1. Jack Daniels Baked Beans

Base: Vegetables

Ingredients:
2 16 oz. can pork & beans, 16 oz. can pork & beans
1/4 Cup(s) Jack Daniels
2 Tablespoon(s) Liquid Smoke
1/2 Cup(s) Brown sugar
1 Teaspoon(s) Dry mustard
2 Cloves garlic, minced
1/2 Onion, minced
1 Tablespoon(s) Cider vinegar
1 Green pepper, minced
2 Tablespoon(s) Worcestershire sauce
1 Teaspoon(s) Lemon Juice

Directions: 
Combine all ingredients in a pan. Bake @ 350 for about 1 1/2 hours.

2. Jamaican Turkey Burgers

Base: Poultry
Number of Servings: 2

Ingredients:
1 Onion, chopped
1/4 Teaspoon(s) Cayenne pepper
1/4 Teaspoon(s) Allspice
1/2 Pound(s) Ground turkey
1/2 Teaspoon(s) Salt
1/2 Teaspoon(s) Black pepper
1/2 Teaspoon(s) Curry powder
1/2 Teaspoon(s) Dried thyme

Directions: 
Mix all ingredients together and form into 2 large patties. Grill 5-7 minutes per side.

3. Janes' Pumpkin Chiffon Pie Recipe

Ingredients

3 Eggs, separated
1 c Sugar
1 1/4 c Canned pumpkin
1/2 c Milk
1/2 ts Salt
1 1/4 ts Pumpkin-pie spice
1 pk Unflavored gelatin (enough to gel 2 cups)
1/4 c Cold water
Whipped Cream (garnish)

Directions

Combine egg yolks, 1/2 the sugar, pumpkin, milk, salt and spice. Cook in top of double boiler until thick. Soak gelatin in cold water for 5 minutes, add to pumpkin mixture which has been removed from heat. Mix and cool. When thickened, beat egg whites until foamy, then gradually add remaining sugar. Beat until egg whites hold peak. Fold into pumpkin mixture. Pour into 9-inch baked pastry shell. (I used a quiche dish.) Chill. Garnish with whipped cream.

4. Jazzy Lime Grilled Chicken

Base: Poultry

Ingredients:
1 Broiler-fryer chicken quartered
1/3 Cup(s) Lime juice
1/4 Cup(s) Brown sugar, packed
1/4 Cup(s) COOKING OIL
2 Tablespoon(s) Prepared yellow mustard
1 Teaspoon(s) Lime peel, grated
1 Clove garlic, minced
1/2 Teaspoon(s) Salt
1/2 Teaspoon(s) Bottled hot pepper sauce

Directions: 
In a bowl, mix together lime juice, brown sugar, oil, mustard, lime peel, garlic, salt and hot pepper sauce. In a shallow dish, place chicken in a single layer. Pour lime mixture over chicken, turning to coat all sides. Cover and refrigerate for 4 hours or overnight(Turn several times.). Place chicken on prepared grill about 8 inches from the heat. Cook, turning every 5-8 minutes, about 45 minutes. Brush with sauce and cook 30 minutes longer or until chicken is fork tender. Makes 4 servings.

5. Just Pork Ribs With Sauerkraut

Number of Servings: 4

Ingredients:
2 Pound(s) Pork ribs....or chops
1 Jar Kraut
1/2 Onion, sliced thin (I like red almost out of Season now)
2 Cup(s) Cranapple Juice


Directions: 
Rinse Kraut....just a little. Gets the salt out.
2. Split the ribs with a sharp knife. Cut off the fat where you can.
3. Stick the ribs in the oven at about 400 degrees until they brown. Pour off fat ... Won't be much.
4. Put Kraut in a nice large skillet....put the ribs over the Kraut....Salt, pepper and then add Cranapple juice.
5. Cook over medium heat for an hour or so. Reduce heat, add more cranapple juice if it is dry, and then add 1/2 large red onion to the top of the skillet. 
6. Put in the fridge over nite.
7. COMPANY'S COMIN'
8. Take the skillet our of the fridge, put on the stove....heat.
9. Mash some potatoes........and when the ribs and kraut are HOT ... gently lay the whole banana over the mashed potatoes.
10. Serve with green salad and French Bread.
This is serious eating.
