1. Oh So Good Oyster Dressing

A unique twist to a traditional dish!

From, "A Cookbook Spiced with Cajun Traditions and Food Memories" published by The Junior League of Lafayette, Inc.
2 large chopped onions
6 bunches chopped green onions
1 bunch chopped parsley
6 cloves minced garlic
6 stalks chopped celery
1-1/2 loaves PoBoy bread, dried out
3/4 gallon oysters (reserve water)
2 large cooking spoonfuls bacon drippings
  Salt and pepper

Saute all chopped seasonings in bacon drippings until tender.  Add oysters.  Cook 12 to 15 minutes, stirring.  In another bowl, moisten bread with oyster water, then crumble bread and add to seasoning and oyster mixture. 
Cook 15 more minutes.  Place in large baking dish and bake at 350 degrees for 1 hour.
NOTE:  If desired add chopped turkey liver to dressing
       before baking.
2. Old Fashioned Fruit Punch

Homemade fruit punch with real syrup is a classic you should not pass up.

2 lbs. sugar
2 qts. water
2 qts. mineral water
1 large pineapple, shredded
Juice of 6 oranges and 4 lemons
2 C. sliced strawberries
3 sliced bananas
1 C. raspberry or other fruit syrup
Cracked ice

Boil the sugar with one pint of the water to form a syrup; add the remaining water, mineral water, fruit and ice. Serve very cold.

3. One Dish Smoked Sausage Skillet

Very quick and easy one dish sausage skillet meal. You don't even need to prepare the potatoes separately.

1 pkg. smoked sausage
3-5 baking potatoes, cut into small slices
1/2 - 1 green onion, sliced into thin strips
1/2 med. sweet onion, sliced into thin strips
1/4 tsp. ground red pepper (optional)
1/4 tsp. garlic powder
1 dash onion powder
salt and pepper to taste
cooking spray

Cut sausage into slices and boil in water about 8 minutes. Drain. Spray a large non-stick skillet with cooking spray. You could use oil instead if desired. Cook potatoes in pan stirring frequently until nice and golden brown, about 15 minutes. Add onions, peppers, and sausage. Add seasonings. Cook for an additional 10 minutes. Serve with ketchup and a bowl of peas if desired.

4. Orange and Honey Coffee

Add extra flavor to your coffee without adding calories from things like milk and whipped cream. Orange peel and a little honey really jazz up this drink.

1/2 C. ground coffee
1 Tbs. grated orange peel
1/3 C. honey
6 C. cold water

Place coffee and orange peel in filter in brew basket of coffee maker. Measure honey into empty pot of coffee maker. Add water to coffee maker; brew. When brewing is complete, stir until well blended.

Tip: Prepare as directed substituting with decaffeinated coffee.

Variation: Omit orange peel. Stir 1/2 tsp. almond extract into brewed coffee.

Yield: 8 servings, 3/4 C. each 
5. Out of this World Strawberry Freeze Recipe

A quintessential, refreshing summer drink

1 1/4 lbs. Frozen unsweetened strawberries
1 C. strawberry low fat yogurt
3 Tbs. Confectioners sugar
1/2 tsp. Vanilla extract

Place frozen strawberries in a food processor. Process until berries are very fine. Add remaining ingredients and process until smooth.

Serves 2.

4. New Mexico Garlic Mashed Potatoes

Yield: 4 Servings

6    Red potatoes, medium size, washed and quartered (skins left on)     
1    Head garlic, peeled     
1 c  Cheddar cheese, grated and loosely packed     
2 tb Milk     
3 tb Unsalted butter   
3/4 ts Fresh rosemary needles, finely minced          
Salt to taste          
Freshly ground black pepper to taste     
3 ts Ground New Mexico chiles, or pure chile powder (or use  less as you please)

Put potatoes and garlic in a large pot and add enough water to cover. Cook over medium heat until potatoes are soft, about 25 minutes. Remove from heat and drain water. Add cheese, milk, and butter and mash until light and fluffy. Add rosemary and salt and pepper to taste. Add ground chiles 1 teaspoon at a time until desired heat is achieved. Serve hot. Serves 4

NOTES : Made with garlic and New Mexico chiles. YUM!

5. New Orleans Chicory Pot Du Creame

Categories: Desserts, Emeril, Ethnic, Am/la

Yield: 8 Servings

1 qt Heavy cream     
1    Vanilla bean; split in half    
10    Egg yolks     
1 c  Espresso coffee 
1 1/4 c  Sugar          
Whipped cream in a pastry  bag with star tip          
Chocolate shavings     
1 tb Espresso powder

Preheat oven to 300 degrees F. Scrape inside of vanilla bean halves into cream and add the bean halves, sugar and coffee in a sauce pan over medium heat. Bring the cream up to a boil and reduce to a simmer. Simmer the cream for 5 minutes. Remove from the heat and discard the vanilla bean. In an electric mixer, beat the egg yolks. Gradually pour the hot cream into the mixer. Mix well until incorporated. Strain the liquid into a pitcher. Place 8 (3/4c) cups in a roasting pan. Fill the cups to the rim. Fill the pan with water. Cover the pan loosely with foil and bake for 1 to 1 1/2 hours or until set. Remove from pan and let custards cool completely. Place in refrigerator and chill for 1 hour. Garnish with whipped cream, chocolate shavings and espresso powder.
