Yield: 1 Servings


1 Prepared pie crust; (from crumbs or dough)
[CraftE note: Or like I do, ready made crust lol]


1/2 lb Biscuits; crumbed, and mixed with 3 tb Melted butter or margarine; up to 4

4 Apples; peeled, cored, and sliced, (preferred sour like Granny Smith, but not obligatory)
1 c Whipping cream; (and this time you cannot use 1/2 and 1/2 instead, sorry)
Maple syrup; (amount depends on taste)

Preparation: Arrange apple slices on crust. Pour over a generous amount of maple syrup, and on top pour whipping cream. Bake for about 30 mins at medium heat.

And that's it!!!

2. Easy Pork Chop Rice and Mushroom Casserole

A classic Cajun dish that's sure to be a hit!

From, "Tell Me More, A Cookbook Spiced with Cajun Traditions and Food Memories" published by The Junior League of Lafayette in cooperation with your Daily InBox newsletter.

4 pork chops
4 Tablespoons oil
2 cloves chopped garlic
1 medium chopped onion
1/3 cup chopped green onions
1/3 cup chopped bell pepper
1 can beef consomme
1 cup water
1 cup uncooked rice
1 (8 ounce) can mushrooms
Salt and pepper to taste

In a large skillet or Dutch oven brown pork chops in 2 Tablespoons oil and remove. Saute garlic, onions and bell pepper in remaining oil. Add consomme, water, rice and mushrooms. Salt and pepper to taste; stir. Place pork chops on the top of rice. Bake at 300 degrees covered for about 30 to 45 minutes.

3. Egg & Turkey Sausage Breakfast Tortilla

Makes 1 serving

1 Large egg
1 Mission Soft, taco size, flour tortilla
1 Fully-Cooked Breakfast Turkey Sausage, cut (3/4 oz)
1 Tbsp shredded Cheddar cheese
1 Tbsp salsa

1. Coat 2-cup microwave-safe cereal bowl with cooking spray. Add egg; beat until blended. Microwave on HIGH 30 seconds, stir.

2. Fork egg onto tortilla, top with diced sausage, salsa and cheese.

3. Microwave 30 seconds longer; fold bottom of tortilla over, then fold in sides.

4. Eggplant Cheese Pie W/zucchini Crust

Categories: Casserole

Yield: 6 Servings

1 1/2 tb Butter or margarine
1/2 c Onion; chopped
2 Cloves garlic; minced
1 lb Eggplant; unpeeled, cut into1/2-inch cubes
1/2 ts Salt
3/4 ts Oregano
3/4 ts Basil; dried
2 ds Cayenne
1 sm Zucchini; unpeeled, sliced
2/3 c Skim milk; evaporated
1 Egg
2 c Mozzarella; part-skim, grated

Preheat the oven to 375 degrees. Melt the butter or margarine and saute the onion, garlic and eggplant in a large skillet for 2 minutes. Cover. Continue cooking for about 5 minutes or until the eggplant is soft, stirring a few times. Add the salt, oregano, basil and cayenne. Stir well. Line the bottom and sides of a greased 10" pie plate with the zucchini slices. Carefully spoon the eggplant mixture over them. Combine the evaporated milk, egg and cheese in a bowl. Pour over the vegetables. Bake for 30 minutes. Serve hot.

5. Emeril's Funky Fried Steak

Yield: 1 Servings

4 (4-ounce) beef cutlets
Southwest seasoning mix
1 1/2 c Flour
2 Eggs,; slightly beaten
Vegetable oil for frying
2 c Roasted garlic mashed potatoes,; hot
1/2 c Emeril's Worcestershire sauce
1 c White gravy for the steaks
Garnish: 1 tablespoon chopped chives, brunoise peppers

In a cast-iron skillet, preheat the oil. Heavily season each side of the cutlets with the Southwest seasoning, Season the flour with the Southwest seasoning. Dredge the cutlets in the flour. Dip each cutlet in the beaten eggs, letting any excess drip off. Dredge the cutlets back into the flour, coating each side completely. Place the cutlets in the hot oil. Fry the steaks for 3-4 minutes on each side. Remove from the oil and drain on paper-lined plate. Season the steaks with salt and pepper. Mound the potatoes in the center of the plate. Drizzle Worcestershire sauce around the potatoes. Lay the steaks on top of the potatoes. Spoon the gravy over the steak. Garnish chives and brunoise peppers.

Yield: 4 servings
