1. Dabo Kolo (crunchy Spice Bites)

Appetizers

Ingredients:
2 Cup(s) Unbleached white flour
2 Tablespoon(s) Berbere
1 Tablespoon(s) Sugar
1 1/2 Teaspoon(s) Salt
1/4 Cup(s) Light oil

Directions:
Preheat oven to 350F. In a bowl combine flour, berbere, sugar & salt. Gradually mix in about 2/3 c of water until a thick paste is formed. Dump the mixture onto a floured board & knead until you have a stiff dough. Make a well in the centre of the dough ball & pour in the oil. Fold the dough over the oil & knead for another 5 minutes. Cover the dough with a cloth to keep it moist. Break off chunks to roll into 1/4"round strips. Cut these strips into 1/2" long pieces, preferably using scissors so that the ends will be pinched. Bake on a flat sheet for 20 to30 minutes until crisp. Stir 2 or 3 times to ensure even browning. When cool, store in an airtight container.

2. Dack Rambo's Crab Casserole

Seafood

Ingredients:
1 Pound(s) Fresh crab meat
1 Cup(s) Saltines, crumbled
1/3 Cup(s) Mayonnaise
1/3 Cup(s) Milk
1 1/3 Tablespoon(s) Worcestershire Sauce
1 Teaspoon(s) Mustard
1 Lemon, juice of
1 Dash(s) Tabasco
Salt to taste

Directions:
Pick crabmeat carefully for shell pieces, sprinkle with salt, add lemon juice and set aside. Add remaining seasoning to mayonnaise, add milk and toss this mixture lightly with crab meat. Place in buttered casserole, cover with crumbled saltines. Dot generously with butter. Bake 30 minutes at 350~.

3. Daffodil Cake (Easter Dinner Cake)

Ingredients:
1/2 Cup(s) SIFTED CAKE FLOUR
1/2 Cup(s) Sifted powdered sugar
6 Egg whites
1/2 Teaspoon(s) Cream Of Tartar
1/2 Teaspoon(s) Vanilla
1/8 Teaspoon(s) Salt
1/2 Cup(s) Granulated Sugar
3/4 Teaspoon(s) Baking Powder
6 Egg yolks
2 Tablespoon(s) Lemon Juice
1 Tablespoon(s) Cold water
Powdered sugar

Directions:
White part: Sift 1/2 cup cake flour and 1/2 cup powdered sugar together three times. Beat egg whites till frothy; add cream of tartar, vanilla, and salt. Beat till soft peaks form. Gradually beat in 1/2 cup granulated sugar. Sift a fourth of the flour mixture at a time over top; fold in.

Yellow part: Sift 3/4 cup cake flour and baking powder together three times. Beat yolks with juice and water until thick, 5 to 7 minutes; gradually beat in 1/2 cup granulated sugar. Sift a fourth of the flour mixture at a time over top; fold in.

Alternately spoon yellow and white mixtures into an ungreased 9- or 10-inch tube pan. Bake at 375 degrees F for 35 to 40 minutes. Invert and cool. Dust cake with powdered sugar.

4. Dagwood Italiano

Italian/Lamb

Ingredients:
1 Bell pepper, red
1 Bell pepper, green
1 1/2 Teaspoon(s) Olive oil, divided
1 Teaspoon(s) Rosemary, fresh chopped
or
1/4 Teaspoon(s) Dried Crushed
1 Garlic, clove minced
1 Tablespoon(s) Red wine or broth
12 Ounce(s) Lamb, boneless loin sirloin
4 French Bread 5"length, French Bread 5&quot;length
1/2 Cup(s) Mozzarella, low fat grated
1/4 Cup(s) Parmesan cheese

Directions:
Roast red and green bell peppers in preheated 400*F oven 20-25 minutes or until skins are slightly charred and shriveled. Remove from oven, transfer to plate, wrap with plastic wrap and let stand 10 minutes. Remove peppers from plastic, peel off skin remove seeds and cut into strips. Set aside. In large bowl combine rosemary, 1/2 teaspoon of the olive oil, garlic and wine or broth; add lamb and marinate 1 hour. Heat remaining oil in large nonstick skillet. Add lamb and sear on all sides. Place lamb on rack in shallow roasting pan. Insert meat thermometer in center part of lamb and roast in preheated 375F. oven to internal temp of 140F. about 27-34 minutes, or to desired doneness. Or grill 15-20 minutes. To construct sandwiches thinly slice lamb and arrange on four of the bread halves, alternating with red and green pepper strips. Top with mozzarella and Parmesan cheese. Place under broiler until cheeses melt, bubble and turn light brown. Add top halves of bread and serve.

5. Decadent Chocolate Pecan Pie

Prep time: 15 min
Cook time: 1 hour
Yields: 10 servings

Ingredients
1 refrigerated pie crust (from 15 oz package)
1 cup Nestle Toll House Semi-Sweet Morsels
3 tbsp milk
4 eggs
3 tbsp butter, melted
2 tsp McCormick Pure Vanilla Extract
1 cup dark corn syrup
1 cup sugar
1/2 tsp McCormick Ground Cinnamon
1/2 tsp McCormick Ground Allspice
1/4 tsp salt
1 1/2 cups Diamond of California Shelled Pecans

Directions
Preheat oven to 425 degrees F

Line 9-inch deep dish pie plate with pie crust. Bake for 7 minutes and remove from oven. Reduce oven temperature to 325 degree F. Microwave chocolate chips and milk in medium microwavable bowl on high 1 to 1 1/2 minutes. Stir until smooth. Pour chocolate evenly over crust.

Beat eggs in large bowl. Add remaining ingredients; mix well. Slowly pour mixture over chocolate layer. Foil around edges of crust to prevent over-browning.

Bake 55 to 60 minutes or until filling is puffed and center is still soft enough to move when shaken gently. Cool completely.
