1. Jack Barnard's Spanish Omelet

Ingredients:
1 Cup(s) Onion, chopped finely
1/2 Salt
1 Dash(s) Red pepper
6 Eggs
1 Cup(s) Milk
1 Dash(s) Pepper
2 Cup(s) Canned tomatoes
1 Tablespoon(s) Margarine
6 Tablespoon(s) Cornstarch
1 Baking Powder

Directions:
SAUCE: Put onions in a pan with a little water and cook until partly done. Add tomatoes, salt, pepper, red peppers and margarine. Simmer very slowly for 3 hours until thick.

EGGS: Beat eggs, cornstarch, milk, salt, pepper and baking powder. Put a little margarine in skillet and heat. Cook egg mixture until set, then flip over and cook other side. Put on plate and fold over. Fill with tomato sauce.

2. Jacket Potatoes With Apple And Onion

Ingredients:
4 Potatoes
25 Gram(s) Butter or vegetable margarine 1oz
1 Cooking apple, peeled cored and chopped finely
1 Onion, chopped finely

Directions:
Preheat the oven to 200C/400F/Gas Mark 6.
Scrub the potatoes and prick them on both sides with a fork. Lay them on the oven rack and bake them for 1 1/4 hours or until they are soft. Cut the potatoes in half lengthways. Scoop out the middles and mash them with the butter or margarine. Mix the apple and onion into the potato. Put the potato shells in a heatproof dish. Pile the stuffing mixture inside them and make ridges on the tops with a fork. Return the potatoes to the oven for 15 minutes or until the tops are beginning to brown.

3. Jackie Onassis' Italian Rice With Mushrooms

Ingredients:
1 Cup(s) Tomatoes, chopped
1 Pound(s) Mushrooms, sliced
1/2 Cup(s) Onion, chopped
3 Cup(s) Chicken broth
1/2 Cup(s) Butter or margarine
1/2 Cup(s) Red wine
1/8 Teaspoon(s) Pepper
1 Teaspoon(s) Salt
1 Cup(s) Cooked Green Peas
1/4 Cup(s) Parmesan cheese, grated
1 Cup(s) Rice

Directions:
In a large skillet, cook rice, tomatoes, mushrooms and onion in butter for 10 minutes, stirring occasionally. Add broth, wine and seasonings. Cover. Simmer 45 minutes, or until rice is tender and liquid is absorbed. Stir in peas. Add cheese. Serves 6.

4. Jam Kolaches

Ingredients:
1/2 Cup(s) Butter or margarine, softened
1 3-ounce package cream cheese
1 1/4 Cup(s) All-Purpose Flour
about
1/2 Cup(s) Strawberry jam
1/4 Cup(s) Sifted powdered sugar

Directions:
Cream butter and cream cheese, beating at medium speed of an electric mixer until light and fluffy. Add flour to creamed mixture, mixing well. Roll dough to 1/8-inch thickness on a lightly floured surface; cut into rounds with a 2-1/2-inch cookie cutter. Place on lightly greased cookie sheets. Spoon 1/4 teaspoon jam on each cookie; fold opposite sides to center, slightly overlapping edges. Bake at 375 degrees for 15minutes. Cool on wire racks, and sprinkle with powdered sugar.

5. Jan's Fresh Fatfree Tomato Salad

Ingredients:
4 Tomatoes, chopped yellow and red ones
1 Cup(s) Chopped sweet peppers, a mixture of banana red yellow purple and green up to 1-1/2
1/4 Red onion, diced small
1 Jalapenos, minced optional 
up to 2 1/2 Teaspoon(s) Crushed garlic or 3-4 cloves minced 
up to 1 1/2 Cup(s) Red wine vinegar, could also use white
Salt and pepper to taste

Directions:
