1. Iberia French Dressing

Base: Vegetables

Number of Servings: 4

Ingredients:
2/3 Cup(s) Vegetable Or Salad Oil
1/3 Cup(s) Lemon juice or vinegar
1/2 Teaspoon(s) Tabasco Pepper Sauce
1 Teaspoon(s) Salt
1 Teaspoon(s) Paprika, sweet
1 Teaspoon(s) Mustard, dry
1/2 Teaspoon(s) Sugar

Directions:
Combine all the ingredients in a covered bottle and shake well. Shake well again just before using. Makes 1 cup of Dressing.

Variations
ROQUEFORT DRESSING: Add 1 to 2 Tbs Roquefort cheese that has been crumbled to 1/2 cup of the above dressing.

CHIVE DRESSING: Add 1 to 2 tbs Chopped chives or green onions/tops to1/2 cup of the above dressing.

HERB DRESSING: Add 2 ts chopped parsley, 1/8 ts thyme, and 1/2 ts Oregano to 1/2 cup of the above dressing.

CREOLE DRESSING: Add 1/4 c catsup and 1/2 ts Worcestershire Sauce to1/2 C of the above dressing.

VINAIGRETTE DRESSING: Add 1 large hard cooked egg, chopped, 2 tb chopped green pepper and 1 tb grated onion to 1/2 cup of the above dressing.

2. Icebox Potato Rolls
Number of Servings: 30

Ingredients:
1 Cup(s) D
iced potatoes, or instant
2 Yeast
1/2 Cup(s) Warm Water
1/2 Cup(s) Shortening
1 Cup(s) Milk
3 Eggs, beaten
3/4 Cup(s) Sugar
2 Teaspoon(s) Salt
5 Cup(s) Flour

Directions:
Dissolve yeast in warm water. In another bowl pour scalded milk over shortening. Stir until shortening is melted, then add the dissolved yeast & the
Diced potatoes. Beat eggs, sugar & salt well. Sift & measure flour. Add 4 cups flour & beat the batter well. Stir in the remaining flour. Place dough in greased bowl. Spread the top lightly with oil. Cover bowl. Chill the dough at least 24 hours in refrigerator. It will keep for a week. Take out of refrigerator 2 hours before baking. This dough makes a good coffee cake as well as unusually good rolls. These may be made into rolls & frozen up to 3 weeks. Makes 60 medium sized rolls.

3. Iced Black Forest Mocha

Number of Servings: 1

Ingredients:
4 Tablespoon(s) Espresso
Ice
1 Tablespoon(s) Chocolate syrup
1 Tablespoon(s) cherry syrup
1/2 Tablespoon(s) Coconut syrup
16 Tablespoon(s) Cold milk
Whipped cream, for topping
Shaved chocolate, for
Topping
1 Cherry, for garnish

Directions:
Pour espresso into 12-ounce glass filled with ice. Add syrups and milk and stir. Top with a generous dollop of whipped cream, shaved chocolate and garnish with cherry.

Makes 1 serving.

Per serving: 294 calories, 17 grams fat (53 percent fat from calories), 54 milligrams cholesterol, 9 grams protein, 28 grams carbohydrate, 143 milligrams sodium.

4. Indoor S'mores


Categories: Candies, Chocolate, Snacks, Kids

Yield: 1 Recipe

1 1/2 c Chocolate chips
1 Bag; (10 oz) mini marshmallows
5 tb Butter
1/4 c Light corn syrup
1 ts Vanilla
1 Box; (13 oz) Golden Grahams cereal

Melt 5 cups marshmallows (reserve 1 c. from bag), chocolate chips, butter and corn syrup in 3 qt. saucepan over low heat, stirring occasionally. Remove from heat; stir in vanilla. Grease a 13"x9"x2" pan.

Pour cereal into large mixing bowl. Pour marshmallow mixture over cereal; stir until evenly coated. Stir in remaining marshmallows.

Press mixture into prepared pan with buttered back of spoon. Cool until as firm as you'd like. Cut into bars. Store covered loosely at room temperature.

5. Ingber (A Traditional Holiday Sweet)

Categories: : candy, Passover

Yield: 1 Servings

2 c Finely grated raw carrots
2 c Honey
1/2 c Sugar
2 ts Ginger (or less; to taste)(2 to 2 1/2 )
Sugar for sprinkling

In a large saucepan, blend the grated carrots, honey and sugar very well. Cook over medium heat.

When the mixture begins to boil, turn the heat down and cook until all the liquid is absorbed. Stir frequently.

Remove from the heat, add the ginger and cook for 5 minutes longer.

Pat out to 1/2 inch thickness on a sugared board or cookie sheet. Sprinkle sugar on top and cut into diamonds or squares. Let dry for 30 minutes to 1 hours. Remove with a spatula.

Yields approx. 72 - 1 inch diamonds.
