 bay leaves, crumbled
1 Tablespoon Worcestershire sauce
1 clove garlic, crushed
1 teaspoon salt
1/2 teaspoon freshly ground pepper
1/2 pound bacon
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon coarsely ground pepper
1/4 cup minced parsley
1/4 cup finely chopped onion 

1. Pound flank steak to 1/2-inch thickness.
2. Combine all Marinade ingredients and mix well.  Place flank steak in
     9x13-inch pan and pour Marinade over meat.  Marinate in refrigerator
     overnight or up to 72 hours.
3.  Remove steak from marinade.
4.  Fry bacon until almost done but not crisp.
5.  Score steak on both sides.
6.  Sprinkle steak with garlic, salt, pepper, parsley and onion.  Place bacon
     lengthwise on steak.
7.  Roll-up steak, starting with narrow end.  Skewer with wooded toothpicks
     at 1-inch intervals.
8.  Cut into 1-inch slices and grill over medium-hot coals for 57 minutes,
     turning once. 

5. Diet Cherry Coke Lentils

1 pound lentils
6 to 8 cups water
2 cups diced ham
1 medium onion, finely chopped
12 oz. Diet Cherry Coke


Wash and sort lentils. Cover with water.
Bring to a boil and reduce. Heat to a simmer.
Add ham and onion. Simmer for 40-50 minutes.
Add Diet Cherry Coke. (This will produce a lot of foam.)
Simmer for an additional 10-15 minutes or until lentils are done.
