1. Party Chicken Casserole

Categories: Casseroles, Poultry

Yield: 10 Servings

10 3/4 oz CREAM OF CELERY SOUP
1 c MAYONNAISE
7 oz LONG GRAIN WILD RICE, COOKED
4 c COOKED CHICKEN
1 SMALL ONION, CHOPPED
2 oz CHOPPED PIMENTOS
8 oz SLICED WATER CHESTNUTS
8 oz FRENCH STYLE GREEN BEANS
1 c GRATED CHEDDAR CHEESE
1 ds SALT
1 ds PEPPER

IN A LARGE BOWL, COMBINE SOUP AND MAYONNAISE. STIR IN ONION, COOKED RICE, CHICKEN, PIMENTOS, WATER CHESTNUTS, BEANS, CHEESE AND SALT AND PEPPER TO TASTE. PLACE IN A 3 TO 4 QUART CASSEROLE DISH. BAKE AT 350 DEG F. FOR 25 TO 30 MINUTES.

2. Peanut Butter Balls

Enjoy this simple dessert!

From, "Tell Me More, A Cookbook Spiced with Cajun Traditions and Food Memories" published by The Junior League of Lafayette, Inc. in cooperation with your Daily InBox newsletter.

INGREDIENTS:
3 sticks whipped butter
1-1/2 boxes powdered sugar
2 cups peanut butter
18 ounces chocolate chips
1/2 bar paraffin


TO PREPARE:
Using your hands, mix the butter, powdered sugar and peanut butter together and form into balls. Put in freezer for at least an hour. When the balls are hard, then melt the chocolate chips and paraffin in a small pot. Using a toothpick, dip the balls into the melted chocolate mixture. Cool the candy on wax paper.

NOTE: Makes wonderful gifts at Christmas and any time!

3. Pecan Chicken and Wild Rice

Try this delicious Pecan Chicken and Wild Rice recipe.

INGREDIENTS for Dressing:
1/2 cup rice vinegar
1/3 cup vegetable oil
2 large garlic cloves, minced
1 Tablespoon Dijon mustard
1/2 teaspoon each salt and pepper
1/4 teaspoon sugar

INGREDIENTS for Salad:
1 cup wild rice
4 cups chicken stock
Juice of 1 lemon
2 whole chicken breasts, cooked
1 bunch green onions, minced
6 to 8 ounces snow peas, trimmed
2 ripe avocados, chopped
1 cup pecan pieces, toasted



TO PREPARE:
For the dressing, combine the vinegar, oil, garlic, Dijon mustard, salt, pepper and sugar in a jar with a tight-fitting lid. Shake to mix.

For the salad, combine the wild rice, stock and lemon juice in a saucepan. Bring to a boil; reduce the heat. Simmer, covered, for 1 hour or until tender; drain. Chop the chicken into bite-size pieces, discarding the skin and bones. Combine the dressing, rice, chicken, green onions and snow peas in a bowl 2 hours prior to serving and mix well. Chill, covered, in the refrigerator. Add the avocados and pecans just before serving and mix gently.

4. Potato Salad in the Oven

This warm sweet-sour salad cooks well in the oven.

Serves 4

8 strips Bacon
1 1/2 Tablespoons Flour
1/3 cup Sugar
1/3 cup White vinegar
4 medium Potatoes, boiled, cooled and sliced
1 medium Onions
To taste Salt and pepper

Preheat the oven to 325. Cook the bacon in a skillet.
Remove the bacon from the pan. Add the flour and whisk for
1 minute. Whisk in the sugar, vinegar and water. Simmer
until thickened. Place the potatoes and onions to a medium
casserole. Dice the cooked bacon and add to the casserole.
Pour the sauce over the mixture and bake for 40 minutes.
Serve warm with roast pork or sausages.

5. Punched Potatoes
4 medium Russet baking potatoes
3 Tablespoons Olive oil
4 teaspoons Garlic, minced
Salt and pepper to taste
White wine vinegar (optional)
Pre-heat the oven to 375. Bake the potatoes until soft (30-50 minutes, depending on the size). Slowly heat the oil. Remove from the heat and add the garlic. Allow steeping at least 10 minutes. Place the potato on a cutting board. Cover with a clean towel. Using a meat tenderizing mallet carefully punch the potato. Use a spatula to transfer to a plate. Pour the garlic oil and vinegar (if used) over the potato. Check the seasoning.
Serves 4
