1. Nacho Casserole

Categories: Tex-, Mex

Yield: 4 Servings

1 lb Lean ground beef
1 lg Onion;, chopped
1 16 oz can refried beans
1 cn (4 oz) chopped green chiles, drained
1 c Shredded cheddar cheese
1 1/2 c Shredded Monterey jack cheese
1 c Taco sauce
1/4 c Chopped green onions; including tops
1 cn (4 oz) chopped ripe olives; drained
1 Ripe avocado; mashed
1 c Sour cream
Tortilla chips

Brown beef and crumble in a large skillet. Add onions and cook until translucent. Season to taste with salt and pepper. Spread refried beans in the bottom of an 11/13 inch baking dish; top with meat mixture. Sprinkle chiles, then cheeses, then taco sauce over all. Bake at 400F for 20 minutes. Remove from oven and sprinkle green onions and olives over all. Mound mashed avocado in the center; top with sour cream. Serve with chips.

NOTES : This recipe appeared in the San Jose Mercury during the mid 1960's. It was an immediate hit with my two sons and we often had it for dinner.

2. Nancy's Apple Pie

Categories: Pie

Yield: 6 Servings

1 1/3 c All-purpose flour
1/2 ts Salt
1/2 c Shortening
3 (up to) 4 tb Cold water


4 (up to) 6 Apples; peeled and sliced
1/2 c Granulated sugar (vary according to sweetness of apples)
2 ts Cinnamon
1/2 c Chopped walnuts


1 c All-purpose flour
1/2 c Granulated sugar
1 Stick butter

FOR CRUST: Mix flour, salt and shortening until cornmeal consistency. Add water, mix lightly; roll out. Makes one pie crust.

FOR FILLING: Place apples and sugar into unbaked pie crust. Sprinkle spice and nuts on top of sugared apples.

FOR TOPPING: Mix ingredients together to crumble state, sprinkle generously on top of apples. Bake pie at 350 degrees for 40 minutes or until apples are done.


3. Natchitoches Baked Beans

Categories: Pork, Beans

Yield: 8 Servings

1 lg Onion
1 lg Green pepper
1/4 ts Ketchup
2 tb Honey
2 tb Brown sugar
1/4 ts Worcestershire
1/8 lb Chopped ham
1 cn Campbell's pork and beans
Dash Louisiana Hot Sauce

(Natchitoches -- pronounced nack-a-tish -- is the name of a Louisiana city.

In a large skillet, saute onion and green pepper in ketchup. Blend in honey, brown sugar, Worchestershire, hot sauce, and ham. Add beans, BEING CAREFUL NOT TO STIR TOO MUCH.

Cook on low heat, stirring occasionally and CAREFULLY, until liquid is absorbed. Let stand. Microwave to heat.

Serves 6-8

4. Neiman Marcus Chocolate Chip Cookies

Categories: Cookies, Chocolate

Yield: 10 Servings

2 c Butter
2 c Sugar
2 c Brown sugar
4 Eggs
2 ts Vanilla
4 c Flour
5 c Blended oatmeal, (blend in blender to a fine powder)
1 ts Salt
2 ts Baking powder
2 ts Baking soda
24 oz Chocolate chips
8 oz Hershey chocolate bar, (grated)
3 c Chopped nuts

Mix butter, sugars eggs, vanilla. Add flour, oatmeal, salt, powder, soda. Stir in chips, hershey & nuts.

Drop by large teaspoonfuls on ungreased cookie sheet. Bake at 375 degree 6 to 8 minutes.

(Makes 10 dozen)

5. New Fashioned Scalloped Potatoes

Categories: Casseroles, Cheese, Potatoes, Side dishes

Yield: 14 Servings

12 To 14 medium Potatoes pared, diced
1 c Water
2 ts Salt
2/3 c Margarine
2/3 c Flour
1/2 ts Salt
1/4 ts Pepper
6 c Scalded milk
4 oz Jar pimiento chopped
8 Green onions with tops sliced
1 lb Sharp cheddar cheese diced
2 c Buttered soft bread crumbs

Date: Fri, 17 May 1996

Put potatoes, 1 cup water and 2 teaspoons of salt in pan. Cover and bring to a boil. Lower heat. Cook for 10 minutes until tender. Drain. Make white sauce in Microwave from margarine, flour, salt, pepper and scalded milk. Stir in pimiento, green onion, cheese and potatoes. Turn into buttered casserole. Top with buttered crumbs. Bake at 350 F. for 30 minutes.
