1. Meat and Poultry:
Beef Roulades

From the Houston Junior League Cookbook
___________________________________

INGREDIENTS:

2-1/2 pounds round steak, 1/8 inch thick
3/4 pound ground pork
1 teaspoon poultry seasoning
3/4 teaspoon salt
1/2 clove garlic, crushed
2 Tablespoons finely chopped onion
1/4 pound salt pork, sliced thinly into 8 slices; or 8 slices bacon
3 Tablespoons butter
1-1/2 pounds whole, small white onions, peeled
1/3 cup flour
1 Tablespoon meat extract paste
1 can beef bouillon, undiluted
2-1/2 cups red wine
1-1/2 pounds fresh mushrooms
1 bay leaf
1 Tablespoon chopped parsley

TO PREPARE:

Wipe beef with damp paper towels; cut into 8 pieces (approximately 4 inches by 6 inches). Combine ground pork, poultry seasoning, salt, garlic and chopped onion. Toss lightly to mix well. Place about 2 Tablespoons of mixture on each piece of beef; roll up, starting roll on short side of steak slice. Wrap each roll with a thin strip of salt pork or bacon and tie with a heavy thread. In hot butter in a Dutch oven, brown the roulades on all sides, removing them as they brown. Add the whole onions and brown on all sides. Remove pan from heat. Stir in flour and meat extract paste. Gradually stir in bouillon and wine. Bring to boiling point, stirring constantly. Return roulades to Dutch oven. Add mushrooms and bay leaf. Bake, covered, in a 350 degree oven for 2 hours, or until meat is tender. If sauce seems thick, thin with a little more wine. To serve, discard bay leaf and remove thread from roulades. Arrange in center of a large heated platter. Surround with the onions and mushrooms. Sprinkle with chopped parsley. Allow 1 to 2 roulades per person.

2. Black Bean Relish
Almost fat-free. This recipe serves 6 as a main dish salad.

INGREDIENTS:
2 cans black beans (drained and rinsed, if desired)
1 can shoe peg corn
1 serrano or jalapeno, minced
1 can diced tomatoes or 2 large fresh tomatoes, diced
1 green or red bell pepper, chopped
1 medium onion, chopped
1/4 cup white wine vinegar
1 tbsp oil (optional)
1/2 tsp salt
1 tbsp Chinese chili sauce (or to taste)

DIRECTIONS:
Chill well.
Serve with baked tortilla chips, or drain a bit and roll up in a soft tortilla.
Note: In a pinch, substitute 1 can Rotel for the tomatoes and chilis noted above.

3. Blue Cheese and Walnut Pizza

This simple pizza makes a great appetizer.

Serves 4-6

1 Pizza crust (bread machine, prepared, mix or refrigerated)
1 cup Red onion, diced
1 Tablespoon Butter
1/3 cup Toasted walnuts, roughly chopped
˝ pound Blue cheese crumbles

Preheat the oven to 375. Sauté the onions in the butter until just soft. Set aside. Top the crust with the walnuts, cheese and cooked onions. Bake for 12-18 minutes (or until the cheese is melted). Serve warm.

4. Appetizers, Salads and Breads:
Brown Sugar Coffee Cake

From the Houston Junior League Cookbook

INGREDIENTS:
2 cups brown sugar, lightly packed
2 cups flour
1/2 cup butter, softened
1 egg, beaten
1 teaspoon nutmeg
1 teaspoon baking soda
1 cup sour cream
1/2 teaspoon cinnamon
1/2 cup chopped nuts
TO PREPARE:
Thoroughly mix together brown sugar, flour and butter. Spread half of mixture into 9-inch square pan. To remaining brown sugar mixture, add egg and nutmeg. Mix baking soda into sour cream and add, stirring well. Spread batter over first mixture in pan. Sprinkle cinnamon and nuts over batter. Bake at 350 degrees for 40 minutes.
SERVES: 6 to 8

5. Meat and Poultry:
Burgundy Ham with Green Grapes
From the Houston Junior League Cookbook

INGREDIENTS:
1 Tablespoon butter
2 Tablespoons sugar
Dash ground ginger
1 ham slice, 1-1/2 inch thick
3/4 cup Burgundy wine
1 Tablespoon corn starch
1/4 cup cold water
1 cup seedless green grapes
TO PREPARE:
Melt butter in large skillet. Sprinkle in sugar and ginger. Brown ham quickly on both sides. Remove ham from skillet and set aside. Blend wine, cornstarch and cold water; add to sugar mixture remaining in skillet. Cook and stir until mixture is boiling and thick. Return ham to sauce; cover and cook over low heat until done (about 15 minutes), turning one time. Add grapes; cover and cook 1 or 2 minutes longer. Serve grape sauce over ham.
SERVES: 4
