1. Macaroni and Cauliflower

Categories: Italian, Pasta, Vegetables

Yield: 6 Servings

1 lb Spaghetti
1 c Bread crumbs, seasoned
1/2 c Olive oil
1/4 ts Hot pepper flakes
1 Head cauliflower, cut up
1 lg Garlic clove, mashed

Steam cauliflower in a cup of water until tender. Remove from heat. Add seasoned bread crumbs, olive oil, garlic and hot pepper. Cover.

Boil spaghetti. Drain all the water but 1 cup. Add water to cauliflower mixture. Pour over spaghetti and serve.

2. Magic Meat Loaf

Categories: Beef

Yield: 6 Servings

1 1/2 lb Ground Chuck
1 Egg; beaten
1/4 c Milk
1 1/2 ts Salt
2 sl Bread; crumbled
1/2 sm Onion; chopped
2 tb Each: chopped green pepper and celery
4 Potatoes; cut-up
Ketchup

Mix egg, milk, salt and bread crumbs; allow to soften. Thoroughly combine with ground chuck and chopped vegetables. Shape into loaf and place in CROCK-POT. Top with ketchup and green pepper rings. Place potatoes at the sides of loaf. (If potatoes are peeled, coat with butter to keep from darkening.)

Cover and set to High for 1 hour then turn to Low for 8-9 hours.

NOTES : This recipe may be doubled for the 4-1/2 quart CROCK-POT.

3. Make Ahead Potatoes

Categories: None

Yield: 1 Servings

8 md Potatoes peeled, boiled and mashed while hot 8 oz Sour cream
1/4 lb Butter
2 ts Salt

Mix together just until blended. Allow to set overnight Bake 1/2 hour at 350 degrees. This recipe serves six or eight, doubled it takes nine pounds potatoes.

4. Mountain Altitude

3 qt red wine
6 oz brandy
6 oz cherry brandy
6 oz amaretto
1 qt ginger ale
toasted almonds

Pour all ingredients except ginger ale in large punch bowl over ice. Keep in refrigerator. Add ginger ale before serving. Fill garnish bowl with toasted almonds.

5. My Private Tiramisu

A dessert you can keep all for yourself

INGREDIENTS:

1 cup cold espresso
2 Tablespoons dark rum
1 Tablespoon sugar
1 Tablespoon creme de cacao
1 pound mascarpone cheese
1/4 cup dark rum
2 Tablespoons vanilla extract
1 Tablespoon lemon juice
1 cup whipping cream
1 Tablespoons confectioners' sugar
4 egg yolks
1/2 cup sugar
4 egg whites, stiffly beaten
24 ladyfingers
6 ounces bittersweet chocolate, grated
Chocolate-covered espresso beans

TO PREPARE:

Combine the espresso, 2 Tablespoons dark rum, 1 Tablespoon sugar and creme de cacao in a bowl and mix well. Combine the mascarpone cheese, 1/4 cup dark rum, vanilla and lemon juice in a bowl and mix well.

Beat the whipping cream with the confectioners' sugar in a mixer bowl. Fold into the mascarpone cheese mixture. Beat the egg yolks and 1/2 cup sugar in a mixer bowl until thickened. Stir into the mascarpone cheese mixture. Fold in the egg whites.

Dip the ladyfingers into the espresso mixture. Layer the ladyfingers, cheese mixture and grated chocolate 1/3 at a time in a trifle bowl. Sprinkle with espresso beans. Chill until set.

SERVINGS: 10 - 12
