1. Uberbackener Spinat Mit Kase (Baked Spinach)

Categories: German, Cheese, Main dish

Yield: 4 Servings

1 lb Spinach; Fresh *
1/4 lb Butter
1 Onion; Large, Diced
2 Garlic; Cloves, Minced
1/2 ts Salt
1/2 lb Emmenthaler Cheese; Grated
1 ts Paprika
1/8 ts Nutmeg
1/4 ts Pepper

Wash and clean spinach of sand. Dry. Cut spinach into strips. In a large Dutch oven, heat butter until bubbly. Add onion and garlic, saute for 2 to 3 minutes. Add spinach. Sprinkle with salt. Cover and steam for 5 minutes. Remove from heat. Grease an ovenproof casserole. Sprinkle half the cheese over the bottom of the casserole. Add the spinach. Sprinkle with paprika, nutmeg, and pepper. Top with remaining cheese. Bake at 360 degrees F about 20 minutes or until cheese bubbles.

2. Ufries Fish and Chips with Slaw

Yield: 1 Servings


2 lg Baking potatoes, scrubbed and cut in 1/2-inch thick wedges
Nonstick cooking spray
1/4 ts Salt


2 tb Flour
1/2 c Packaged bread crumbs
1 ts Paprika
1 ts Seasoning *see note
1 lg Egg white, slightly beaten
4 Flounder fillets or any other firm white fish

4 c Shredded red or green cabbage
1 c Shredded carrots
1/2 c Sliced scallions or green onions
1/2 c Fat-free ranch dressing
1 tb Cider vinegar
1/2 Teaspoon pepper

1 Position racks to divide oven in thirds. Heat to 500 F. Coat 2 baking pans with cooking spray.

2. spread potatoes in one of the prepared pans. Spray with cooking spray; toss until coated. spread in single layer. Bake on lower oven rack 25 minutes, turning over once or until tender and golden. Sprinkle with salt.

3. Mean while prepare fish; Mix paprika and seasoning with the bread crumbs. Spread flour and crumbs on separate pieces of waxed paper. Coat fish with flour, dip in beaten egg, then press in crumbs until completely coated. spray tops of fillets with cooking spray.

4. Place sprayed-side down in the other prepared pan. Spray tops of fish. Place on upper oven rack 15 minutes after putting potatoes in oven.

5. Bake 7 to 10 minutes until crust is golden and fish is barely opaque in the center when pierced in thickest part with tip of a knife.

6. Meanwhile toss slaw ingredients in medium bowl to mix and coat. Serves 5 Per serving 3 g. fat.

Note 1 teaspoon Cajun, lemon pepper, thyme or your favorite seasoning.

3. Ukrainian Bean Soup

Yield: 10 Servings

1 lb White beans, dried
1 1/2 lb Sauerkraut
3/4 lb Salt pork
4 Potatoes, cubed
1/2 c Vegetable oil
1 1/2 tb Flour
1 Onion, lg. chopped coarsely
1 ts Salt
1 ts Black pepper
4 Bay leaves
3 Garlic cloves, minced
2 tb Peppercorns
1/2 c Yogurt, plain
1 Carrot, lg. chopped

Soak the beans overnight. Cook the meat, potatoes, beans and sauerkraut separately. Bone the meat when it is done and cut into 1/2" cubes. Dice the potatoes. Crush the beans. Make a roux with the oil, flour & onion. Put meat & vegetables into a pot, add the roux, and the bay leaves. Cover with the stock & cook 10 minutes more. Before serving, add the yogurt.

4. Unbaked Chocolate Cookies-Coconut Variety

Yield: 1 Servings

1/2 c Margarine
2 c Sugar
1/2 c Cocoa
1/2 c Milk
1/2 c Coconut flakes
3 c Oatmeal; quick
3/4 ts Vanilla

Waxed paper

Bring the first four ingredients to a full boil for one minute. Remove from heat and add the other three ingredients. Drop them by Tablespoons on waxed paper and chill. Don't be distressed if the first few teaspoons seem thin. It will thicken fast as you continue to spoon out the cookies.

I've also heard these called No Bake Chocolate Cookies and Bakeless Chocolate Cookies.

5. Upside-Down Apple Pie

Categories: Pies

Yield: 6 Servings

1/2 c Pecan or walnut halves
1/3 c Brown sugar, packed
1 c Granulated sugar
2 tb All-purpose flour1/2 ts Cinnamon
1/8 ts Salt
2 ts Lemon juice
5 c Apples, peeled, cored sliced
Pastry for 1 crust pie

My note: this recipe worked with a deep dish pie plate and one piece of foil. Used 8 cup measure to mix pastry, then measure apples, then poured sugar mixture over the apples.

Line a 9 inch pie plate with a wide circle of foil. Take 2 pieces of 12 inch foil about 2 feet long. Make a drugstore fold lengthwise resulting in 1 large square. Press into pie plate. Spray or grease heavily on bottom and sides up to top edge of pie plate.

Place pecans or walnut halves round side down on bottom of foil in pie plate. Sprinkle with brown sugar.

Combine sugar, flour, cinnamon, salt and lemon juice in large bowl. Stir well. Stir apples and dry mixture together and spread over nuts in pie plate.

Roll pastry and place over top. Fold edges under and flute. (This makes a rim to hold the juice when pie is turned upside down.) Turn up foil all around. Trim foil leaving 4" high. (This may be more important if you have a regular pie plate to keep filling from running over.)

Cut slits in pastry. Bake in 350 F oven about 55 minutes until apples are cooked. Cover with large plate and invert so pie is upside down. Remove foil carefully. Serve warm.
