1. Lazy Lasagna


Try this quick lasagna recipe for dinner!

From, "Houston Junior League Cookbook" published by The Junior League of Houston in cooperation with your Daily InBox newsletter.

INGREDIENTS:

2 pounds ground round steak
1 teaspoon salt
1 envelope Lawry's spaghetti sauce mix
2 cans (1 pound each) tomatoes
1 can (15 ounce) tomato sauce
1/2 teaspoon basil
Grated Parmesan cheese
1 package (8 ounce) lasagne noodles
2 packages (6 ounce each) sliced Mozzarella cheese

TO PREPARE:
In Dutch oven or large saucepan, brown meat in salt. Add spaghetti sauce mix, tomatoes, tomato sauce, basil and a generous sprinkling of Parmesan cheese. Simmer 30 minutes. Cook lasagne noodles just until tender. In 9x11-inch casserole, layer meat sauce, noodles, and Mozzarella cheese.

Sprinkle with Parmesan cheese. Repeat layers, saving enough meat sauce to pour over top layer. Bake in 300-325 degree oven for 20 minutes. This is a simplified version of lasagne, yet has an authentic taste; better by far if made the day before or at least early in the morning, and then baked just before
serving.

2. Lemon Meringue Pie

Try this delicious lemon meringue pie!

INGREDIENTS:
1-2/3 cups crushed graham crackers
1/4 cup sugar
1/2 cup butter, softened
1/2 cup freshly squeezed lemon juice
1 teaspoon freshly grated lemon rind
1 (14-ounce) can Eagle Brand condensed milk
2 eggs, separated
1/4 teaspoon cream of tartar
4 Tablespoons sugar

TO PREPARE:

Mix graham cracker crumbs and sugar with a fork. Blend in butter. Press into bottom and sides of a 9-inch glass pie pan. Bake at 375 degrees for 8 minutes. Chill. Combine lemon juice and rind in a small mixing bowl. Gradually add milk. Add egg yolks and beat on medium speed until well blended. Pour into chilled crust. Combine egg whites with cream of tartar and beat until almost holds peak. Add sugar, 1 Tablespoon at a time, beating until stiff but not dry. Spread meringue on filling and bake at 325 degrees until lightly browned (about 15 minutes). Cool. Refrigerate until ready to serve.

3. Lettuce Wraps

For an easy appetizer, cook ground turkey as specified on the package. Always cook to well-done, 165F as measured by a meat thermometer. Season with teriyaki sauce, then toss in flaked coconut and chopped peanuts and serve in lettuce cups.

4. Linguini with Roasted Yellow Pepper Sauce

Enjoy this traditional pasta dish with your favorite wine pairing!

INGREDIENTS:
3 yellow bell peppers
Vegetable oil
3/4 cup extra-virgin olive oil
1 hard-cooked egg yolk
1 clove of garlic
Salt and pepper to taste
1-1/2 pounds linguini, cooked, drained
5 teaspoons chopped fresh parsley


TO PREPARE:
Rub the yellow peppers with vegetable oil. Place on a grill rack. Grill over hot coals until the skin is blistered and charred on all sides, turning frequently. Place in a sealable plastic bag.

Steam until cool. Peel and seed the yellow peppers; cut into large pieces. Combine the yellow peppers, 3/4 cup olive oil, egg yolk and garlic in a food processor container. Process until smooth. Season with salt and pepper. Spoon into a saucepan.

Cook until heated through, stirring frequently. Pour over the hot pasta in a bowl, tossing to mix. Spoon onto a serving platter. Sprinkle with the parsley.

NOTE: May substitute 1/8 teaspoon garlic powder, 1/8 teaspoon instant minced garlic, 3/4 teaspoon garlic salt, or 5 drops of liquid garlic for 1 fresh clove of garlic.

5. Luscious Orange Cake

Categories: Cake

Yield: 12 Servings

3/4 c Miracle Whip salad dressing
1 2-layer yellow cake mix
1 Envelope Dream Whip whipped topping mix
3/4 c Orange juice
3 Eggs
Orange mallow cream (see recipe below)

Preheat oven to 350 degrees. Combine all other ingredients, mixing at medium speed on electric mixer for 2 minutes. Pour into greased and floured 10-inch fluted tube pan. Bake 35 to 40 minutes or until wooden toothpick inserted near center comes out clean. Let stand 10 minutes; remove from pan. Cool. Serve with Orange Mallow Cream (see recipe below). Makes 12 servings. Prep time: 10 minutes plus cooling. Cook time: 35-40 minutes.

Orange Mallow Cream

Categories: Dessert

Yield: 12 Servings

1 ct (8-oz) Philadelphia Brand soft cream cheese
1 Jar (7-oz) Kraft Marshmallow Creme
1/2 c Sour cream
2 tb Orange flavor liqueur

Combine cream cheese and marshmallow creme, mixing on medium speed of electric mixer until well blended. Blend in sour cream and liqueur; chill. Serve with Luscious Orange Cake (see recipe) or fresh fruit. Makes 2 cups. Prep time: 5 minutes. Chill time: 1 hour
