1. Ketchup - When You're Out of It

Categories: Info/tips

Yield: 1 Servings

8 oz Tomato sauce
1/4 c Sugar
ds Cinnamon
1 tb Vinegar

Pour the tomato sauce into a small sauce pan, and then just boil away some of the water until it begins to thicken. Now add the other ingredients and simmer for 3 or 4 minutes.

If you need the catsup for cooked mixtures, just combine the ingredients above and add to your recipe in place of catsup. Only need to cook it if you plan to use it as a garnish, on hot dogs, etc.

2. Kettle Stew - Vegetarian

Categories: Vegetarian, Soups/stews

Yield: 4 Servings

1 c Chopped onions
1 lg Garlic clove, pressed
2 tb Minced chilies
3 tb Olive oil
1/2 ts Ground cinnamon
1/4 ts Ground cloves
4 sm Potatoes, cubed
3 c Drained canned tomatoes, chopped
2 c Cut green beans
1 sm Zucchini, sliced
2 c Corn
1 tb Cilantro
Salt

In a stewpot, saute onion, garlic, chilies in the oil for 5 minutes. Add cinnamon, cloves, potatoes & cook for another 5 minutes, covered. Stir in tomatoes, green beans & cover & cook for 5 minutes more. Add the zucchini & corn. Simmer, covered on low heat till the vegetables are tender. If the stew seems too dry, add some tomato juice or water. Add cilantro & salt to taste. Serve with cornbread.

3. Kfc Buttermilk Biscuits

Yield: 18 Servings

1/2 c Butter
2 1/2 tb Granulated sugar
1 Egg, beaten
3/4 c Buttermilk
1/4 c Club soda
1 ts Salt
5 c Bisquick biscuit mix

Preheat oven to 450 F. 2) Combine all ingreds. Knead by hand until smooth. 3) Flour your hands. Pat the dough flat to 3/4" thickness on wax paper and punch out biscuits with floured biscuit cutter. 4) Bake on greased baking sheet until brown.Yield: 18 biscuits

4. Kibbles and Bits

Yield: 1 Servings

1 C. peanut butter
1 c Chocolate chips
1/2 c Margarine
1 Box rice chex (or crispix)
2 c Powdered sugar

Melt peanut butter, chocolate chips and margarine together. Pour over rice chex, mix well. Put powdered sugar in a brown paper bag, then add cereal mixture. Shake until all coated. Store in an air-tight container.

5. Kickin' Asian Chicken Salad

Categories: Chicken, Lowfat, Salads

Yield: 4 Servings

1 tb Prepared wasabi powder; dried horseradish)
2 tb Honey
2 tb Red wine vinegar
1 tb Shallots; chopped
1/2 ts Dark sesame oil
1/4 ts Salt
1/4 ts Pepper
1 oz Firm tofu
3/4 lb Beets
3/4 lb Sweet potato; 1 inch thick
1 c Shiitake mushrooms
6 c Salad greens; (gourmet)
3/4 lb Chicken breast; no skin, no bone, R-T-C, cooked, shredded*chicken breast should be cooked, ready to eat, such as Tyson.

Preheat oven to 400 degrees.

Place first 8 ingredients in a blender; process until smooth. Set aside.

Leave root end and 1 inch of stem on beets; scrub with a brush. Place beets and sweet potatoes in a shallow baking dish. Bake at 400 degrees for 45 minutes. Add mushrooms and bake an additional 15 minutes. Cool to touch. Peel beets and potato; cut into 1/2 inch cubes. Thinly slice mushrooms.

Combine beets, potato, mushrooms, greens, and chicken. Drizzle dressing over salad; toss well. Serve immediately.

Yields 4 servings of 2 cups each. Calories 337 (15% from fat), Fat 5.6 g., Protein 31.2 g,Carb 41.4g,Fiber 4.2g,Chol 72 mg., Iron 3.1 mg,Sodium 366 mg, Calc 60mg.

NOTES : Note: Regular horseradish may be substituted.
