1. Smashed Antipasto Olives

Keep this relish-type dish in the refrigerator for up to two months.

Makes about 2 cups

1 1/2 cups Black olives
1/4 cup Red onion, diced
1/4 cup Celery, diced
1 teaspoon Garlic, minced
1/2 teaspoon Oregano
1/4 teaspoon Sugar
1/2 cup White wine vinegar
1/4 cup Water
2 tablespoon Olive oil

Smash the olives on a cutting board with the side of a large knife. Toss with the remaining ingredients. Cover and refrigerate at least overnight. Serve with cold cheese and meat plates.

2. Smithfield Beans and Potatoes

2 pounds fresh green beans
salted water
1/4 cup butter
2 Tbsp. Dijon mustard
1/4 cup vinegar
2 cups Smithfield Ham, sliced in small, thin strips
1 pound potatoes, cut in small cubes
1 cup peanuts
salt and pepper to taste

Boil water in pot. Cook potato cubes until just done. Add beans and cook until just done and still crunchy. Drain potatoes and beans, return to pot and add 1/4 cup of butter. When butter has melted, add the mustard and vinegar. add ham and peanuts and mix well then add salt and pepper to taste.

Smoked Sesame Tenderloin from At Your Service
Southern Recipes, Places and Traditions


1 pound pork tenderloin
1/2 cup soy sauce
2 garlic cloves, minced
1 teaspoon ginger
1 Tablespoon vegetable oil
1/4 cup honey
3 Tablespoons brown sugar
1/4 cup sesame seeds


Place the tenderloin in a sealable food storage bag. Mix the soy sauce, garlic, ginger and oil in a bowl. Pour over the tenderloin and seal the bag. Marinate in the refrigerator for 2 hours. Mix the honey and brown sugar in a shallow dish. Drain the tenderloin, discarding the marinade. Roll the tenderloin in the honey mixture until well coated. Roll in the sesame seeds. Place the tenderloin on a V-rack with a drip pan. Smoke at 300 degrees for 40 minutes or until a meat thermometer inserted into the thickest portion registers 160 degrees.

4. Speedy Chicken Enchiladas

Prep/Cook Time 15 min.

1 lb. boneless chicken breasts, cubed
1 can (10 3/4 oz.) Campbell's(R) Cream of Chicken OR 98% Fat Free Cream of Chicken Soup
1 cup PaceŽ Chunky Salsa
8 flour tortillas (6'')
1 can Campbell's(R) Cheddar Cheese Soup

COOK chicken in nonstick skillet until browned and done, stirring often. Add chicken soup and 1/2 cup salsa. Heat through.

SPOON about 1/3 cup chicken mixture down center of each tortilla. Roll up tortilla around filling and place seam-side down in 2-qt. microwave-safe baking dish.

MIX cheese soup and remaining salsa and pour over enchiladas. Cover.

MICROWAVE on HIGH 5 min. or until hot. Serves 4.

Spicy Puff Pastry Tapas

These simple Spanish-style appetizers are delicious at
cocktail parties.

Makes about 18

1 sheet Puff pastry dough (frozen), 8"x10"
1/4 cup Olive oil
1/2 teaspoon Paprika
1/8 teaspoon Cayenne pepper
1/3 cup Parmesan, grated

Preheat the oven to 400. Lay the puff pastry on a cutting board and allow it to defrost. Mix the oil, paprika and cayenne. Brush the mixture onto the pastry. Sprinkle on the cheese. Roll the pastry "pin-wheel" style into a cylinder. Cut the roll into 18 slices. Place them on a lightly greased cookie sheet and bake for12-15 minutes (or until browned), turning once. Allow to cool before serving.
