1. Earl Grey Tea Rice

1 Cup(s) Japanese rice
3 Teaspoon(s) Earl Grey tea, ground in a blender or spice grinder until it is a powder
1 Teaspoon(s) Salt
Fresh ground pepper

Rinse the rice under running water until the water runs clear. Then put it in a small pot with one cup of water and let it soak for thirty minutes. Stir the rice well and turn on the flame to high. Let the rice come to a boil and then stir well again turn flame down to the lowest flame possible. Cover the pot with a tight fitting lid and let cook for 11 minutes. Then move the rice off the heat and let sit, still covered, for five more minutes. Let the rice cool for 10 minutes then stir in the Earl Grey tea, and the salt and pepper. Taste and adjust the seasoning.
Yield 3 cups

2. East Texas Red Chili

Base: Main dish

Number of Servings: 10

2 Tablespoon(s) Oil
2 Pound(s) Chili meat
2 Onions, finely chopped
1 Teaspoon(s) Garlic powder
1 Tablespoon(s) Leaf oregano
4 Tablespoon(s) Paprika
1/2 Teaspoon(s) Cumin
1 Teaspoon(s) Salt
28 Ounce(s) Can of tomato sauce
28 Ounce(s) Can of whole tomatoes
3 Cup(s) Water, divided
6 Dried Ancho chili peppers
1 4.5 oz milk chocolate
Candy bar
Place oil in a 5 to 6 quart pan with meat and onions. Saute, stirring frequently. Add garlic powder, oregano, paprika, cumin, salt and tomato sauce. Chop the whole tomatoes into large pieces, then add to mixture. Heat 2 cups water to boiling and add ancho peppers. Stir occasionally, until peppers are soft. Drain and puree in blender. Add peppers to the meat mixture. Rinse blender with the remaining cup of water and add to the meat mixture. Add the chocolate candy bar and allow to simmer for approximately 1 hour.

1 1/2 Cup(s) Diced Red Delicious apple
2 Tablespoon(s) lemon low-fat yogurt
3 Cup(s) Presliced green cabbage
1/4 Cup(s) Raisins
2 Tablespoon(s) Chopped dry-roasted peanuts
3 Tablespoon(s) Sweet and sour sauce

Combine apple and yogurt in a bowl; toss well to coat. Add cabbage and remaining ingredients; toss gently to coat.
Yield: 4 servings (serving size: 1 cup).

1 tube Pillsbury pizza crust
1/2 pound spicy Italian sausage, browned and drained
8 oz. shredded mozzarella cheese
4 oz grated cheddar cheese
2 8-oz. cans tomato sauce*
1 Tbs. oregano
 Tbs. parsley flakes
4 tsp. onion powder
1 tsp. garlic salt
1 tsp. basil flakes
1 tsp red pepper flakes
salt and pepper
Preheat oven to 400 degrees. In a bowl, prepare pizza sauce by
combining tomato sauce cans with all the seasonings. Adjust to
taste. Set aside. Brown sausage, drain and set aside.
Roll dough out onto a flat floured surface. Cut 12 circles with a
glass or large biscuit cutter and lay into muffin pan, making sure to
press dough up the sides of each cup.
Place 2 tablespoons pizza sauce over dough. Sprinkle mozzarella
and cheddar over pizza sauce.
Cover pizza sauce with sausage and cheese.
Top with sliced olives. Spoon one tablespoon of sauce over
muffins. Bake at 400 degrees for 15-20 minutes or until cheese is
bubbly and crust is browned.
* Short on time? Use a jar of pre-made pizza sauce from the store.

5. Eggs Florentine Recipe

Don't hold back when it comes to eggs for breakfast
From the, "Houston Junior League Cookbook ," published in cooperation with your Daily InBox newsletter.

1 box frozen chopped spinach
2 Tablespoons butter
2 teaspoons lemon juice
1/4 teaspoon celery salt
Salt and pepper
1 cup medium cream sauce
1-1/2 teaspoons grated onion
Pinch nutmeg
6 eggs
1 cup grated Swiss cheese

Cook spinach and drain well.  Season with butter, lemon juice, celery salt, salt and pepper.  Add cream sauce, grated onion and nutmeg to spinach and mix thoroughly.  Place in shallow 1-1/2 quart baking dish.  Break eggs over spinach mixture.  Sprinkle cheese over eggs.  Bake at 325 degrees for 15-20 minutes, or until eggs are set.
