1. Haddock And Sweetcorn Chowder

Base: Soups

2 Teaspoon(s) MARGARINE.
1 Onion finely chopped.
4 Ounce(s) 120 g potatoes peeled and cubed
1 Pint(s) 600 ml vegetable or fish stock
5 Ounce(s) 150 g skinned and boned Smoked haddock cut into chunks
3 Ounce(s) 90 g sweetcorn kernels.
5 Pint(s) 300 ml skimmed milk.
salt and pepper.
1 Tablespoon(s) Cornflour blended with a little water.
1 Tablespoon(s) Chopped fresh parsley.

Melt the margarine in a large sauce pan and saute the onion and potatoes for 3 to 4 minutes stirring constantly. Add the vegetable or fish stock and bring to the boil. Reduce the heat and simmer covered for 5 minutes. Add the smoked haddock and sweet corn to the sauce pan and simmer gently for 5 minutes. Pour in the milk and heat gently without boiling.Season the soup with salt and pepper and then add the blended cornflour. Heat, stirring until thickened and smooth. Add the chopped parsley and serve one portion in a warmed soup dish. To freeze the remaining soup cool quickly and transfer to three rigid containers. Seal, label and freeze for up to one month. Defrost and re-heat the soup gently to serve. Preparation 10 minutes Cooking 20 minutes. Makes 4 portions, 145 calories per serving.

2. Half-time Beef Sandwiches

Base: Meats

Number of Servings: 6

2 Teaspoon(s) Lemon Juice
Small apple, finely chopped
3-oz pkg. cream cheese
1 Tablespoon(s) Milk
1 Tablespoon(s) Prepared horseradish
1/4 Cup(s) Walnut pieces
6 Kaiser rolls, split
6 Lettuce leaves
1 Pound(s) Thinly sliced roast beef
2 Tablespoon(s) Sliced green onions

Sprinkle lemon juice over apple. Combine cream cheese, milk and horseradish. Stir in apple and walnut pieces. Spread cut sides of rolls with equal amounts of the cream cheese mixture. Place equal amounts of lettuce, beef and green onion on each bottom roll half. Cover with tops.

3. Halvah (traditional Jewish Candy)

Base: Candies

1 Cup(s) Honey
2 Cup(s) Sesame Butter, <<OR>>
2 Cup(s) Sesame Seeds, ground*
1 Cup(s) Dry milk
1 Teaspoon(s) Vanilla extract

In medium saucepan bring 1 cup honey to boil; remove from heat. Blend in sesame butter or sesame seed. Mix in dry milk and vanilla. Spread into 8-inch cake pan, large bread pan or Tupperware sandwich boxes. Cut into small squares and refrigerate in pan or boxes. If using ground seed, butter pan first. Serve as nutritious snack or dessert.

4. Ham With Cherry Sauce

Base: Meats

Number of Servings: 12

1/2 Fully cooked bone-in ham 6 to 7 pounds
1 Jar, 12 oz. cherry preserves
1/4 Cup(s) Cider or red wine vinegar
2 Tablespoon(s) Light corn syrup
1/4 Teaspoon(s) Each ground cloves, cinnamon and nutmeg
3 Tablespoon(s) Slivered almonds

Place ham on a rack in a shallow roasting pan. If desired, remove skin from ham and score the surface with shallow diagonal cuts, making diamond shapes. Bake, uncovered, at 325F for 1 1/2 to 2 hours or until a meat thermometer reads 140F. In a saucepan, combine the preserves, vinegar, corn syrup, cloves, cinnamon and nutmeg. Bring to a boil, stirring often. Reduce heat; simmer, uncovered, for 2 minutes. Remove from the heat; stir in almonds. Serve with the ham. Yield: 10 - 12 servings ( 1 1/2 cups sauce).

5. Happy Joe's Sour Cream Muffins

3 Cup(s) Sugar
1/2 Pound(s) Margarine
1/2 Teaspoon(s) Salt
1 Teaspoon(s) Nutmeg
1 Teaspoon(s) Vanilla
1 Teaspoon(s) Baking soda
1/2 Teaspoon(s) Cinnamon
4 Eggs
1 Cup(s) Sour cream
1/2 Cup(s) Milk
4 Cup(s) All purpose flour

Mix sugar, margarine, salt, nutmeg, vanilla, baking soda and cinnamon together for two minutes. Add eggs, sour cream, milk and flour and mix again for another two minutes. Scrape down bowl sides and mix for another minute. Fill muffin pans or loaf/cake pans 2/3 full. Bake at 375 degrees until center is firm. If you desire, you can fold raisins, cherries, apples, nuts, blueberries, dates or any other fruits to the batter before spooning into muffin tins.
