4-6 chicken breasts - seasoned
1-1/3 Cup uncooked wild or white rice
1 Can sliced mushrooms and juice
1 can Cream of Mushroom soup
1 pkg. dry Onion Soup Mix
1 tbsp. butter


In 3-qt. casserole dish, melt butter. Add rice, mushrooms & juice. Lay chicken pieces on top of rice. Spoon soup over chicken.
Sprinkle onion soup mix over all. Cover with water.
Cover with foil and bake 1-1/2 hrs. @ 325 degrees.
Remove foil for the last 15 mins. to let chicken brown.

2. Chimichanga

Think of a chimichanga as a fried burrito.

Serves 4

1 pound Ground chuck
1 1/4 cups Refried beans
1/4 cup Salsa
3/4 cup Monterey jack, grated
4 Flour tortillas
Oil for frying

Brown the beef. Drain off the fat. Allow to cool slightly. Toss in the beans, salsa and cheese. Place 1/4 of the mixture in the middle of each tortilla. Fold in the sides and then roll to seal. Heat the oil to 350. Add the chimichangas and cook on both sides until browned. Serve warm.

3. Chinese Casserole

1 lb. ground beef
1 medium onion (chopped)
3 stalks celery (chopped)
1 can Chinese vegetables (undrained)
1 can cream of mushroom soup
1 can cream of celery soup
1/2 cup instant rice
1 cup water
Soy sauce (to taste)

Preheat oven to 350 F.
In large skillet, brown ground beef, onions and celery. Drain off excess fat.
In medium bowl, combine Chinese vegetables, mushroom soup, celery soup, rice, water and soy sauce; mix well.
In 13x7" baking dish, add ground beef mixture and soup mixture; mix well.
Bake for 40 minutes.
Serve with chow mein noodles.

4. Chocolate Chip Cheesecake Bars

What could be better than favorite chocolate chip cookies baked around a cream cheese filling?

Prep Time: 10 min
Total Time: 3 hours 25 min
Makes: 36 bars

1/2 cup cold butter
1 pouch (1 lb 1.5 oz) Betty Crocker® oatmeal chocolate chip cookie mix
1 egg
2 packages (8 oz each) cream cheese, softened
1 cup sugar
2 eggs
1 teaspoon vanilla

1. Heat oven to 350°F. Spray bottom of 13x9-inch pan with cooking spray.
2. In large bowl, cut butter into cookie mix using fork or pasty blender. Stir in 1 egg until mixture is crumbly. Gently spoon 3 cups crumb mixture into pan; press into bottom of pan. Bake 15 minutes.
3. In small bowl, beat cream cheese, sugar, 2 eggs and the vanilla with electric mixer on medium speed until smooth. Pour over cookie crust. Spoon remaining crumb mixture over cream cheese.
4. Bake 25 to 30 minutes or until golden brown and firm to the touch. Cool 30 minutes. Refrigerate at least 2 hours or until chilled. For bars, cut into 9 rows by 4 rows. Store covered in refrigerator.
High Altitude (3500-6500 ft): Heat oven to 375°F.

5. Cincinnati Chili Recipe (Spaghetti)
This is Kathleen from Manassas, Va. I found this recipe on a postcard when we visited Cincinnati years ago for a wedding. Have been using this recipe ever since...makes a great spaghetti sauce or if you rather, just add Kidney Beans and you have Chili. I use my crockpot for this and of course double it...

1 1/2 lb. lean ground beef
1 (29 oz. can) tomato sauce
1 (14 1/2 oz. can) peeled whole tomatoes, I break the tomatoes up...
small onion, chopped
1/2 tsp. cinnamon
1/2 tsp. allspice
1 tsp. salt
1/2 tsp. pepper
1 1/2 TBS. chili powder
1 TBS. white vinegar
1 toe garlic
3 bay leaves
Brown meat - cook onions with meat, drain grease. Place meat & onions in large pan or crockpot. Add rest of ingredients. Cook slowly 4-5 hours, covered. Remove bay leaves & garlic before serving. Serve on a bed of spaghetti and top with grated cheddar cheese.
Serves 6 - 8
