1. Oakcakes

Categories: Breads

Yield: 1 Servings

1 pt Mixed milk and water
1 oz Yeast
6 oz Fine oatmeal
3 oz Plain flour
1 ts Salt (or slightly less)

Mix the flour, salt and oatmeal. Warm the liquid and stir in gradually to make a smooth batter. Crumble in the yeast, stir gently and leave to stand in a warm place for 20 mins. Stir again and cook in a st
rong, well greased frying pan. Pour in enough batter to cover the base fairly thinly and turn out when cooked.

Remarks: This recipe is heavily adapted, but works. Traditionally the oat cakes were cooked on a `backstone' - a stone or iron sheet, over an open fire. It is still possible in some places in Yorkshire to buy a `girdle', a cast iron sheet, about 12 in diameter, with a hoop handle - these are ideal. When cooked, the oatcakes where hung on plain wooden rack suspended from the ceiling, known as bread fl
The oatcakes were eaten either fresh or dried.

They can be fried with bacon, or suttered and eaten alone with cheese, treacle, golden syrup etc.

2. Okra-Shrimp Gumbo

Categories: Soup

Yield: 6 Servings

1 sl (thin) ham
4 c Okra; sliced thin
2 c Chopped onions
2 Cloves garlic; chopped
3 ts Chopped parsley
1 cn (8-oz) tomato sauce
2 lb Fresh shrimp
4 c Water
1 ts Seafood seasoning (optional)
1/2 ts Red pepper
1 ts Salt
1/2 ts Pepper
Cooked rice

Cut ham into small pieces. Saut
e lightly in a skillet. Add okra, and brown lightly, stirring constantly. Add onions, garlic, parsley, and tomato sauce, and let simmer for a few minutes. Add shrimp, water, seafood seasoning, red pepper, salt, and pepper. Let cook for 1 hour over very slow heat. Serve over cooked rice. Yield: 6 to 8 servings.

3. Old-Fashioned Salmon Loaf

Categories: Fish

Yield: 4 Servings

2 c Salmon; 7 1/2oz undrained
12 Soda crackers
2 Eggs 1/2 c Milk
1 ts Butter; melted
1/2 ts Dill weed; dried
Hot pepper sauce; dash
Lemon wedges

In large bowl, remove bones form salmon and mash (including juice with fork. Crush crackers to fine crumbs; add to salmon. Mix well. In bowl, beat eggs; mix in milk, butter, dill, hot pepper sauce & pepper to taste. Blend into salmon mixture. Transfer to greased & wax paper lined loaf pan. Bake in 350F oven for 30-35 min or till
center is firm to touch. Let cool for 5 min. Loosen edges with knife, invert onto serving platter. Garnish with lemon.


4. Olive Garden Chicken Marsala

Categories: Chicken

Yield: 4 Servings

4 Chicken half-breasts; pound 1/4" thick -- skinned & deboned
1/4 c Wondra flour
1/2 ts Salt
1/2 ts Oregano
4 tb Oil
4 tb Butter/margarine
1 c Fresh mushroo
ms -- sliced
1/2 c Marsala wine

Combine flour, salt, pepper and oregano and blend well. Heat the oil and butter in a skillet until bubbling lightly. Dredge the chicken in the flour and shake off the excess. Cook the chicken on medium heat for about 2 minutes on the first side, until lightly brown. As you turn the breasts to the second side to cook, add the mushrooms around the chicken pieces. Cook about 2 more minutes, until lightly browned on the second side. Stir the mushrooms. When the second side is lightly browned, add the wine around the pieces, cover the pan and simmer for about 10 minutes.

5. Oreo Frozen Dessert

Categories: Dessert

Yield: 12 Servings

1/3 c Margarine; Melted
16 oz Hershey's Fudge
1/2 ga
l Vanilla Ice Cream
1 c Cool Whip
1 pk (15-oz) Oreo Cookies

Crush the cookies. Stir in the melted margarine. Press the crumb crust into a 9" pie plate. Slice the ice cream. Place on the crust. Pour the fudge over. Frost with Cool Whip. Sprinkle more cookie crumbs over. Freeze. Remove from the freezer 10 minutes before slicing and serving.
